- Cut each bacon strip in half widthwise. Wrap one piece of bacon around each sausage. , Place in a foil-lined 15x10x1-in. baking pan. Sprinkle with brown sugar. Bake, uncovered, at 400° until bacon is crisp and sausage is heated through, 30-40 minutes.

MINI SMOKY BACON WRAPS
This is one of my favorite appetizers to serve at my get togethers and doesn't require a lot of prep work, these little guys pack a lot of flavour. Purchase the small smoky cocktail wieners for this.

Steps:
- Set oven to 350°F.
- Grease a baking sheet.
- Cut each bacon slice into thirds.
- Wrap each slice around each of the small smokies.
- Place in foil-lined baking pan.
- Bake for about 10 minutes.
- Meanwhile in a small bowl mix together the ketchup with brown sugar to form a thick mixture.
- Remove the cocktail wieners from oven and brush about 1 teaspoon of the ketchup/brown sugar mixture over the wiener.
- Place back in the oven and bake until the bacon is lightly crisp (do not overcook or the bacon will be too hard!).

SMOKY BACON WRAPS
I found this recipe years ago and made them for New Years. They are great as an appetizer or just a late night snack. You MUST line your cookie sheet with tin foil or you will never get the sugar off. I also use center cut bacon for a little less fat. Enjoy!

- Wrap 1 piece of bacon around each sausage.
- Roll in Brown Sugar to coated.
- Place on a FOIL lined 15x10x1-inch baking pan (cookie/jellyroll pan).
- Bake uncovered at 400°F for 30-40 minutes or until bacon is crisp with a golden outer shell.
SMOKY BACON-WRAPPED JALAPEñO POPPERS

- Preheat the oven to 425 degrees F. Line a baking sheet with foil.
- Add the cream cheese, smoked Gouda, Cheddar, chives, lime zest, lime juice, salt and pepper to a medium bowl. Mix thoroughly until evenly combined.
- Divide the cream cheese mixture between the jalapeño halves, pressing to fill all the way to the top edge.
- Wrap a piece of bacon around each stuffed jalapeño so the ends of the bacon lie underneath. Place the wrapped jalapeños, stuffed-side up, on the prepared baking sheet. Bake until the bacon is crispy and the cheese mixture is just beginning to bubble out from the top and bottom of the jalapeños, 16 to 18 minutes. Remove from the oven and let cool 10 minutes before serving.
BACON-WRAPPED SMOKIES
Steps:
- Preheat the oven to 350 degrees F.
- In a large bowl, combine the brown sugar, paprika and cayenne pepper and mix well. Set aside.
- Slice the bacon strips into thirds. Wrap each frank with a piece of bacon, secure with a toothpick and place on a baking sheet. Repeat with the remaining franks and bacon. Thoroughly coat each bacon-wrapped frank in the brown sugar mixture and place back on the baking sheet.
- Bake until the bacon is crispy, 12 to 15 minutes. The rub has a lot of sugar in it, so make sure to turn halfway through the cooking process so the bottoms do not burn.
BACON WRAPS
When I was young I use to help my mother out in the kitchen, mostly on holidays when we were preparing a big feast for the family. I do remember that we often made these scrumptious treats for family, but I do not have any recollection of where this recipe came from. I hope you enjoy these simple treasures as much as my family does.

- Preheat oven to 325.
- With a knife "neatly" cut off the crust from each piece of bread.
- Carefully spread cream cheese on each slice of bread.
- Cut bread into 3 long slices.
- Cut each piece of bacon in half.
- Roll up the bread making sure that the cream cheese is on the inside.
- Wrap the bacon directly around the bread.
- Take a toothpick and put it directly into the center so that it holds it together.
- Do this with all remaining ingredients.
- Line a cooking sheet with tin foil and place the bacon wraps directly on it.
- Cook for 20-30 min or until bacon is crispy.
- Once cooked remove and let cool.
- Remind your guests that there are toothpicks present.

SMOKY BACON BURGERS
This one's for the guys or for you ladies who want to really make the men in your lives happy! The burgers are seasoned with liquid smoke and spices and grilled with a slice of thick-cut smoky bacon wrapped around each one. Have fun building these big boys any way you like! I find these taste their best served poolside after a good game of water basketball or volleyball with some chips and cold soda or beer.

Steps:
- Combine the ground beef, onion, egg yolk, salt, pepper, and liquid smoke in a medium bowl and mix well.
- The mixture should be soft, yet hold its shape.
- Add up to 1/2 cup bread crumbs if mixture will not come together.
- Mix with your hands-- like a man should!
- Feel free to add small amounts of any other seasonings you think would add to the flavor.
- I like to add a bit of minced garlic, seasoned salt, cayenne, etc.
- Have fun with it.
- Divide the mixture into four equal portions and form into patties that are about the diameter of the buns you'll be using.
- This should make them fairly thin and large.
- Wrap a slice of bacon around the center of each patty and secure with toothpicks.
- Chill in refrigerator at least 1 hour or up to 8 hours to chill and firm up the patties.
- Bring patties up to room temperature while preparing a hot fire in grill.
- Throw on a few water-logged mesquite wood chunks and grill the burgers to your liking, removing the toothpicks before turning over.
- While the burgers are on the grill, lightly toast the buns under the broiler or on the grill.
- Be sure you have the large hamburger buns, not those puny ones like you see in McDonald's happy meals.
- You're making man-sized burgers here!
- Place the hamburger patties, buns, tomatoes, lettuce, and anything else you want to use to build your burger, on individual plates and let each person make their own.
- These burgers go great with potato chips, macaroni salad, baked beans, and corn on the cob for a fantastic Summer meal.
- A chocolate pudding or slice of cream pie makes a great dessert.
- This recipe can be doubled or tripled or whatever to serve as many as you need.

BACON-WRAPPED, CHEESE-STUFFED, SMOKY BARBECUE MEATBALLS
This is all-American 'tailgate' food. The magic ingredient is liquid smoke. Added to the basting sauce and meatballs, it gives a moreish quality you won't be able to resist!

- Put all the ingredients for the smoky BBQ sauce in a pan, add 125ml water and season well, then bring to a simmer, whisking until combined. Leave to cool.
- In a bowl, mix together all the meatball ingredients, except the cheese and bacon, and season well. Take a walnut-sized piece of the mixture and flatten it with your hands, then wrap it gently around a mozzarella ball and roll it into a circle the size of a ping-pong ball. You should end up with 20 balls.
- Cut each slice of bacon in half across the short side and wrap half a slice around each ball. Transfer the balls to a baking tray with the overlapping bacon edges underneath, and cook at 190C/170C fan/gas 5 for 20 mins. Brush with the BBQ sauce and return to the oven for 8-10 mins more or until nicely browned. Brush again with sauce and eat warm, with even more sauce on the side for dipping.
