This is the type of frosting that is cooked over the stove, then whipped. This goes well on almost any type of cake.

Steps:
- In a saucepan, stir together the sugar, water and cream of tartar. Cook over medium-high heat until the sugar is dissolved and the mixture is bubbly.
- In a medium mixing bowl, whip the egg whites and vanilla to soft peaks. Gradually add the sugar mixture while whipping constantly until stiff peaks form, about 7 to 10 minutes. Frost the cake of your choice.

FLUFFY FROSTING
This is an amazing fluffy, delicious frosting. It pipes out beautifully, and holds it's shape. The flavor tastes like marshmallow whipped cream. Be sure to whip the hot sugar syrup with the egg whites for a considerable amount of time, about 8-10 minutes (on a Kitchenaid stand mixer) for the best results. I'm sure this would be excellent on any flavor of cake, but it is fabulous on chocolate cake and probably be great on red velvet.

Steps:
- Combine the sugar, water and cream of tartar in a saucepan. Cook the mixture over medium-high heat until the sugar is completely dissolved and the mixture starts to bubble.
- Whip the egg whites and vanilla extract in a mixing bowl until soft peaks form. Slowly drizzle the hot sugar syrup mixture into the egg whites while whipping constantly at medium-high speed until stiff peaks form and frosting is very glossy, around 8-10 minutes.
SOUTHERN RED VELVET CAKE WITH CLASSIC CREAM CHEESE FROSTING
Steps:
- Preheat the oven to 330 degrees F. Grease a 13-by-9-inch baking pan with cooking spray and line it with parchment paper.
- Cream the granulated sugar and butter together in a stand mixer fitted with a paddle attachment until they're light and fluffy. Then add the molasses and mix. Add the eggs 1 at a time and mix until they're incorporated, then scrape down the bowl and paddle to make sure it is completely mixed.
- In a pitcher, combine the buttermilk, oil, apple cider vinegar, food coloring and vanilla.
- Sift together the flour, cocoa powder, baking soda and salt in a bowl. Alternate adding the dry ingredients and the wet ingredients to the butter and sugar mixture, finishing with the dry ingredients. Scrape the bowl and mix again, being careful not to over-beat.
- Bake until a toothpick inserted in the center of the cake comes out clean, about 40 minutes. Let cool until no longer warm to the touch, then flip the cake out onto a cardboard cake board. With a serrated knife, remove the top of the cake to make it level. Flip the cake over and remove the browned bottom or "bloom" with the serrated knife. Slice the cake into 2 layers. Layer some of the Classic Cream Cheese Frosting between the cake layers, and then top the cake with it.
- In a stand mixer fitted with a paddle attachment, beat the cream cheese and butter together until they're soft and light. Slowly add the powdered sugar. Scrape the bowl and paddle down, then add the vanilla and salt and mix until incorporated.
SOUTHERN FLUFFY FROSTING
I adopted this great recipe...original text was....A fluffy meringue type frosting, similar to 7 minute frosting but doesn't require beating over the stove.

Steps:
- Place sugar, corn syrup and boiling water in a 3 qt saucepan over moderate heat.
- Stir until sugar dissolves.
- When mixture comes to a full boil, remove from heat and set aside briefly Beat egg whites with salt to stiff peaks.
- Transfer hot syrup to a pitcher for easy pouring.
- Beating at high speed, pour hot syrup in a thin threadlike stream into the whites.
- Pour slowly and scrape down sides if necessary to keep the entire mass well mixed.
- After all of the syrup has been beaten in, add vanilla and almond extract.
- Continue beating for 10-15 minutes on high until icing is very stiff.
FLUFFY BOILED ICING

- In a heavy saucepan combine sugar, water and cream of tartar. Slowly bring mixture to a boil, stirring sides of the saucepan with a brush dipped in water to remove any sugar crystals. Cover and boil for about 3 minutes or until a candy thermometer registers 245 degrees.
- Beat egg whites with pinch of salt until glossy and peaked. Slowly pour in syrup as you continue to beat the whites. Beat until cool and frosting is soft and fluffy. Fold in vanilla.
PHYLLIS' FLUFFY FROSTING
I got this from my Grandma who got it from my Aunt Phyllis. It is incredibly easy but does pretty much require a stand mixer or a person with stamina. It is a very light whipped satin icing (not very sweet) and we love it best on chocolate cake but it frosts anything well. Be patient and whip it for the full 20 minutes or it will not set. To make this a chocolate whipped icing use unsweetened cocoa powder. Add it at the end using 1/4 to 1/2 cup depending on desired richness. *Melted chocolate will make it fall and so will heavy cream or half & half (it just won't set).

- Let egg whites stand at room temperature for 30 minutes. Room temperature egg whites will have more volume when beaten than cold egg whites. In medium bowl, beat egg whites with electric mixer on high speed just until stiff peaks form.
- In 1-quart saucepan, stir sugar, corn syrup and water until well mixed. Cover and heat to rolling boil over medium heat. Uncover and boil 4 to 8 minutes, without stirring, to 242°F on candy thermometer or until small amount of mixture dropped into cup of very cold water forms a firm ball that holds its shape until pressed (see Testing Candy Temperature, page 00). For an accurate temperature reading, tilt the saucepan slightly so mixture is deep enough for thermometer.
- Pour hot syrup very slowly in thin stream into egg whites, beating constantly on medium speed. Add vanilla. Beat on high speed about 10 minutes or until stiff peaks form.
- Frost 13x9-inch cake, or fill and frost 8- or 9-inch two-layer cake. Leftover frosting can be tightly covered and refrigerated up to 2 days; do not freeze. Let stand 30 minutes at room temperature to soften; do not stir.
