SPICED POUND CAKE WITH ORANGE RUM SAUCE
Steps:
- Make the Spiced Pound Cake: Preheat the oven to 325 degrees F.
- Prepare a bundt pan with an even coating of shortening and flour. Place chopped pecans evenly in the bottom of the bundt pan.
- In the bowl of a mixer, cream butter and sugars together, beating until fluffy, about 3 minutes. Add eggs, 1 at a time, beating well after each addition. Add vanilla, cinnamon, allspice, cloves, and ginger. Sift together flour, baking soda, and salt; add flour mixture to egg mixture alternating the buttermilk, and beginning and ending with the flour. Pour into prepared bundt pan and bake for 1 hour and 15 minutes. Cool in the pan for 15 minutes, turn out onto wire rack to cool partially, and then place on a cake plate.
- Make the Orange Rum Glaze: Stir together the sugar, cornstarch, and salt in small saucepan. Add juice and water mixture, zest, and rum. Cook over medium heat until bubbly, stirring constantly. Remove from heat and add butter and vanilla; stir. Pour approximately half of the glaze over the warm cake. Reserve remaining glaze for serving with the cake.
- Make the Chocolate Sauce: Place corn syrup and chocolate in a microwave-safe container. Microwave for 1 minute on high and then stir to melt chocolate. Add butter and vanilla and whisk until chocolate is thoroughly combined. Drizzle over cooled cake and serve.

- Preheat oven to 350degreesF. Lightly coat an angel-food cake pan or fluted tube pan with cooking spray. Set aside.
- In a large mixing bowl, combine cake mix, yogurt, and eggs. Beat with an electric mixer on low speed for 30 seconds. Scrape down sides of bowl; beat for 2 minutes on medium speed. Spoon batter into prepared pan. Bake in preheated oven for 30 to 35 minutes or until cake tester inserted in center comes out clean. Cool cake in pan for 15 minutes. Turn cake out onto a wire rack and cool completely.
- In a small bowl, stir together frosting and the garam masala. Frost cake top with frosting. Sprinkle walnuts over frosting.
SPICED YOGURT POUND CAKE

- Preheat oven to 325°F. Grease and flour 10" Bundt pan. In large bowl, with mixer at medium speed, beat sugar and butter until light and fluffy. Add flour and remaining ingredients at low speed until well mixed, constantly scrapping bowl with rubber spatula. Increase speed to high and beat 4 minutes occasionally scrapping bowl.
- Pour batter into Bundt pan.
- Bake 1 hour or until toothpick comes out clean. Cool cake in pan on wire rack for 10 minutes. After 10 minutes, turn onto rack and cool completely.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch baking pan.
- In a large bowl, cream the butter or margarine with the sugar until light and fluffy.
- Beat in the flour, yogurt, eggs, vanilla, cinnamon, allspice, nutmeg, ground cloves, salt and baking soda. Mix until combined then beat at high speed for 2 minutes.

- Cut each plum half into 3 wedges and set aside. Combine the sugar, cinnamon and other spices in a bowl and set aside.
- Cake:
- Beat the butter, sugar and vanilla until pale and light. Gradually beat in the eggs.
- Combine the flour, salt and baking powder and gently mix into the butter mixture. Don't over beat or the cake will be tough.
- Spread half of the batter in the base of the loaf tin (app. 25cm x 13cm and 7½ cm deep) lined with parchment paper, then scatter over half of the plums. Sprinkle half of the brown sugar mixture over the top. Repeat with the remaining batter, plums and sugar.
- Bake in the oven at 150°C fan for about 1 h 10 minutes or until a skewer inserted into the centre comes out clean. Cover the top loosely with foil if getting too brown. Cool completely before removing from the tin.
- Icing:.
- Combine icing sugar with enough lemon juice to make a smooth, thick but pourable icing.
- Serve dusted with icing sugar or drizzle with lemon icing.

- Preheat your oven on 190c. Line and butter a 20cm springform cake tin.
- Weigh your eggs and weigh the same amount of butter, sugar and flour.
- Beat your butter and sugar together, until pale and creamy.
- Beat your eggs, then add half of the eggs to the butter and sugar, with a tbsp of flour and stir.
- Stir in the rest of your eggs. Sieve in your flour and fold the mixture with a metal spoon.
- Now add your milk, lemon juice and yoghurt and spice then stir. Set aside the mixture.
- Peel, core your apples and slice your apples. Then put them in a pan with the brown sugar and a bit of water. Cook the apples until tender.
- Once the apples are tender, cover the base of your cake tin with them, leaving small gaps around the edge of the tin and between the apple slices.
- Put the cake mixture into your tin and bake for 30- 35 minutes.
