After sampling this cake at a picnic, I had to find the lady who made it to ask for the recipe. I've made it - and shared the recipe myself - many times since.

- In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, cinnamon, baking soda and salt; gradually beat into sugar mixture (batter will be thick). Fold in apples. Spread into a greased and floured 13-in. x 9-in. baking pan. , For topping, beat the butter, sugar and cinnamon in a small bowl. Stir in coconut and walnuts; mix well. Sprinkle over the batter. Bake at 350° for 35-40 minutes or until a toothpick inserted in center comes out clean.

- Preheat oven to 425°. In a large bowl, toss apples with brown sugar and 2 teaspoons cinnamon., In another large bowl, beat 1 cup sugar, oil, eggs, orange juice and vanilla until well blended. In a third bowl, whisk flour, baking powder and salt; gradually beat into sugar mixture., Transfer half the batter to an ungreased 13x9-in. baking pan. Top with apples. Spread remaining batter over apples. Mix remaining cinnamon and sugar; sprinkle over top. Bake 10 minutes., Reduce oven setting to 375°. Bake until golden brown and apples are tender, 35-45 minutes. Cool on a wire rack.

SOFT CINNAMON APPLE CAKE
This is a very easy and quick apple cake recipe using ingredients you are most likely to have in your pantry. I came up with it when wanting to make apple cake and didnt have any butter in the house. I hope youll like it as much as we did! :)

- In a big bowl combine all of the dry ingredients.
- In a separate bowl combine milk, oil and egg. Add to the dry ingredients and stir until just combined (do not overmix!).
- Place one layer of sliced apples in a bundt-cake pan. Add remaining apple slices to the dough and stir to combine.
- Pour into pan.
- Bake in the preheated oven at 190°C/375°F for 35-40 minutes or until tester comes out clean. If the cake gets too dark on top, cover with a sheet of baking paper.
- Serve warm or cold. I like it plain, but some ice-cream, cream or custard would be lovely, too. :).

- To make cake: Preheat oven to 350°F. Combine granulated sugar, flour, baking soda, cinnamon and salt in a large mixing bowl. In a separate mixing bowl, combine eggs, apples, oil and vanilla. Add mixture to the dry ingredients, and stir just until well mixed. Batter will be thick. Pour cake batter into greased 13 x 9-inch pan. Sprinkle with brown sugar and cinnamon. Bake 50 to 60 minutes, or until a toothpick inserted in center comes out clean. To make Caramel Sauce: Combine butter, sugars, and evaporated milk in medium saucepan over medium high heat. Stirring constantly, bring to a boil for 1 minute. Add cinnamon and vanilla. Cool. Cut cake and serve with caramel sauce. If desired, top with ice cream or whipped topping.

- Preheat the oven to 350 degrees F. Grease a 10- or 12-inch cast-iron skillet with oil and set aside.
- Combine the flours, baking powder, flax meal, cinnamon, baking soda and salt in a mixing bowl, and stir with a fork or whisk until well combined. Add the maple syrup, sparkling water, vanilla and oil and stir well with a fork to combine.
- Grate the apples with a box grater or a food processor with a grater attachment blade. Add the apples and walnuts to the batter and stir to combine.
- Spoon the batter into the prepared skillet and spread evenly. Bake until the top is lightly browned, 20 to 30 minutes. Let cool 5 minutes, then slice into 8 wedges and serve.
MY MOM'S OTHER SOFT APPLE CAKE (IN A TUBE PAN)
My mom is just amazing. After 70+ years of cooking for others, she keeps on coming up with new ideas for yet another delicious dish. Today she gave me this recipe for another soft apple cake (to distinguish them from her passover apple cake and her "hard" apple cake, my personal favorite). It whips up fast, makes a nice presentation, and freezes well if you dont gobble it down first. I think she got it from "America Cooks for Israel", a cookbook that happens to feature some of her recipes too, courtesy of her only daughter. ;-) Try it, and join in singing my mom's praise.

- Mix together first 3 ingredients. Set aside.
- Beat together the sugar, oil and eggs until smooth.
- Mix together the dry ingredients in another bowl, and add to egg mixture, alternating with the orange juice and vanilla. Beat until smooth.
- In a greased tube or bundt pan, pour a little less than half the batter. Top with the apples, and cover with the rest of the batter.

- Preheat the oven to 200c/ gas 5
- Add the sugar and butter together in a bowl and mix together until both are combined and nice and fluffy
- Add the flour to the butter/sugar mix and combined together until it forms a gooey mixture
- Add the one egg and stir into the mixture. Add the other egg and stir all together. The mixture should be slight runny but still have a slight stiffness
- Add the cinnamon to the mix and stir well then add the peeled and chopped apple to the mix and stir together
- Put the mixture into the cake tin and place in the over for 30- 40 minuets until golden brown.
- Once cooked place onto a wire rack and leave to cool. Serve slightly warm for a better taste
CINNAMON APPLE CAKE
Applecious cake that goes lovely with a nice cuppa or serve warm with custard for a nice dessert.

- Grease and line a 8-9" round cake tin.
- Turn oven on and set to 170 degrees C (fan-assisted). (Adjust for other types of ovens).
- Make fruit mix. In a bowl, add the diced apple, lemon juice, and if using, the raisins and maple syrup. Stir to evenly coat and set to one side. NB. The lemon juice will prevent the apple from browning.
- Now using the ingredients from 'Sponge' list. In a large mixing bowl, add the butter and caster sugar. With a hand mixer, cream together until a nice light coloured texture.
- Sift the flour with baking powder into a separate bowl.
- Then gradually, fold a little sifted flour and whisked eggs into your cream butter/sugar mix. Doing a little out a time stops the mix from curdling.
- If using, fold in the vanilla essence. If your sponge mix feels a little thick you can add milk to loosen the consistency.
- Grab your apple mix and pour onto your sponge mix. Fold the apple mix into the sponge mix until evenly distributed.
- Then pour into your prepared cake tin.
- To make the cinnamon topping, combine the belted butter, sugar and cinnamon until lumpy and slightly damp. Sprinkle over the cake batter.
- Bake cake for approximately 50 minutes. To test if done, using a skewer insert into centre of cake and when pulled out the skewer will look clean. Once done place your tin onto a cooling rack to cool slightly. [I made the mistake of removing too quickly and my cake collapsed].
- To make the sugar glaze icing. Mix together the icing sugar and milk until smooth. Drizzle over the cake once cooled and enjoy with a cuppa.
- If using as a dessert, then do not worry about the glaze or cooling. Serve with either warm custard or cream. Enjoy!
