EASY AU GRATIN POTATOES
A rich, creamy sauce envelops sliced potatoes A very easy and delicious recipe with room for your own unique touches. This is my most requested dish at family get togethers. I don't like cheese very much, but I love these potatoes!

Steps:
- Cut potatoes in half lengthwise and slice 1/8" thick. Keep slices in cold water until all are ready to parboil. (It will keep them from darkening) You will need enough to fill a 13x9x2 pan to within 1/2" from the top.
- Parboil potato slices until halfway cooked. Pour into colander to drain.
- Preheat oven to 350 degrees.
- Melt the butter in a medium saucepan. Lightly saute' the onions to flavor the butter. Add the cheddar cheese soup and pepper and stir to mix thoroughly. Stir in milk to thin the sauce a bit.
- Place potato slices in a large bowl, and pour sauce over them. Gently fold the sauce and potato slices together.
- Spread evenly in a greased or sprayed 13x9x2 pan and bake at 350 degrees for 40 minutes or until the top potatoes begin to brown around the edges.
- If you like, you can top these with bread crumbs or shredded cheese before baking. I occasionally throw in a cup or so of 1/2" ham cubes for extra flavor.
CREAMY AU GRATIN POTATOES
This is my husband's favorite dish, and he considers it a special occasion every time I make it. The creamy cheese sauce and the tender potatoes in this classic French dish combine to make a deliciously addictive experience. It's a great side dish with a roast pork loin or beef tenderloin. Add a green salad and French bread, and you have found the magic path to a man's heart. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

- Preheat oven to 400 degrees F (200 degrees C). Butter a medium casserole dish.
- Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.
- In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour cheese over the potatoes, and cover the dish with aluminum foil.
- Bake 1 1/2 hours in the preheated oven.

- Preheat oven to 375°.
- I used a 10x7-inch dish for this recipe.
- Slice potatoes (I leave the skins on because it is quicker, but you can take them off if you like).
- Mix together the soup, milk, and Cheese Whiz (if you do not want to use Cheese Whiz it should still turn out fine, I have yet to try it that way).
- Cut butter into small cubes.
- Grease pan or spray it.
- Now layer in dish.
- Start with half of the potatoes.
- Then half of the butter, half of flour, salt n pepper, and half of the soup mix.
- Then add half of the cheese.
- Repeat layers.
- Cover and bake for 45-1 hour (It only took mine 45 minutes, but I sliced my potatoes very thin).
- Then remove cover.
- Sprinkle with paprika and cook for another 15 minutes or until done.

Hi everyone! I have lived in the States for over 30 years, but my American husband and I moved to Norway almost 7 years ago. (I was born in Norway) Converting recipes is sometimes a challenge, but the "try-and-fail" method seems to work, and is sometimes very funny----I have a few recipes that have been favorites through the years and this Au Gratin potato recipe is one of them. I don't know where or when I got it, but my 3 kids, who are now 34, 32 and 27 and all living in America, loved this when they were growing up, and still do! Try it! P.S. So happy to find this site! - Place thawed hash browns in very large bowl. Add creamed soups and sour cream; stir to combine and set aside. In saute pan melt 1/4 cup of butter and saute onion and garlic till tender. Add to potato mixture along with seasonings and cheese. Stir together till nicely combined. Spread evenly into a 9 by 13 inch greased glass baking dish. In a small bowl combine Corn Flakes with the melted butter. Evenly place topping over potatoes then sprinkle over topping with dried parsley. Cover with foil and bake in a 350 degree oven for 1 hour and 15 minutes, then remove foil and bake 30 more minutes, or till golden and bubbly. Let stand 15 minutes before serving.
