Spicy Chicken Wings image

Steps:

  • Rinse the chicken wings under cold running water, then drain and blot dry completely with paper towels. Place the wings in a large bowl and sprinkle with the garlic salt, pepper, cayenne, and oregano. Season just 1 side of the wings for mild, or for hotter wings, turn the wings to coat the other side with seasonings and then cover and marinate in the refrigerator for 24 hours.
  • Preheat a grill to medium-high.
  • Grill chicken wings, turning once, until the juices run clear when pierced with a fork. Serve immediately with a side of Blue Cheese Dressing.
  • Blend all ingredients together in a food processor. Transfer to a bowl, cover, and refrigerate until ready to serve.

Steps:

  • Whisk together the garlic, green onion, sugar, five-spice powder, fish sauce, soy sauce, chili sauce, and salt in a bowl. Arrange the chicken pieces in a shallow, non-metallic dish. Spoon the sauce mixture over the chicken to evenly coat. Cover the dish with plastic wrap and refrigerate 8 hours or overnight.
  • Preheat oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet.
  • Arrange the marinated chicken on the prepared baking sheet.
  • Bake in the preheated oven until crispy, about 45 minutes. Serve with lime wedges on the side.

Hot, crispy wings dipped in a cold, creamy sauce provide a great contrast in texture, flavor, and temperature. This New Orleans-inspired version of Buffalo-spiced chicken wings uses a technique that does not include a deep fryer so it's easier and less messy. By using baking powder in the spice rub, these wings stay super crispy!

Cajun Spice Chicken Wings with Remoulade Sauce image

Steps:

  • Prepare spice rub by combining baking powder, salt, garlic powder, and onion powder, cumin, paprika, cayenne, black pepper, oregano, and thyme in a small bowl. Mix until thoroughly combined.
  • Place wings in a large bowl and toss in 3 tablespoons spice rub. Toss wings with tongs until thoroughly and evenly coated. Transfer to a baking rack set over a parchment-lined sheet pan. Sprinkle a little more spice rub over each wing and let sit for 15 minutes.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Prepare remoulade sauce by crushing capers in a mixing bowl with the back of a fork. Add mayonnaise, Dijon, Worcestershire sauce, hot sauce, cayenne, paprika, garlic, green onion, parsley, and lemon juice; whisk to combine. Taste and add salt if needed. Cover and refrigerate until needed.
  • Bake wings in the center of the preheated oven for 20 minutes. Flip and continue to bake until beautifully browned, no longer pink at the bone, and the juices run clear, 20 to 25 minutes longer. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • Serve with remoulade sauce.

Steps:

  • Separate the chicken wings at the joints. Reserve the wing tips for another use, like making stock. Place the remaining 36 pieces in a glass or ceramic bowl.
  • Chop the onion, garlic and scallions. Place in a blender or food processor with the remaining ingredients and process to make a thick sauce. Pour this sauce over the chicken wings, cover and allow to marinate in the refrigerator at least four hours or overnight.
  • Preheat a broiler. Drain the chicken wings and place them on a broiling pan. Pour any remaining marinade into a saucepan and bring it to a simmer.
  • Broil the chicken wings until they are well glazed and cooked through, about 20 minutes. Turn them once during broiling and baste them with the reheated marinade. Serve hot or warm.

  • Mix oregano, granulated garlic, paprika, sugar, 4 tsp. salt, and ½ tsp. MSG in a small bowl. Arrange chicken wings on a foil-lined rimmed baking sheet. Season all over with spice mix. Let sit at room temperature 30 minutes, or cover and chill up to 2 days.
  • Place racks in center and upper third of oven; preheat to 375°. Drizzle wings with oil and toss to coat. Bake on center rack, turning with tongs halfway through, until cooked through and skin is golden brown, 30–35 minutes.
  • Remove from oven. Heat broiler. Broil wings on upper rack, turning every 2–3 minutes, until skin is deeply browned and starting to char at the edges, 5–7 minutes (watch them closely).
  • Transfer wings to a platter, season with salt and a little more MSG. Top with herbs and lime and cucumber wedges.

  • Add the Paprika, cayenne pepper, garlic powder, ginger powder, sriracha sauce, salt, and oil olive in a bowl. Mix till well combined.
  • Wash the chicken and pat it dry with a kitchen towel/paper towel. Add in the marinade to the chicken and mix till it's well rubbed all over the chicken and all parts are covered in the marinade. Cover the bowl and put in the fridge to marinate for 30 minutes to 2 hours.
  • Bring the chicken out of the fridge, line a baking tray with baking paper, and arrange the wings on it in a single layer. Put the tray in the middle rack on the oven. Bake at a temperature of 175 C for 10 minutes then increase to 200C /400F and bake for another 15 minutes or till done.
