SPICY ASIAN GROUND TURKEY WITH CABBAGE

I've jotted down the basic recipe to a meal we enjoy. I usually adjust it to taste as I cook. I eat this in lettuce cups but I also serve it over brown rice or with noodles. I adapted the dipping sauce from another recipe because it like so much.

Spicy Asian Ground Turkey With Cabbage image

Steps:

  • Heat 1 tablespoon vegetable oil in a wok or large pan. When hot add ground turkey and stir fry it for 5 minutes. Add Hoisin sauce, hot chili sauce and 1 tablespoon of soy sauce. Continue to stir fry until almost cooked through. (I use the pampered chef tool to break up the meat into small pieces).
  • In a bowl, combine the scallions, half of the ginger, cabbage, half of the chili pepper, the garlic, the 3 tablespoons of soy sauce and the lime zest.
  • Add vegetable bowl mixture to wok and continue to stir fry until cooked but still slightly crisp.
  • While the turkey and vegetables cook, make the dipping sauce. In a bowl, combine the remaining ginger and chili pepper, the 1/3 cup of soy sauce, the lime juice, the sesame oil, the honey and a splash of water. Taste and adjust the seasoning; if it's too salty, add another drizzle of honey.
  • Before serving the meat stir in the cilantro leaves.
  • Garnish with extra cilantro leaves and serve with the spicy lime dipping sauce.
  • Wrap in lettuce cups or serve over noodles or rice.

4 scallions, coarsely chopped (green and white parts)

1 cup green cabbage (thinly sliced)

ONE-DISH SPICY GROUND TURKEY AND SQUASH

This spicy dish is quick and easy to prepare and stores well in the fridge--it should also freeze and can well. I recommend serving this over rice for a super healthy meal, but it would be equally great over white rice or pasta. This is an excellent use for fresh squash or zucchini in season.

  • Brown ground turkey in a large skillet or wok, adding cumin, chili powder, black pepper (to taste), and diced chipotles while cooking. Add chopped squash and saute on medium heat for approximately 5 minutes, until squash is slightly tender. Add mushrooms and diced tomatoes/chilies, stir, and continue to cook for 2-3 minutes. Steps:

  • Make the marinade by combining the Worcestershire sauce, crab boil, apple cider, honey, beer, salt, allspice, Creole seasoning, cayenne, olive oil, and minced garlic in a blender and process until very smooth, about 5 minutes. Fill a large syringe* and inject turkey in the breast and thigh area, as well as the back, wings, and legs, with at least 2/3 of the marinade. You will have to fill the syringe numerous times.
  • Preheat the oven to 420 degrees F and line a large roasting pan with aluminum foil.
  • Season the injected turkey well both inside and out with the kosher salt and black pepper. Place the turkey in a large roasting pan lined with aluminum foil and pour the remaining marinade all over the turkey. Bake the turkey uncovered for 30 minutes. I put this together for a light meal when I noticed that we had too big a collection of half-bags of frozen vegetables and little containers of leftover cooked veggies. The kind and quantity of the vegetables can vary according to what you have -- you just need to end up with between 2 and 3 lbs. Some people prefer a more generous amount of thickened sauce on their stir-fry dishes. With a diabetic in the house, I skip that part but I've included the directions if you want it.

Sweet and Spicy Ground Turkey Stir-Fry image

Steps:

  • Brown ground turkey in a little oil over medium-high heat. Drain any excess grease leaving just enough to accomplish the stir-frying process.
  • Add garlic, onion, coriander, and a tbs of the soy sauce. Stir well.
  • Begin adding the vegetables starting with long-cooking veggies like carrots and broccoli (especially if broccoli is still frozen), and working towards the quick-cooking greens but not adding those just yet.
  • Just before adding the greens -- right after adding the beans or snap peas -- add the remaining soy sauce, the sugar, the sherry, and the red pepper flakes. Stir well so that sugar dissolves and pepper flakes are well distributed.
  • Add the greens and complete the cooking.
  • Make the optional sauce if desired by whisking the cornstarch into the chicken stock. Pour into pan just before the greens are done and cook, stirring constantly, until the sauce has simmered for about one minute.
  • Serve over rice, ramen noodle, or other preferred, Asian starch.
