- In a large skillet, cook beef and sausage over medium heat until no longer pink; drain. , Transfer to a 5-qt. slow cooker. Stir in the tomatoes, green pepper, onion, carrots, water, tomato sauce, tomato paste, brown sugar, Italian seasoning, garlic, salt and pepper. Cover and cook on low for 8-10 hours or until bubbly. Serve with spaghetti. Freeze option: Do not cook spaghetti. Freeze meat sauce in freezer containers. To use, partially thaw in refrigerator overnight. Cook spaghetti according to package directions. Place sauce in a large skillet; heat through, stirring occasionally and adding a little water if necessary. Serve over spaghetti.

- Combine ground beef, onion, garlic, and green pepper in a large saucepan. Cook and stir until meat is brown and vegetables are tender. Drain grease.
- Stir diced tomatoes, tomato sauce, and tomato paste into the pan. Season with oregano, basil, salt, and pepper. Simmer spaghetti sauce for 1 hour, stirring occasionally.

When my husband and I moved down South, we discovered our love for pimiento cheese! It adds southern flair to this meat loaf recipe. - Preheat oven to 350°. In a large skillet, heat oil over medium-high heat. Add onion and celery; cook and stir until crisp-tender, 4-5 minutes. Add carrots and garlic; cook and stir until tender, 1-2 minutes longer. Transfer vegetable mixture to a large bowl. Add eggs, crackers and seasonings. Add beef; mix lightly but thoroughly, Shape into an 8x4-in. loaf in a greased 11x7-in. baking dish. Bake, covered, for 45 minutes. Uncover and bake until a thermometer reads 160°, 15-20 minutes longer. Let stand 10 minutes. Cut into slices; spread with pimento cheese. Serve with potatoes and if desired, shredded cheese and jalapeno.

Steps:
- Trim the beef and cut into eight ½-inch thick medallions, about 6 ounces each.
- Season the medallions with Salt and Pepper and brush with Olive Oil; Cover and refrigerate until needed.
- Heat ½ Tablespoon of the Oil in a sauté pan over medium-high heat. Sauté the Garlic and Shallots until aromatic, 1-2 minutes; add Tomato Paste and cook until slightly browned, about 2 minutes; add the Mustard, Black Peppercorns, Chicken Broth, Maple Syrup, Vinegar, Salt and Pepper; Simmer until mixture reduces to a sauce consistency, about 10 minutes.
- Heat the Oil in a skillet on medium-high heat; sauté the medallions to the desired doneness, 1 ½ minutes for the first side and approximately 1 minute for the second side for medium.
- Finish the sauce with the Cilantro and serve over the Tenderloin.
- Garnish with the Jalapeno.

My family and friends like this recipe because it is nothing like they have tasted before, the secret is to let it simmer 61/2 hours then refrigerate it overnight for the flavors to marinate. This is my recipe as I came up with it while experimenting with it one day and it was a hit with my family.

Steps:
- Brown ground beef, drain off all fat.
- Add onions and bell peppers and tomato products.
- Add salt, hot sauce, simmer for 5 hours this will be very thick, if you wish add a little water.
- Add chopped garlic cloves cook for 1 hour.
- Add Italian seasonings cook for 30 minutes to marinate all flavors.
- Put in the refrigerator for one day.
- This will enhance the flavors.
- Next day cook spaghetti and warm the meat sauce serve hot.
- I have used a crock pot after I brown the ground beef put all ingredients in the crock pot cook slow all day long.

- Place a large Dutch oven on medium heat, add a splash of oil to the Dutch oven before placing the ground beef mixture in skillet. Season with the Worcestershire Sauce, Cajun seasoning, kosher salt, and ground pepper. Brown the lean ground beef lightly breaking it up in small chunks and cooking until completely done. Drain off the excess oils.
- Add the chopped sweet onion and chopped green bell pepper to the empty Dutch oven; cook on medium heat until slightly softened and then add minced garlic; cook about 3 minutes before adding the cooked lean ground beef back in the Dutch oven.
- Next, add the chopped organic stewed tomatoes, organic tomato sauce, and the organic tomato paste to Dutch oven. Stir to combine. Reduce heat to low. Season sauce with sugar, Italian herbs, and dried onion powder. Place a lid on the sauce and cook on low stirring frequently. Cook the sauce for about 20-25 minutes.
- Meanwhile, bring a large pot filled with salted water to a full boil before adding dried pasta to pot. Be sure to follow package instructions for al dente method. About 8 minutes or so.
