GREENS WITH HOT BACON DRESSING

Growing up in a German community, I ate this salad often. It's an old traditional dish-I recall my grandmother talking about her mother making this recipe. As a variation, the old-timers in my family cut up some boiled potatoes on dinner plates, then serve the warm salad mixture on top. -Robert Enigk, Canastota, New York

GREENS WITH HOT BACON DRESSING

German salad found on allrecipes, originally from Taste of Home. When I made this, I left out the egg and sauteed the onion and used bacon bits from a jar. The dressing is tart, so add a pinch more sugar if you like.

Steps:

  • In a large, heavy pot cook the bacon until it has rendered most of its fat, about 5 to 6 minutes. Add the onions, garlic, salt, cayenne, and black pepper and cook until the onions are wilted, about 4 minutes. Add 1 quart of water, the beer, vinegar, and molasses and bring to a boil. Begin adding the greens in batches, pressing down with a wooden spoon to submerge them in the hot liquid and adding more as they wilt. When all of the greens have been added, reduce the heat to a simmer and cook the greens, partially covered and stirring occasionally, for about 1 to 1 1/2 hours or until tender.

3/4 pound sliced bacon
3 cups sliced onions
8 cloves garlic, mashed
3 teaspoons salt
3/4 teaspoon cayenne
3/4 teaspoon black pepper
1 quart water
1 (12-ounce) can beer
1/4 cup distilled white vinegar
2 tablespoons molasses or cane syrup
5 pounds fresh greens, such as mustard greens, collard greens, turnip greens, or kale, rinsed well, picked over and tough stems removed

BACON AND BALSAMIC VINAIGRETTE

Steps:

  • Slice bacon into 1/2 inch pieces and fry until just crispy. Drain on paper towels.
  • Remove bacon from pan, and all but 2 Tbsp of the bacon fat.
  • Gently saute the onion until just soft, making sure not to brown.
  • Add the brown sugar, blend in and then add the vinegar. Reduce for a minute or two.
  • Add the olive oil, as much as to your taste and the salt and pepper to taste.
  • Cool, but do not refrigerate. Dress your salad just before serving.
  • Serve this warm or at room temperature over a salad of hearty greens like romaine. I usually add some very finely sliced red onion rings, mushrooms and homemade croutons, but let your imagination work here. I've thought of trying it in the summer with just onions and fresh sliced strawberries.

6 slices bacon
1/2 cup red onion, diced
1 tablespoon brown sugar
1 teaspoon brown sugar
2 tablespoons balsamic vinegar
2 -4 tablespoons olive oil
salt and pepper
