- Mix unflavored gelatine and sugar in medium microwaveable bowl until blended. Stir in soda. Let stand 3 min. or until gelatine is softened. Microwave on HIGH 3 min. or until gelatine and sugar are dissolved, stirring after each minute. Pour into 8-inch square dish sprayed with cooking spray.
- Refrigerate 25 to 30 min. or until set but not firm. Meanwhile, add boiling water to raspberry gelatin mixes in separate medium bowl; stir 2 min. until completely dissolved. Stir in cold water. Cool 15 min.
- Pour raspberry gelatin gently over clear gelatine layer in dish. Refrigerate 1 hour or until firm. Cut into 36 squares; top with raspberries just before serving.

- Pour into 13x9-inch pan.
- Freeze 3 hours or until firm. Remove gelatin mixture from freezer; let stand at room temperature 10 min. to soften slightly.
- Spoon gelatin mixture into large bowl; beat with mixer on high speed until smooth.
- Spoon into dessert dishes. Serve immediately.

This "recipe" is for my personal favorite flavors, but there are so many different delicious combinations it's mind boggling. My suitemate says this has a very "intense" flavor -- personally, I think it's perfect.

SPARKLING BERRY JELLO SALAD
I make this Jello often in the spring/summer. It looks really nice in a mold and sets up great. The fresh berries in the center of the mold makes a beautiful presentation.

Steps:
- Stir boiling cranberry juice (heat in pan) into gelatin in large bowl at least 2 minutes (until well dissolved).
- Stir in club soda, liqueur, and lemon juice.
- Refrigerate about 1-1/2 hours or until slightly thickened (consistency of unbeaten egg whites-I set my bowl inside a larger bowl of ice water and it takes about 20 minutes).
- Stir in 2 cups of the berries.
- Spoon into 5-cup mold.
- Refrigerate about 4 hours or until firm.
- Unmold and top with remaining 1 cup of berries in center.
SPARKLING GELATIN SALAD
Steps:
- In a small saucepan, sprinkle gelatin over 1/2 cup juice; let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved. Stir in the wine, sugar and remaining juice. Cook and stir until sugar is dissolved., Pour into a 1-1/2-qt. serving bowl. Refrigerate until set but not firm, about 1 hour. Fold in the oranges, grapes and raspberries. Refrigerate until firm.

SPARKLING JELLO GULPS
Delightful treat we like to have on special occasions, like New Year's Eve. I saw this a couple of years ago on Good Morning America -- Recipe Courtesy of Rocco DiSpirito. I can't ever find Cherry Pop Rocks here in California -- perhaps you will have more luck where you are! Other flavors of pop rocks would be fine, I'm sure -- but in any case are not essential to the recipe. :) Preparation time does not include the time it would take for the Jello to firm up in the refrigerator.

Steps:
- Prepare the Jello according to package directions, stirring 2 cups boiling water into gelatin in large bowl for at least 2 minutes until completely dissolved, and then stirring in 2 cups of cold water-- adding baking soda.
- Pour into a 9" square baking dish and refrigerate.
- When firm, cut the Jello into 3/4" cubes, and put in the bottom of tall, decorative glasses.
- Add a small scoop of sherbet to each one.
- Top each one off with one part sparkling cider and one part ginger ale.
- Sprinkle cherry pop rocks on the rim of the glass and serve immediately.
- Enjoy!

- Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Refrigerate 15 minutes. Gently stir in ginger ale. Refrigerate about 30 minutes or until slightly thickened (consistency of unbeaten egg whites). Gently stir for 15 seconds. Stir in grapes and oranges.
- Pour into 6-cup mold sprayed with cooking spray. Cover.
- Refrigerate 4 hours or until firm. Unmold. Store leftover gelatin in refrigerator.
