SPICY CHICKEN BOW TIE PASTA IN CREAM SAUCE
This recipe is one that I came up with one day while trying to make something different. All of the alfredo-type sauces that I've tasted are too thick, heavy and rich and even with all of that....they never have enough flavor. This dish is something you can make after coming home tired from work because it's easy, tastes amazing and you can eyeball the ingredients according to how much less or more you want to make or how thick you want your sauce to be.

Steps:
- Boil water for pasta and salt water prior to adding pasta.
- Trim any fat off the chicken and butterfly the breasts. Season chicken with salt and pepper.
- Bring chicken broth to a boil and add chicken and red pepper flakes on med/high heat until cooked. You'll notice the broth might thicken somewhat. This okay because you'll use this as the base for your sauce.
- Remove chicken once all pink is gone and chicken is cooked though. Hold with tongs and shread chicken with a fork. Set aside.
- Lower heat to medium and add in two cloves of garlic and saute for only about 1 minute.
- Add cream to broth and garlic.
- Roll up basil leaves and chop into thin ribbons. Add this to cream mixture.
- Add chicken and cooked pasta into sauce mixture.
- Add parmesan cheese and stir until well blended.
- Leave to thicken slightly on medium heat for about 5-10 minutes.
- Add pepperonchinis.(The yellow picked peppers mentioned above. These are on the pickle isle of your grocery store).
- The sauce will not be as thick as alfredo sauce gets, but will be even better! Just serve with warm French or Italian bread!

- Combine 1 cup sugar, the vanilla pod, cinnamon, allspice and nutmeg in a large bowl. Work the vanilla seeds into the mixture with your fingers until incorporated; set aside.
- Beat the remaining 1/4 cup sugar, the egg yolks, bourbon and vanilla extract in a medium bowl with a mixer on medium-high speed until light and creamy, about 2 minutes. Beat in the flour and salt in 2 batches, alternating with the sour cream, until just combined. Continue beating until the dough starts to pull away from the side of the bowl, about 3 minutes (it will be sticky). Turn out onto a floured surface and knead until smooth and elastic, about 5 minutes. Cover with plastic wrap; let sit at room temperature 30 minutes.
- Line a baking sheet with parchment paper. Cut the dough in half; roll out each half into a thin 9-inch square on a floured surface. Cut each square into 1-by-3-inch strips. Cut a 1-inch slit lengthwise in the center of each strip; insert one end of the strip into the opening, pull through and twist to make a bow tie shape. Transfer to the prepared baking sheet.
- Set a rack on another baking sheet. Heat 2 inches vegetable oil in a large pot until a deep-fry thermometer registers 350 degrees F. Working in batches of 6 to 8, fry the cookies, turning once, until golden brown and crisp, 3 to 4 minutes. Transfer to the rack with a slotted spoon; toss in the spiced sugar while still warm.

This is real comfort food and a bit healthy!! A Wolfgang Puck recipe and it is a complete meal or side dish to fee more people. This is about three or four different recipes if done "The Chef Way" or my version. Wine Pairing: Look for the freshness of a Sauvignon Blanc from Sancere or New Zealand to accompany this pasta. Goldwater's Dog Point or Villa Maria are both excellent and affordable wines that are perfect accompaniments. :)

- Bring a large stockpot of water to a boil.
- In a large skillet or saute pan, heat the flavored oil.
- Add the roasted garlic, butter, tomatoes, and stock.
- Season with the oregano, thyme, 2 tablespoons of the parsley, salt, and pepper, and reduce until slightly thickened.
- Meanwhile, blanch all the vegetables, each type individually, in simmering salted water, about 1 minute.
- Refresh in cold water, drain well, and set aside.
- When the sauce has been reduced, add the vegetables and stir to heat through.
- Add salt to the pot of boiling water and cook the bow ties until they are al dente, following the directions on the package.
- Drain the pasta and stir it into the sauce, coating well.
- Remove the skillet from the heat and stir in the grated cheese.
- To serve, divide the pasta and vegetables among 4 large warm plates or bowls.
- Sprinkle each serving with some of the remaining chopped parsley and serve immediately.
- Additional Parmesan cheese can be grated onto the dish after serving.

- Heat large saucepan to medium heat, add olive oil. Season chicken breast with salt and pepper on one side, and add to pan once it is fully heated with seasoned side down. Cook 4-5 minutes on seasoned side, top unseasoned side with salt and pepper, and flip over. Cook another 4-5 minutes on this side, and then remove from pan and place back onto (clean) cutting board.
