OLD FASHIONED PEA SALAD

Another one from my mom. I associate this with springtime but it is good year round. From Gooseberry Patch's Hometown Favorites Cookbook.

Old Fashioned Pea Salad image

Steps:

  • In a mixing bowl, add the first 4 ingredients; stir to combine.
  • In a smaller bowl, add the mayonnaise and sour cream; stir to blend.
  • Spoon the mayo mixture over the pea mixture; gently stir to coat.
  • Season to taste with salt and pepper.
  • This tastes better to me chilled so I let it refrigerate 4-6 hours before serving.

Steps:

  • Thaw peas in colander under running water for a minute; drain.
  • Combine all ingredients.
  • Chill for a couple of hours to marry the flavors.
  • Garnish just before serving.

SOUTHERN-STYLE EGG SALAD

Southern egg salad, primarily used for sandwiches. Serve on fresh bread of your choice. My wife likes to make double-decker sandwiches (utilizing whole wheat bread for the center slice) with pimento cheese on the other half. Trim the edges and cut into 2 or 3 pieces. Great for tailgating.

Southern-Style Egg Salad image

Steps:

  • Cover eggs with water in a saucepan, bring to a low boil, let boil slowly for 5 minutes. Remove from heat and let stand, covered, for 5 minutes.
  • Transfer eggs to ice water to chill for 5 minutes; peel. Grate eggs into a medium mixing bowl and add mayonnaise, relish, mustard, sugar, lemon juice, salt, pepper, and hot sauce. Mix well.
  • Chill in the refrigerator for at least 30 minutes.

  • Once the water is boiling, add the frozen peas and green beans. Cook until tender, 2- 3 minutes. While the peas and green beans cook, prepare an ice bath (a large bowl of ice water). Strain the boiling water then immediately plunge the tender peas/green beans into the ice bath to stop the cooking process and chill them! This also helps to keep their bight, green color.
  • Drain the peas and beans and place into a large bowl. Add the bacon, yellow onions, celery, pimientos, mayo, white vinegar, sugar, dill, salt and pepper. Stir until well combined. Transfer to the fridge and let chill for at least 30 minutes before serving.
