HONEY WHEAT SOURDOUGH BREAD
We've been enjoying this slightly sweet bread almost daily for more than 10 years. A fellow teacher shared the recipe with me when my family lived in New York. I was sure to pack up the recipe when we headed west. &Mdash; Evelyn Newlands, Sun Lakes, Arizona

Steps:
- In a large bowl, dissolve yeast in warm water. Add the butter, honey, molasses, Sourdough Starter, wheat germ, sugar, baking soda, salt, whole wheat flour and 2 cups all-purpose flour. Beat until smooth. Stir in enough remaining all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in 2 greased 8x4-in. loaf pans. Cover and let rise until doubled, about 1 hour. , Brush with oil. Bake at 375° until browned, 25-30 minutes. Remove from pans to wire racks to cool.

Steps:
- Dissolve yeast in 1 cup warm water.
- Mix yeast, starter, honey, salt and shortening with 3 cups flour.
- Add more flour as needed to make a stiff dough.
- Knead 150 strokes on a floured surface and place in a greased bowl.
- Cover and let rise 1 to 1 1/2 hours until doubled in size.
- Punch down, let double again.
- Punch down and roll into tight loaf.
- Grease and place in bread pan.
- Let double in pan and bake at 400 degrees F. for 35 to 40 minutes or until very dark golden brown, and it sounds hollow when thumped.

HONEY WHOLE WHEAT BREAD
I started grinding my own wheat and making homemade wheat bread about three years ago. I love this recipe. It makes four loaves of bread, which sounds like a lot unless you have four kids. Also it freezes great. I slice mine, put it in a plastic bread bag, and zip it in a freezer bag. It's good up to one month. I've had problems with homemade wheat bread crumbling, not so with this recipe. Another thing I've found to make a tasty bread use 1/2 hard white wheat flour and 1/2 hard red wheat flour if you can.Hope you enjoy.

Steps:
- Put water in mixer and add 4 c of flour.
- Mix for a few seconds and then add yeast, honey, oil, dough enhancer, and salt. Pulse a few times.
- Then while mixing add just enough flour till dough pulls away from the side of the bowl.
- Dough should be slightly sticky to the touch.
- Mix 10-12 minutes giving the gluten time to develop.
- Place in greased bowl cover and let rise 45 minutes.
- Punch down and shape into loves.
- Place in greased loaf pans, and let rise 20-30 minutes.
- Bake 30-35 minutes at 350°.

Steps:
- Measure the culture into bread machine pan.
- Add remaining ingredients, with flour being last.
- Set machine for dough cycle and start.
- At end of cycle, remove dough from machine and shape into desired loaf.
- Cover and let rise in warm place until doubled--this can take as little as 1 hour or several hours, depending on what type of starter you use and how active it is.
- Top of loaf can be slashed at this stage, if desired.
- Uncover and bake at 375 degrees for 30 to 40 minutes, or until done.
- Remove from baking pan and cool on wire rack.
- NOTE: I don't let my dough rise in the dough cycle; I just remove it after the kneading is completed and shape my loaf, then let loaf rise.

- The night before you are going to bake bread, make a sponge by mixing the starter with the milk and 3 cups of flour.

- In the bowl of a stand mixer or in a large mixing bowl, combine the starter, water and 1 cup of the bread flour to form a thick batter. Cover the bowl and allow the mixture to rise for 30-60 minutes.
- Warm the milk in the microwave to about 110°F, slightly warmer than body temperature. Add the milk, honey and salt to the sponge. Stir to combine.
- Add the whole wheat flour and stir until the batter looks like thick pancake batter. If using a stand mixer, switch to the dough hook.
- With the mixer running, slowly add the remaining cup of bread flour. Continue mixing until the dough begins to gather on the hook and pulls away from the sides of the bowl. Knead for 5 minutes. If mixing by hand, add as much of the flour as you can in the bowl then finish kneading in the rest of the flour by hand.

- 12 hours before you plan to mix the dough, add the ingredients to make ½ cup (100 g) of active sourdough starter to a clean jar. Stir until combined, loosely cover the jar and let the starter rise at room temperature. Cover the bowl and let the dough rest for 1 hour.
