- Fill a large bowl halfway with water. Add lemon juice and mix. Peel, core, and slice apples and pears, putting them in the lemon water to prevent browning.
- Drain fruit; do not rinse. Place drained fruit, 1/4 cup water, and cinnamon stick in a multi-functional electric pressure cooker (such as Instant Pot®). Set the Manual mode to high pressure according to manufacturer's instructions; set timer for 3 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, up to 15 minutes. Unlock lid. Remove and discard cinnamon stick. Pass the cooked fruit through a food mill; sauce will be slightly coarse. Blend fruit with an immersion blender for a smoother sauce.

CHUNKY APPLE/PEAR SAUCE (SUGAR FREE)
I love this recipe, it tastes amazing! It would be great with lamb or pork chops. Note: Remove those pesky stickers when you buy the apples, but try not to blemish the fruit. These stickers tend to get harder to remove as the fuit ages.

Steps:
- Peel and core all the fruit. Cut in large cubes.
- Place the fruit in a large saucepan.
- Mix the stevia and sea salt with the water and add to the pot of fruit.
- Add the cinnamon and nutmeg to the fruit in the pot. Stir the spices into the fruit so they are coated.
- Bring to a boil, then turn down and simmer for 25 minutes. Remove the lid and let it simmer for 5 more minutes. Give it another good stir.
- Let cool a little, then using a potato masher, mash the fruit, but leave chunks, it's really tasty with pieces of fruit still big enough to chew.
- Store in a mason jar in the fridge. It keeps for about a week, but it may not last that long :)

- Peel and core the apples and pears. Chop the pears into large bite-sized chunks and cut the apples a little smaller than that (the apples will take a bit longer to cook, so the difference in size will help them finish cooking at the same time).
- Place the apples, pears, water, and vanilla bean in a medium saucepan and bring to a boil. Reduce heat to medium-low, and simmer, covered for 25-30 minutes, stirring occasionally. Depending on how much moisture is in your fruit you might need to add more water during cook time. If it seems dry, or is sticking to the bottom, add a few tablespoons of water.
- After 25 minutes, remove the lid and allow the mixture to simmer uncovered until the fruit is tender and easily mashable. Continue to add more water, if necessary. If you accidentally add too much water, just let the mixture simmer uncovered until the extra liquid evaporates.
- Remove the vanilla bean and allow to cool slightly. Use your fingers to squeeze the remaining seeds into the applesauce, discarding the pod. Use a potato masher to mash the apples and pears into a chunky sauce, or use an immersion blender to blend it into a smooth sauce.
