This is a great way to prepare chicken for company -- but it's so easy and quick, it's also a perfect entree for "gotta-make-a-quick-dinner" nights!

Southwestern Chicken Marinade image

Steps:

  • Mix together marinade ingredients.
  • Coat chicken in marinade.
  • (Optional: allow chicken to marinate 1-2 hours. On evenings when I don't have time to let it sit, though, it still tastes good when it goes straight to the grill!).
  • Grill chicken.

4 chicken breasts
1 tablespoon balsamic vinegar
1 tablespoon olive oil
2 teaspoons garlic powder or 2 minced garlic cloves
1/2 teaspoon oregano
1 teaspoon paprika
1/2 teaspoon cumin
salt and pepper, to taste

Southwest Marinated Grilled Turkey Breast with Chimichurri Sauce image

Steps:

  • Combine all of the marinade ingredients and pour over turkey breasts in a non-reactive covered dish. Marinate for 4 hours or overnight.
  • Soak mesquite wood chips in water for 1 hour. Place over coals in metal/aluminum container and allow to smoke. Place turkey on grill and cook until internal temperature reaches 165 degrees. Allow to rest 5 to 10 minutes. Cut on the bias and serve with chimichurri sauce on top.
  • The most succulent and tasty barbecued meat you ever ate. I came up with this recipe when challenged by friends as an alternative to the usual steak barbecue. It is lowfat, delicious, and easy to prepare.
  • Chop the first three ingredients in a food processor. Add olive oil, vinegar, salt and pepper, and mix thoroughly.

6 garlic cloves more or less to taste
1 tablespoon oregano
1/4 cup olive oil
3 tbsp vinegar
1 tbsp salt
1 tsp fresh ground pepper

Steps:

  • Season two 20-ounce boneless rib-eyes with salt and pepper and rub with Coffee Spice Rub on one side. Grill rub-side down over high heat, 4 to 5 minutes; flip, reduce the heat to medium or move the steaks to a cooler spot, cover and grill 8 to 10 more minutes (for medium-rare). Serve with Smoky Tomato-Red Chile Salsa.
  • Whisk all of the ingredients in a bowl.
  • Whisk the vinegar, olive oil and chipotle puree in a bowl. Add the remaining ingredients and toss. Season with salt and pepper.

2 teaspoons pureed chipotles in adobo sauce
3 large ripe tomatoes, diced
1 small red onion, halved and thinly sliced
1 serrano chile pepper, seeded and finely chopped
1/4 cup chopped fresh cilantro
2 teaspoons honey
Kosher salt and freshly ground pepper

SOUTH-WEST MARINADE

I took this recipe on www.recettes.qc.ca It's yummy with pork, chicken and even beef. The marinade is enough for 2 pork tenderloin. I didn't include cooking time cause it depends on which cut of meat you use. You can put your meat in the marinade and freeze for later.

Steps:

  • Mix everything in a bowl or a ziplock bag. Put the meat in it for at least 1 hour. But it's really yummy overnight. And I even let some pork tenderloin in it for 48 hours. I like to cut the pork tenderloin in slices lenghwise. That way it absorbs more marinade.
  • Cook on the bbq but it can also be cook in oven or in a skillet. You can brush with the remaining marinade while it cooks.

  • Mix Marinade Mix, oil, lime juice and water in small bowl. Pierce meat with fork. Place meat and vegetables in separate large resealable plastic bags or glass dishes. Add 2 tablespoons of the marinade to vegetables. Add remaining marinade to meat; turn to coat well.
  • Refrigerate 15 minutes or longer for extra flavor. Remove meat and vegetables from marinade. Discard any remaining marinade.
  • For steak, broil or grill over medium heat 6 to 8 minutes per side or until desired doneness. For chicken, broil or grill over medium heat 6 to 7 minutes per side or until chicken is cooked through. Place vegetables in heated skillet or grill pan. Sauté vegetables over medium-high heat until tender.
  • Cut meat across the grain into thin slices. Spoon meat and vegetables into warm tortillas. Serve with assorted toppings, if desired.
