These yummy cinnamon apple chips will disappear almost as quickly as you make them! They're perfect for healthy snacks and easy to take on the road. The secret is baking at a very low temperature for a long time, which dehydrates the apples.

- Arrange apples slices on a metal baking sheet.
- Mix sugar and cinnamon together in a bowl; sprinkle over apple slices.
- Bake in the preheated until apples are dried and edges curl up, 45 minutes to 1 hour. Transfer apple chips, using a metal spatula, to a wire rack until cooled and crispy.

APPLE CHIPS
The simple syrup really makes a difference with these apple chips. It makes them shiny and more crispy. You can reuse the syrup to sweeten tea or make another batch of apple chips.

- In a small pot, combine the water and sugar and bring to a gentle boil over medium heat. Set aside to cool.
- Place the apples on a flat surface. Using a mandoline or sharp knife, cut each one, placing the core end of the apple in front of the blade, into rounds as thin as you can manage. Remove any seeds as you cut and sprinkle them with lemon juice. Submerge the apple slices in the syrup and allow them to "rest" for a few hours or, even better, overnight.
- Preheat the oven to 200 degrees F.
- Remove some of the apples from the syrup and lightly dry them on a kitchen towel. Place them in a single layer on a baking sheet with parchment or on a tray fitted with a baking rack. Note: you may want to place something heavy, like a metal spoon, at each end of the paper to prevent the paper from folding over as the chips bake. Bake in the oven until crispy, about 1 hour.
BAKED APPLE CHIPS

- Preheat the oven to 200 degrees F. Line 4 baking sheets with parchment paper.
- Use an apple corer to remove the seeds and cores of the apples. Trim a small sliver off the bottom of each apple to create a flat bottom, so that they can't roll.
- Cut the apples into thin slices, about 1/8-inch thick. Place the apple slices in a large mixing bowl. Pour in the lemon juice and toss gently to combine.
- Combine the sugar and cinnamon with a pinch of salt in a small mixing bowl. Sprinkle over the apples and toss gently to evenly coat all of the slices.
- Spread the apples in an even layer over the prepared baking sheets, being sure that the slices don't touch.
- Bake until the edges curl and the apples become crispy, about 2 hours. Lift the chips off the parchment with an offset spatula and store in an airtight container.
APPLE CHIPS WITH SWEET YOGURT DIP

- For the chips: Place 1 rack at the top and 1 at the bottom position and preheat the oven to 300 degrees F. Line 2 large heavy baking sheets with parchment paper. Lightly coat the parchment with nonstick spray.
- For the topping: In a small bowl, stir the sugar, cinnamon and salt until blended.
- For the apple chips: Stand each apple upright. Cut 1/4 inch vertically off the right and left sides of each apple. Set the mandoline or v-slicer for cutting 1/16-inch-thick slices. Place 1 apple, cut-side down, on the slicer. Cut slices until the apple core is exposed. Turn the apple over and cut slices off the remaining side until the core is exposed. Arrange the apple slices in a single layer on one of the baking sheets. Repeat with the second apple.
- Using your fingertips, sprinkle the apple slices generously with the topping. Bake until the edges curl and the chips are golden and feel crisp, 40 to 45 minutes. Pull the parchment with the apples onto the work surface and cool completely, 20 to 30 minutes (the chips will crisp more as they cool).
- For the dip: In a medium bowl, stir the yogurt, maple syrup, vanilla and salt until blended. Cover and chill until ready to serve.
- Serve the dip alongside the apple chips.

- Heat the oven to 160C/ 140C fan/ gas mark 3. Core the apple and slice through the equator into very thin slices 1 - 2mm thick. Dust with cinnamon and lay flat on a baking sheet lined with parchment paper.
- Cook for 45 mins - 1 hour, turning halfway through and removing any crisps that have turned brown. Continue cooking until the apples have dried out and are light golden. Cool, store in an airtight container and enjoy as a snack.

- Preheat the oven to 375 degrees F (190 degrees C). Grease a 10x15 inch jellyroll pan or cookie sheet.
- In a large bowl, stir together the salt and 4 cups flour. Cut in the shortening until the mixture resembles coarse crumbs. Use a fork to stir in the egg yolks and milk just until dough comes together. On a lightly floured surface, roll out half of the dough to 1/8 inch thickness or until big enough to cover the bottom of the jellyroll pan with a little hanging over the sides.
- Arrange the slices of apple to evenly cover the bottom crust. In a small bowl, stir together the 2 tablespoons of flour with the sugar and cinnamon. Sprinkle the sugar mixture over the apple slices. Roll out the remaining dough to cover the apple layer and pinch to seal to the bottom crust. Trim off excess crust and brush with egg white.
- Bake for 40 to 45 minutes in the preheated oven, until apples are tender and crust is brown. If the crust begins to brown too much before the apples are done, cover with foil and continue baking. Cool before cutting into squares.

Spicy, Tart, and Sweet Oven Dried Apples. I like Granny Smiths but use what firm apples you prefer. I made this with candies ginger just pulse in the grinder along with the cardamom. I like the uneven amounts of spices on each slice. This way those that like it can pick the more spiced ones.

- Put cardamon in a coffee grinder (Used for spices not coffee. Grind till fine add rest of the sugar and spices give a couple of whirls to mix into a fine powder).
- Lay parchment paper on 2 cookie sheet pans.
- In a storage bag add spices and apples toss gently to coat, shaking excess spices off place on parchment in a single layer. You can sprinkle a little extra sugar on the slices this is optional.
- Dry in a 250 degree oven 1 to 3 hours depending on how juicy the apples are. Turning after 1 hour.
- They come out crisp,sweet and tart.
- Store in an air tight container if for some reason there is any left over.
