- In a large bowl, toss potatoes with green onions, bacon, salt and pepper. Place half of the mixture on a greased double thickness of heavy-duty foil (about 18 in. square); dot with 1 tablespoon butter. Fold foil over potato mixture and crimp edges to seal. Repeat to make a second packet., Grill, covered, over medium heat 20-23 minutes on each side or until potatoes are tender. Remove from grill., Open foil carefully to allow steam to escape. Sprinkle potatoes with cheese. Grill opened packets, covered, 3-5 minutes longer or until cheese is melted.

CAMPFIRE FOIL PACKS
These are easy to make for camping, my husband loves them! We prepare them at home and then leave them in the cooler until we are ready to cook. You can use any combination of meat and vegetables that you like. Do not try to use less olive oil or foil or your dinner will burn. Be careful when opening foil as steam will have formed inside and can burn you.

- In a large bowl, or a large zip-top bag, combine the chicken, onion, mushrooms, yellow pepper, red pepper, garlic, and potatoes. Pour in the olive oil and lemon juice, then mix well.
- Evenly divide the mixture between 4 large sheets of aluminum foil. Top each with another sheet of foil, and roll up the edges tightly. Wrap each packet again, securely in another sheet of foil to double wrap.
- Cook in the hot coals of a campfire until the chicken is opaque and the potatoes are tender, around 40 minutes.

- When the fire is lit but not ready, lay out 8 pieces of foil (about 12 by 8 inches) and brush with olive oil.
- Shingle an eighth of the potatoes in a circle in the center of each piece of foil. Break the onion slices into rings and scatter evenly over each potato ring. Equally divide the remaining olive oil, rosemary, salt, and pepper over the potatoes.
- With the potato rings intact, bring the two large edges of foil to the center, sealing firmly.
- Fold over the other two short edges to seal. Place on a medium or medium-hot fire for 20 to 25 minutes or until the potatoes are cooked through (Cooking in foil packets is not an exact science, so remember to check one packet after 20 minutes for doneness and to make sure the bottom isn't burning.
- If necessary, finish cooking with another foil sheet under the packets.).

POTATO PACKETS
This is a recipe that I have had for years. I originally got it off of a Lipton Soup Mix box and changed a bit. I like red potatoes the best but any can be used. I also add chopped carrots if I have them on hand. Originally designed for grill, I have cooked them in the oven in packets on a cookie sheet.

Steps:
- Tear off 4 large squares of aluminum foil and spray with Pam.
- Scrub potatoes.
- Slice with skins on (like you would to fix fried potatoes).
- Divide potatoes among foil squares.
- Shake soup mix package before opening to mix it up well. Divide among 4 foil squares. You may or may not use whole package, depend on personal preference.
- Sprinkle 1 tablespoon cheese on each square of foil.
- Put 1 tablespoon of butter on top of each foil square.
- Fold sides to completely cover potatoes and form a square packet.
- Put on grill, my DH, puts them on the shelf of our grill and cooks for 45 minutes.
SMOKY CHEDDAR POTATO FOIL PACK

- Heat gas or charcoal grill. Cut 30x18-inch piece of heavy-duty foil. Place potato chunks on foil; sprinkle with salt. Cut butter into small pieces; sprinkle over potatoes. Sprinkle with cheese and bacon bits.
- Bring up 2 sides of foil over potatoes so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal. Pierce top of foil once or twice with fork to vent steam.
- Place foil packet, seam side up, on grill over medium heat. Cover grill; cook 45 to 60 minutes or until potatoes are tender. Carefully fold back foil. Sprinkle onions over potato mixture.

- Heat the grill to medium. In a large bowl, combine potatoes, unpeeled cloves from head of garlic, and olive oil; season with salt and pepper
- Layer 2 large pieces (2 feet each) heavy-duty foil for each of 2 packets. Divide the potato mixture between foil pieces. Fold the foil over the potatoes, leaving room inside for the potatoes to roll when the packets are shaken; crimp the edges.
- Place packets on grill; cover. Cook until tender, 35 to 45 minutes, shaking packets often for even cooking. Remove from grill; let cool slightly, then carefully open packets. Serve hot.
