Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large bowl combine cooked pasta, cottage cheese, sour cream, eggs, Cheddar cheese and cayenne pepper. Mix well and transfer to prepared dish. Sprinkle with paprika.
  • Cover loosely with aluminum foil and bake 40 minutes.

Southwestern Mac & Cheese image

Steps:

  • Heat oven to 350°F.
  • Cook macaroni as directed on package, omitting salt. Meanwhile, brown meat with bell peppers in large skillet; drain.
  • Heat dressing in large saucepan. Add flour; cook and stir 1 min. or until bubbly. Gradually whisk in milk; cook and stir 6 to 8 min. or until thickened. Add cheese, mustard and black pepper; cook and stir 2 min. or until cheese is melted and mixture is well blended.
  • Drain macaroni. Add to cheese sauce; mix well. Stir in meat mixture and tomatoes and green chilies. Spoon into casserole dish sprayed with cooking spray.
  • Bake 25 to 35 min. or until golden brown and sauce is bubbly. Let stand 2 min. before serving.

Steps:

  • Bring a pot of water to a boil.
  • Cook the macaroni according to package directions; drain and keep warm.
  • Spray a large nonstick skillet with Pam.
  • Add the turkey and cook until no longer pink, stirring with a wooden spoon to break up the meat.
  • Stir in the onion, bell pepper, chili powder, cumin, and salt.
  • Cook, stirring occasionally, until the onion is tender, about 3 minutes.
  • Add the tomatoes, tomato sauce, chiles, and water; simmer, uncovered, 10 minutes.
  • Add the macaroni and cheese, stirring to combine.

1 cup elbow macaroni
1 lb ground turkey breast
1/2 cup chopped onion
1/2 cup seeded and chopped green bell pepper
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon salt

Steps:

  • Melt butter in large nonstick skillet over medium-high heat.
  • Add bread crumbs, 1/4 t salt, and 1/4 t pepper and cook, stirring frequently, until deep golden brown, about 5 minutes.
  • Transfer to bowl and wipe out skillet.
  • Bring water, 1 1/4 cups evaporated milk, and 1/2 t salt to simmer in skillet over medium-high heat.
  • Add macaroni and cook, stirring often, until macaroni is al dente, 8-10 minutes.
  • Whisk remaining evaporated milk, cornstarch, and hot sauce in small bowl, then stir into skillet.
  • Simmer until slightly thickened, about 1 minute.
  • Off heat, stir in cheeses, one handful at a time, adding water as needed to adjust consistency.
  • Sprinkle with toasted bread crumbs.
  • Serve.
