Steps:

  • Saute 4 smashed garlic cloves in 3 tablespoons olive oil over medium heat until golden. Add 4 cups okra (halved lengthwise) and 1 small onion (cut into wedges); season with salt and pepper and cook until the okra is tender and bright, 10 to 12 minutes. Add 1 pint halved cherry tomatoes; cook until just bursting, 3 minutes. Finish with a splash of cider vinegar.

Thickened with a roux, this vegetarian gumbo is rich with tomatoes, onions, mushrooms, peppers and okra.

Steps:

  • Heat 1 tablespoon oil in a large saucepan over medium heat. Stir in garlic, onion, and green bell pepper, and saute until tender. Stir in okra, mushrooms, diced tomatoes and their liquid, tomato paste, file powder, bay leaves, salt, and pepper. Cook, stirring occasionally, 40 minutes.
  • Heat 2 tablespoons oil in a medium skillet over medium heat. Stirring constantly, add flour, and cook 2 to 5 minutes, until a golden brown roux has formed.
  • Spoon the roux into the okra mixture, and continue to cook, stirring occasionally, 5 to 10 minutes, until thickened.

2 tablespoons all-purpose flour

SMOTHERED OKRA BASE FOR OKRA GUMBO OR A SIMPLE SIDE DISH

This is the easiest way to smother okra. Using this method, the okra can be eaten as is or used as a base for Okra Gumbo. To prepare the gumbo, all that needs to be added to this full batch of cooked okra is about 3 to 4 pounds peeled and deveined shrimp, cooking stovetop for about 20 to 25 minutes after returning to a simmer. Should additional liquid need be added, do so towards the end of the 20 minutes by adding broth, water or shrimp stock to reach desired consistency. Serve gumbo over cooked rice.

Steps:

  • In a large roasting pot, layer alternately the okra, onions, bell pepper, tomatoes with juice, oil, garlic, celery, ham seasoning, water or broth, salt and pepper.
  • Cover pot tightly and place in 425°F oven.
  • Cook 30 minutes, stir and reduce heat to 350 degrees.
  • Cover and cook 2 - 2 1/2 hours, stirring every 30 minutes.
  • When the stringing of the okra ceases, the okra is cooked.
  • Remove from oven and allow to cool.
  • Chill COMPLETELY before packaging and freezing.

  • Stove Top Method: Method 1 - Wash fresh okra. Remove stems and cut okra into 1/2 inch rounds. In a heavy saucepan or Magnalite cookware, cook the okra, onions, tomatoes in the oil over medium low heat stirring continually for about 45 minutes to 2 hours (depending on the amount you are cooking) until the okra is no longer slimy and has achieved a light greenish brown color.
  • Stove Top Method: Method 2 - Some cooks will sauté the onions and bell pepper in one tablespoon of oil until wilted in a separate skillet all the while cooking the okra in a separate pot until the okra is a light greenish brown color .
  • Check your seasonings and serve as a vegetable side dish, with rice and gravy or make the okra and shrimp gumbo. Cei cest bon!
  • Oven Method: Method 3 - Preheat oven to 350 degrees. If you're using frozen okra, defrost in a microwave or at room temperature. Using frozen okra from your local supermarket allows you to "pick" okra anytime saving time and freezer space.
  • In a large Magnalite pot or Dutch oven with a lid, add the oil. Add the cut okra, onion, bell pepper and tomatoes. On the stove top, heat until the pot is warm (although warming the pot is not necessary before placing in the oven, it does help speed the cooking process).
  • Cover the pot and place in the preheated 350 degree oven. Set your timer for 1 hour. Take out and stir thoroughly. After the first hour, repeat this step at 1/2 hour intervals.
  • What I like to do is cook this dish in the late evening say sevn o'clock; I cook it for two hours and then turn off my oven and leave it in the oven until the next morning.
