TACO FRITO SALAD
This salad is a must have at our family get togethers and it is a great weeknight meal for a hot summer night too! Hope you enjoy.

Steps:
- Brown hamburger meat in frying pan. Drain off fat and return to pan with taco seasoning and water. Simmer meat an additional 3-5 minutes until most of water is absorbed. Allow meat to cool for about 10 minutes.
- In a separate bowl, mix lettuce, tomatoes, onion, avocados, beans, corn, cheese, and cooled taco meat.
- Mix as much dressing and Fritos as you desire when you are ready to serve salad.
- If you mix them in too early, the salad and Fritos will be soggy.
TWISTED TACO SALAD WITH FRITOS
This is a tweaked recipe from a family friend. It's awesome and makes a huge serving; perfect for potlucks. If not eating immediately, I put the cheese, onion and lettuce in a ziploc bag, the chopped tomatoes in a separate bag and keep the meat warm in a carrier [I like to keep it warm], then I assemble just before time to eat..mixing together and adding chips and dressing. I HATE soggy Dorito taco salad, so this fits the bill. My most requested "bring a dish" recipe!

- Brown ground beef in skillet and drain. Season with garlic salt to taste.
- Add chopped lettuce, chopped and seeded tomatoes, cheese and onion to big bowl.
- If eating immediately, add warm ground beef to salad mixture.
- Just before serviing mix in Fritos and Western Salad Dressing. Be sure to mix carefully and don't dump the entire bottle of dressing in at once. You want to lightly coat with the dressing, not drown the salad in it. I always leave a little on the side if someone wants more.

DORITOS® TACO SALAD
I love this dish! It reminds me of potlucks and summertime. It's full of every texture--warm, cool, crisp, soft, crunchy. - Heat a large nonstick skillet over medium to medium-high heat and saute ground beef, diced onion, salt, and pepper together until ground beef is browned and no longer pink and onions are tender, about 10 minutes. Add 1/4 cup water and taco seasoning to the meat. Stir to coat and allow to simmer for 1 minute to thicken. Set aside to cool while you prep the salad.
- Add kidney beans, crushed chips, lettuce, tomatoes, Cheddar cheese, and dressing to a large bowl. Top with meat mixture and toss gently to evenly combine. Serve immediately.

I got this recipe years ago from our church bulletin. It's a great summer barbecue salad or an excellent side dish for any occasion. Very quick and easy! Cooking time is marinating time.

- Drain Ranch Style Beans well and pour in large mixing bowl.
- Add diced onion, tomatoes, bell pepper, cheese and Catalina, mix well.
- Let mixture marinate in refrigerator for several hours. When you are ready to serve, add Fritos and mix well.

My favorite taco salad recipe in the world. After my grandma passed I thought I had lost the recipe forever but found it in an old church congregation cookbook that was published in 1980 and it had her recipe in it! I hope you enjoy it as much as I do.

- In a large skillet, over medium-high heat cook ground beef with onion in a few drizzles of olive oil. Cook for 10 minutes or until no pink remains. Drain fat from pan. Add taco seasoning and garlic, simmer for another 5-8 minutes. Taste and adjust salt, if needed. Set aside.
- In a large bowl. Toss together lettuce, beans, tomatoes, onion, pepper, olives and cheese. You may reserve some cheese for the top, if desired. Add beef and 1/2 cup dressing. Mix well.
- Toss 1/2 fritos and avocado into salad. Serve immediately with remaining dressing and fritos on the side garnished with green onion, if desired. (If making in advance, toss with dressing, fritos and diced avocado just before serving.)
