SMOKY GRILLED BUTTERFLIED CHICKEN

A spicy smoked-paprika marinade gives skin-on butterflied chicken a robust flavor. To give the chicken even more flavor, loosen the skin with your hand and spread some of the mixture underneath before grilling.

Smoky Grilled Butterflied Chicken image

Steps:

  • Combine vinegar, oil, garlic, paprika, and salt in a nonreactive baking dish or large resealable plastic bag.
  • Remove backbone from chicken using kitchen shears. Place chicken, breast side up, on cutting board, with legs extended on both sides. Press firmly on breastbone to break it and flatten chicken. Add to marinade. Cover dish or seal bag, and refrigerate at least 4 hours (or overnight), turning occasionally.
  • Preheat grill to medium. (If you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 5 or 6 seconds.) Remove chicken from marinade; discard marinade. Place chicken, skin side down, on grill. Close cover, and grill 15 minutes. Flip chicken, and close cover. Grill until an instant-read thermometer inserted into thickest part of the breast registers 165 degrees, about 20 minutes more.

1 whole chicken (3 to 4 pounds), rinsed

SMOKY DRY-RUBBED GRILLED CHICKEN WITH ALABAMA WHITE SAUCE

My mom's favorite barbecue sauce is Alabama white sauce, and it's ideal to serve with my spice-rubbed grilled chicken. The chicken halves are cooked first low and slow over indirect heat to infuse that smoky flavor from the grill into the meat. After a quick char over the flames at the end, the chicken is juicy, tender, and oh so good.

Smoky Dry-Rubbed Grilled Chicken with Alabama White Sauce image

Steps:

  • For the dry-rubbed grilled chicken: Remove the backbone from the chicken. Cut the chicken through the breastbone into two halves. Stir together the House Seasoning, brown sugar, oregano, paprika, parsley and a couple of pinches of salt in a bowl. Rub under the skin and all over the chicken halves.
  • Prepare a grill for direct and indirect cooking: Heat one side of the grill to medium heat. Leave the other side unlit.
  • Place the chicken skin-up on the grates on the unlit side of the grill. Grill, with the lid closed, until the skin begins to brown, about 45 minutes. Transfer the chicken to the lit side of the grill, starting skin-up, and cook until the chicken is done and a meat thermometer registers 165 degrees F when inserted in the thickest portion of the thigh (avoiding bone), 12 to 15 minutes on each side.
  • For the Alabama white sauce: Stir together the mayonnaise, brown sugar, vinegar, Dijon mustard, horseradish, hot sauce, dry mustard, lemon juice, and salt and pepper to taste in a medium bowl.
  • Transfer the chicken to a serving platter. Pour the sauce over the chicken and serve immediately.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.

2 tablespoons light brown sugar
1 teaspoon dried oregano
1 teaspoon smoked paprika
1 teaspoon dried parsley
Kosher salt
1 cup mayonnaise
2 tablespoons light brown sugar
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
2 teaspoons prepared horseradish
2 teaspoons hot sauce
1 teaspoon dry mustard
Juice of 1/2 lemon (about 1 tablespoon)
Kosher salt and freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Smoky Grilled Chicken Wings with Pickled Red Chiles, Dates and Fresh Mint image

Steps:

  • Begin by making the brine: In a large bowl, combine 6 cups water, the salt, honey, garlic and ginger. Stir until the salt is dissolved, and then add the wings. Cover and leave in the refrigerator for 1 to 2 hours.
  • Prepare the quick pickle mixture: In a large bowl, combine the rice wine vinegar, sugar and soy. Stir well until the sugar dissolves. Add the dates, scallions and chile to the mixture. Set aside while you cook the wings. Once the wings have brined, drain and set out on kitchen towels to dry well.
  • Preheat an outdoor grill and wipe down the grates with an oil-blotted paper towel. This not only cleans the grill but creates a nonstick surface. Sprinkle the wings with salt and pepper, and then lightly toss in a mixture of smoked paprika and sesame oil. Place the wings on the grill and cook for 17 to 20 minutes, turning halfway through, so they brown evenly all over and cook through.
  • When done, remove the wings to a large bowl. Add the chopped herbs to the pickled date mixture, toss to combine and add to the bowl with the wings. Toss to coat evenly, and then transfer to a serving platter and serve.

1/4 cup kosher salt
1 tablespoon honey
4 cloves garlic, peeled and smashed
One 1-inch piece of ginger, peeled and smashed
5 pounds chicken wings, separated at joint, tips discarded
1/2 cup rice wine vinegar
1/4 cup sugar

1 cup (about 10 pieces) Medjool dates, split lengthwise, pits removed and finely diced
4 to 5 scallions, cut thinly on the bias
1 Fresno chile, halved lengthwise and finely sliced
Canola oil, for grilling

3 tablespoons smoked paprika
2 tablespoons toasted sesame oil
1/4 cup lightly packed fresh cilantro leaves, chopped
1/4 cup lightly packed fresh mint leaves, chopped

Smoky Grilled Chicken with Sweet Vinegar Sauce image

Steps:

  • Combine paprika, mustard, sugar, cayenne, 1 tablespoon salt, and 1/2 teaspoon black pepper. Sprinkle mixture evenly on chicken, then set chicken on a rimmed baking sheet. Let stand uncovered 1 hour.
  • Separately, combine vinegar, honey, and chile.
  • Heat a charcoal grill, creating a two-zone fire with vents partially open. Position coals on one side of the grill for direct high heat, and leave the other side empty for indirect lower heat. (On a gas grill, turn one side on high, and leave the other burners off.) Lightly coat chicken with olive oil and place over indirect heat. Cover and cook, turning occasionally, until pieces are cooked through and a thermometer inserted into thickest parts (not touching bones) registers 165 degrees, about 30 minutes.
  • Uncover grill; transfer chicken to direct heat. Brush on vinegar sauce as pieces come off the grill, and serve it on the side.

Refrigerate up to 12 hours. Bring chicken to room temperature before grilling, about 1 hour.
  • Preheat a gas grill to medium-high (400°F to 450°F) on 1 side, or push hot coals to one side of a charcoal grill. Place the rosemary sprigs in a large cast-iron skillet, then place the chicken, skin-side up, over the herbs. Place skillet on grates over direct heat, close grill, and cook for 10 minutes. Open the grill, move the skillet to indirect heat, rotating the pan to ensure the chicken breast is closest to the direct heat. Grill, covered, and continue roasting until chicken’s juices run clear when skin is pierced with a knife and the skin is crispy [a thermometer registers 160°F], about 30-35 minutes.
  • Remove from heat and let chicken rest for at least 10 minutes (or up to 30). While the chicken rests, grill the bread (if desired) over direct heat until lightly charred, about 90 seconds on both sides. Carve and serve the chicken (discarding rosemary sprigs) over toasted bread or rice, with the pan drippings spooned over the meat.
