- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Mix chili powder, cumin, paprika, garlic powder, onion powder, sea salt, cornstarch, and cayenne pepper together in a small bowl.
- Cut potatoes in half lengthwise, then cut each half into 3 wedges. Place in a large bowl and drizzle with olive oil; toss to coat. Add spice mixture and stir with a rubber spatula or your hands until potatoes are completely coated. Transfer to the prepared baking sheet.

- Heat the oven to 220C/200C fan/gas 7. Cut off and discard the ends of the potatoes, halve, then cut each half into long wedges.

ROASTED SWEET POTATO WEDGES

- Preheat the oven to 375 degrees F.
- Wash the yams and slice into 1/4-inch-thick wedges. Place the yams in a large mixing bowl and coat with the olive oil. Sprinkle with salt and pepper and spread out on a baking sheet. Roast the yams until tender to the touch, about 30 minutes.

- Place 2 large sweet potatoes in a pot and cover with cold water. Bring to a simmer over medium-high heat and cook until easily pierced with a knife, 25 to 35 minutes. Drain and let cool slightly, then cut into 1/2-inch-thick wedges.

Premium Number One Beauregards are a popular variety of sweet potato grown in Vardaman, Mississippi. There are ninety sweet-potato farms within forty miles of this town, which even boasts a Sweet Potato Street running right into Main Street. With twenty thousand acres under cultivation, sweet potatoes have to be the state's largest vegetable crop. Here a tart-sweet treatment and a dusting of crystalline flakes of salt elevate the down-home goodness of my favorite Beauregards.

- Heat the oven to 400°F.
- In a large saucepan set over high heat, heat the vinegar, sugar, butter, salt, red pepper flakes, and 2 tablespoons water to boiling. Remove the pan from the heat, add the potato wedges, and toss to coat with the mixture.
- Spread the potato wedges evenly on a foil-lined rimmed baking sheet. Roast, turning the wedges occasionally, for 45 minutes or until the potatoes are very tender and the glaze thickens. Remove from the oven and sprinkle the potatoes with additional salt, if desired. Let cool slightly before serving.
- In 1987, Civil War buff and sweet-potato advocate Larry Rolston named this variety for Louisiana Confederate general P. G. T. Beauregard. Rolston's development of a high-yield and disease-resistant strain played a large role in revitalizing the sweet-potato industry.
- After harvest, sweet potatoes are allotted a curing time to allow any nicks to heal before shipping to market. Starch is also then converted to sugar, improving the flavor. The curing time can be as short as ten days in warm temperatures or as long as three weeks if it is cool.

- Heat the oil in a frying pan and fry the onion for about 5 mins or until soft. Leave to cool slightly. When cool, put the onion in a large bowl with the mince, egg, bashed crackers, chilli, garlic, ketchup and brown sauce, and mix well to combine. Divide the mince into 6, roll into balls and flatten each into a nice fat burger.
- Put the flour on a plate, dab each burger to the flour on both sides, then transfer to a baking tray. Wrap with cling film and pop in the fridge for a couple of hours.
- Heat oven to 200C/180C fan/gas 6. To make the wedges, put the sweet potato on a baking tray and drizzle with olive oil. Sprinkle with paprika, season, then give them a good shake or shuffle around with your hands to make sure they're well coated. Roast for 30-40 mins depending on how crisp you like them. Make sure you give them a good shake a couple of times to ensure they cook evenly.
- When the wedges have been cooking for 10 mins, drizzle the burgers with a little olive oil and put them in the oven to cook with the wedges for the remaining 20-30 mins, flipping them halfway. 5 Serve the burgers in the rolls with your choice of toppings, and a good helping of wedges on the side.
