SNOWFLAKE COOKIES
This is my mom's Christmas cookie recipe that the kids and I have made for years. Great fun to make and decorate.

Steps:
- Preheat oven to 400 degrees F (205 degrees C).
- In a large bowl, cream the shortening with the sugar. Add the eggs and vanilla and mix well. Sift the flour and salt into the creamed mixture and stir in gradually. Chill dough for at least one hour.
- Roll the chilled dough out to 1/8 inch thick and cut into desired shapes. Bake on an ungreased baking sheet for 6 to 8 minutes. Allow cookies to cool before decorating.

SNOWFLAKE COOKIES

- In a large bowl, cream butter and 1 cup sugar until light and fluffy. Beat in vanilla. Gradually add flour and mix well. Divide in half. Cover and refrigerate for 2 hours or until easy to handle., On a lightly floured surface, roll out one portion of dough to 1/4-in. thickness. Cut with a floured 4-in. snowflake-shaped cookie cutter. Place 1 in. apart on ungreased baking sheets. , Bake at 300° for 8-10 minutes or until firm. Repeat with remaining dough. Chill and reroll scraps if desired. , In a small resealable plastic bag, combine edible glitter and remaining sugar. Seal bag; crush mixture to break glitter into smaller pieces. Sprinkle over warm cookies. Cool for 5 minutes before removing to wire racks to cool completely.

SNOWMAN SUGAR COOKIES
Steps:
- Preheat the oven to 350 degrees F. Line a half-sheet pan with parchment paper.
- Sift the flour into a medium bowl. In a stand mixer fitted with the paddle attachment, cream together the butter, sugar, vanilla extract and almond extract, 3 to 5 minutes. Add the eggs, one at a time, scraping down the sides of the bowl after each addition. Decrease the speed to low, add the flour and mix to incorporate. Scrape down the sides of the bowl and increase the speed to medium for 30 seconds. Chill the dough for 1 hour in the refrigerator.
- Lightly dust a clean surface with flour. Using a rolling pin, roll out the dough between 1/4-inch and 1/2-inch thick. Cut the dough with a snowman cookie cutter and place on the prepared sheet pan (about 24 cookies). Refrigerate the dough for 15 minutes. Bake for 10 to 15 minutes. Cool completely, then serve the cookies as-is, or frost the cookies and then serve.
RED VELVET SNOWFLAKE COOKIES
Red velvet cake mix cookies.

- Combine cake mix, cake flour, melted butter, eggs, evaporated milk, and food coloring in a large bowl. Mix with an electric mixer on slow speed until fully combined. Cover the bowl with plastic wrap and place in the refrigerator for at least 4 hours, but best if overnight. The longer the dough sits, the easier it is to roll out and cut.
- Preheat the oven to 375 degrees F (190 degrees C). Grease a cookie sheet.
- Roll dough on a lightly floured piece of parchment paper to a thickness of 1/8 or 1/16 inch. Cut cookies with a snowflake-shaped cookie cutter and place on the prepared cookie sheet. Dust off any flour from the top of the cookies with a brush or paper towel.
- Bake in the preheated oven for 6 to 7 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely, 25 to 30 minutes more.
- Decorate fully cooled cookies as desired with icing.

COCONUT SNOWFLAKE COOKIES
This is a wonderful no-bake cookie ball with a crispy peanut butter, Rice Krispies and nut center covered with coconut. Maybe more a candy than a cookie. Very tasty!

- Add walnuts and cereal, mix well.
- Form into balls and put in refrigerator while you prepare frosting.
- Frosting: Combine powdered sugar, milk and vanilla.
- Roll balls in frosting and then in coconut.

SNOWFLAKE BISCUITS
Bake our snowflake biscuits for a tasty Christmas gift. They're great to make with kids, too. Decorate with fondant icing, silver balls and white sprinkles

- Heat oven to 200C/180C fan/gas 6 and line a baking sheet with baking parchment. Put the butter in a bowl and beat it with electric beaters until soft and creamy. Beat in the sugar, then the egg and vanilla, and finally the flour to make a dough. If the dough feels sticky, add a little flour and knead it in. Chill for 20 mins in the fridge.
- Roll the dough to about the thickness of a £1 coin on a lightly floured surface. Cut out snowflake shapes using a biscuit cutter, then re-roll the off-cuts and repeat.
- Bake for 8-10 mins or until the edges are just beginning to brown. Leave to cool for 5 mins before trying to move them. Cool completely.
- Roll out the fondant icing to the thickness of a 50p piece. Use the same cutter to stamp out the icing. If you have smaller cutter you can stamp out holes in the middles of some of them. Brush each biscuit with a tiny amount of honey and press an icing snowflake on top.
- Mix the icing sugar with enough water to make a pipeable icing, and spoon it into a piping bag fitted with a straight piping nozzle. Pipe patterns onto the snowflakes and add silver balls and sprinkles as you decorate. Leave to dry completely.
