SMOKY CHEESE AND POTATO BAKE

Steps:
- Spray 3 1/2 to 4-quart slow cooker with nonstick cooking spray. In medium bowl, combine soup, sour cream and cheese; mix well. Gently stir in roasted pepper strips.
- Arrange half of potatoes in sprayed slow cooker. Top with half of sour cream mixture; spread evenly. Top with remaining potatoes and sour cream mixture, spreading evenly. Do not stir.
- Cover; cook on low setting for 5 to 6 hours.

A dear friend forwarded to me a copy of a popular home and garden magazines newsletter she received. This recipe was listed in the slow cooker section and sounded very good and easy to put together. Smoked or roasted chicken or turkey can be used in this recipe.

Steps:
- Using at least a 3 1/2 or 4 quart slow cooker, lightly coat the inside of the crock with nonstick cooking spray. Add soup, sour cream, cheese, frozen potatoes, chicken and combine well.
- Cover with lid and cook on the low setting for 5 to 5 hours. If desired, before serving top each serving with crushed croutons. Serve immediately.

- In a large saucepan, cook potatoes, covered in a small amount of boiling water about 12 minutes or just until tender.
- Add peas; cover and cook 3 minutes; transfer to a colander to drain.
- In the same saucepan, melt butter, stir in flour.
- Add 1/2 cup milk.
- Cook and stir constantly over medium high heat until thickened and bubbly Cook and stir for 1 more minute.
- Reduce heat; add cheese.
- Cook and stir for about 15 minutes or just until cheese melts.
- Add as much of the remaining milk as needed to make a medium-thick sauce.
- Add potatoes, peas and half of the bacon; heat through.
- Transfer to a large serving dish.
- Top with remaining bacon; serve warm.
