- Preheat the oven to 375 degrees F. Put the sweet potatoes on the oven rack and bake until fork-tender, about 45 minutes. When the potatoes are finished cooking, let cool slightly, about 5 minutes. Slice them open lengthwise and scrape out the flesh with a fork into a large bowl. Increase the oven temperature to 400 degrees F.
- Add the granulated sugar, milk, eggs, vanilla and salt to the bowl with the sweet potatoes. Mash the mixture with a potato masher until combined and slightly lumpy-you don't want it to be perfectly smooth.
- Now, in a separate bowl, mash the brown sugar, pecans, flour and butter with a pastry cutter or fork until thoroughly combined. The mixture should resemble a crumble.
- Spread the sweet potato mixture in a 14-cup oval-shaped baking dish and sprinkle the crumb mixture all over the top. Bake until golden brown, about 30 minutes.
GRILLED TATERS WITH ONION AND GARLIC

- Prepare a grill for medium-high heat.
- In a large bowl, combine the potatoes, olive oil, onions and garlic. Season with salt and pepper.
- Cut six 12-inch square sheets of foil and place them on a baking sheet. Put one-sixth (about a cup) of the potato mixture in the center of each piece of foil. Fold the sides of the foil over the potatoes, covering them completely and sealing them into packets.
- Transfer to the grill and cook until tender, 15 to 20 minutes.

- For the sweet potatoes: Preheat the oven to 375 degrees F.
- Bake the sweet potatoes until fork-tender, 30 to 35 minutes. Remove the potatoes and raise the oven temperature to 400 degrees F.
- Slice the sweet potatoes in half and let them cool slightly. Scoop out the innards, place into a large bowl and give them a good mash, leaving some texture to the potatoes--no need to mash completely. Add the granulated sugar, milk, salt, vanilla extract and eggs. Stir and mash the mixture around--you don't want them to be perfectly smooth.
- Butter a 2-quart baking dish, pour in the potatoes and smooth out the top.
- For the topping: Combine the brown sugar and flour in a bowl. Throw in the butter and with a pastry cutter, cut together until thoroughly combined. Add the pecans and combine until the topping is nice and crumbly. Sprinkle the crumb mixture all over the top of the potatoes.
- Bake until golden brown, about 30 minutes.

I usually make these with salmon patties and biscuits. You can use it with almost anything.

- Season potatoes with salt and pepper to taste. Place flour in a shallow dish or bowl; coat potatoes with flour. Add onion to potato/flour mixture and set aside.
- Heat oil in a medium skillet over medium-high heat. When oil is hot add potato/onion mixture and cook until golden brown, stirring occasionally to prevent burning.
- When mixture has browned, reduce heat to low, add water and cover skillet. Simmer for 20 minutes, or until tender.

- Fry bacon in a large skillet over medium-high heat until crispy, about 5 minutes. Remove bacon from skillet and drain on a plate lined with paper towels; reserve bacon grease in the skillet. Crumble bacon into a bowl when cool and set aside.
- Add onion, celery, and red bell pepper to the bacon grease in the skillet. Cook over medium heat until softened, about 3 minutes. Add cayenne, parsley, mustard, and black pepper and cook 2 minutes. Add cabbage; cover and cook 10 minutes. Uncover, increase heat to high, and cook, stirring often, until cabbage is wilted and tender, about 10 additional minutes.

- Preheat oven to 350 degrees.
- Scrub potatoes and clean then up.
- Stab them all over with a fork. If you want soft skins than you need to rub the outside with butter and then wrap in foil.
- Place potatoes in a metal bake sheet and bake at 350 degrees for 70 to 80 minutes or until tender. *Hint* Some Microwaves have settings that make baked potatoes but do not cover them in foil.
- Start preparing the next part of the meal when the potatoes have about 30 minutes left.
- In a bowl you need to add 8 ounces of sour cream and 1/2 cup of flour.
- Place the bouillon granules on the chopping board. Use a clever turned side ways to press the granules flat. This should make them like a powder.
- Add the bouillon powder, 1/2 cup of water, and some pepper in to the bowl and stir.
- Once you have the mixture stirred you can set it aside.
- In a skillet put two tablespoon of butter, one tablespoon of minced garlic, mushrooms, and your desired amount of onions.
- Cook over medium heat until the mushrooms cook down to your liking.
- Add the flour mixture to the skillet.
- Add the desired amount of salt pepper and Italian Seasoning.
- Cook and stir until thickened and bubbly.
- Cut the cooked potatoes in half, mash the insides up a little, pour the sauce over the top, and Enjoy!

This is the way my Mom does Red New Potatoes. My son absolutely LOVES these. Every time he goes to Granny's house, she has to make this for him. *If you can make the sour cream mix a day ahead, and refrigerate it, it's even better! **Use the Hidden Valley Ranch ORIGINAL BUTTERMILK Ranch Dressing mix. It makes a difference!

- Mix the package of Original Ranch mix into the sour cream. (If this is made a day ahead, it gets even better!).
- Wash the potatoes, and cut them into halves if they are very large new potatoes.
- Boil the potatoes in salted water, until soft (about 10-15 minutes).
- When potatoes are soft, drain them in a colander.
- Put the potatoes back in the pot after draining, add the butter, the evaporated milk, salt and pepper to your taste, and stir together.
- Add in the sour cream mixture, and the chopped green onions.
- Cover and let sit for 10-15 minutes.
- Heat over a medium-low heat for about 3 minutes, stirring often, until all is hot again.
- Serve.

- Peel and cut the potatoes into 1 inch cubes. In a large pot, cover with cold water and bring to a boil over high heat, covered. Reduce the heat to medium and continue to cook until the potatoes are tender. 30-45 minutes.
- Drain and return the pot to the stove, and over low heat, melt the butter. Return the potatoes to the pot and add the rest of the ingredients. Stir well, and mash until smooth.

You can use any kind of stock you want, depending on the flavor of the main dish you serve these with--beef stock if you're serving beef, chicken stock with chicken--or use vegetable stock for a completely vegetarian dish. You can even use water if you absolutely must. A cast-iron pan is preferred. Do not use nonstick. From the Prudhomme Family Cookbook. Thanks to the commenters who noted that black pepper was listed twice. The second ingredient should have been white pepper.

- Heat oil in a very large skillet over high heat for about 1 minute. Add potatoes, onions, salt, peppers and garlic, stirring well.
- Cook about 10 minutes. Each time mixture begins to brown and stick excessively, stir and scrape pan bottom well.
- Reduce heat to low and cook until mixture is mottled brown throughout, about 20 minutes, stirring and scraping only occasionally.
- Add 1/2 cup stock and scrape pan bottom well. Cook about 5 minutes, stirring only once or twice.
- Add 1/2 cup additional stock and cook another 5 minutes, stirring and scraping well, and breaking up about half of the potato pieces. Potatoes should be half creamed and half lumpy.
- Add remaining stock and green onions, stirring well. Cook about 5 minutes more, stirring and scraping occasionally.
