SPICY CHEESE LOAF (ABM)

This is a recipe from my Panasonic bread maker's instruction book. We have made it several times and love it! My husband and I agree that it should be called Savory Cheese Loaf because there really isn't much spice to it. This makes a small loaf so feel free to double it for those larger machines. Cooking time includes rising, kneading, etc. in the machine.

Steps:

  • Place ingredients in bread maker.
  • Bake in your machine's "Basic" bake mode.

2 1/4 cups bread flour
2 teaspoons sugar
1 tablespoon dry milk
1 teaspoon salt
1 tablespoon butter
1 teaspoon dry mustard
1/4 teaspoon black pepper
1/2 cup shredded cheese
1 tablespoon Worcestershire sauce
7/8 cup water
1 teaspoon dry yeast

Cheesy Gluten-Free Loaf (Abm) image

Steps:

  • Add milk, olive oil, eggs, honey and cider vinegar to bread pan.
  • Mix all remaining ingredients except for yeast in a large bowl to incorporate, then add to the bread pan.
  • Add the yeast. Set to the gluten-free cycle or whichever cycle in your machine that is closest to the time shown above.
  • While bread is kneading, scrape down sides with a rubber spatula to make sure all ingredients are incorporated.
  • After cycle is completed, remove and allow bread to cool completely before slicing, for best results.

SPICY MONTEREY JACK CHEESE LOGS

A pair of these savory spreads makes a great holiday gift. I made these last Christmas as an appetizer before our big dinner, and I watched them disappear! You can make ahead and wrap each log in heavy-duty plastic wrap and freeze. Thaw in the refrigerator overnight. From Christmas with Southern Living 2004, recipe submitted by Charles Flournoy of Dallas, TX. Prep time is cooking time.

Spicy Monterey Jack Cheese Logs image

Steps:

  • Combine first 3 ingredients in a large bowl, blend well. Stir in shredded cheeses. Divide cheese mixture in half, and shape each portion into an 8-inch log.
  • Combine pecans and chopped parsley, roll logs in nut mixture. Cover and chill 8 hours (I wrapped in wax paper). Let stand 1 hour before serving.
  • Serve with a variety of crackers. Garnish if desired.

Cheesy Jalapeno Bread (Abm) image

Steps:

  • Place yeast, flour, salt, sugar, oil, water and jalapeños in bread machine according to manufacturer's directions.
  • Toward end of mixing during final proofing cycle, add cheese. (This method yields bread with cheese pieces throughout. If cheese is added earlier, it blends completely into the bread.)
  • Process on regular cycle.

So, I wanted to combine my favourite other bread, multi-grain, with this recipe, as well as tweak it a bit, because I and several reviewers found it not quite hot enough - almost as if the finely chopped jalapenos were lost in the loaf! Cheesy & Seedy Jalapeno Bread (Abm) image

Steps:

  • Place yeast, flour, seeds, oatmeal, salt, sugar, oil, and water in bread machine according to manufacturer's directions.
  • When cycle is complete, remove dough, and knread 1 cup cheese and jalapenos (well drained and dried) into dough. I make the process easier by taking chunks of the dough and placing them into a bowl, a couple at a time, topping with cheese and jalapenos, and repeating until all dough, cheese, and jalapenos are gone - and then gently kneading.
  • Form into a loaf, and place into a lined 9x5 bread pan (I line mine with parchment paper.) Alternatively, you could grease and flour the pan - just be aware that the cheese can stick really well, so it's best to line the pan! Top with shredded cheddar and additional grains/oatmeal.
  • Allow loaf to rise until doubled, approximately 45 minutes. Set oven to 375°F When loaf is doubled, bake for 35-45 minutes, until browned and until the loaf sounds hollow when you knock on the bottom of it.

2 1/2 teaspoons bread machine yeast or 2 1/2 teaspoons fast rising yeast
3 cups bread flour
2 tablespoons poppy seeds (plus 1 tsp for topping, if desired)

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Grease a loaf pan.
  • Stir together flour, baking powder, salt, and cheese in a large bowl. Mix in milk and melted butter. Stir to form a soft dough. Spoon dough into prepared pan.
  • Bake in preheated oven, until a toothpick inserted in the center of the loaf comes out clean, about 34 to 40 minutes. Remove from pan to cool.

Steps:

  • Soak raisins in coffee until plump. Do not drain.
  • Cream together the shortening, sugar and eggs. Blend in molasses and vanilla.
  • In a large bowl mix together the cinnamon, nutmeg, cloves, ginger, flour, baking soda, and salt. Make a well in the center of the bowl.
  • Add the liquid ingredients to the well in the dry ingredients. Stir in coffee with raisins and nuts. Pour batter into a greased 9x5 inch loaf pan.
  • Bake in a preheated 350 degree F(175 degrees C) oven for one hour.

This is based on the recipe from my Cuisinart Recipe Booklet that came with my convection bread maker. This large-sized makes a 2 pound loaf. The medium-sized (1 1/2 pound loaf) version is posted as recipe #277392. I'm not sure how this will turn out in a non-convection bread maker. Posting for a friend who's doctor has him trying a gluten-free diet. "Garfava" flour is garbanzo and fava flour -- I use Bob's Red Mill brand. I'll try it in my non-convection Zojirushi bread machine and post the results. Cook time is all bread machine time.

Cheesy Gluten-Free Loaf - Large (Abm) image

Steps:

  • Place the kneading paddle in the bread pan.
  • Add the milk, oil, eggs, honey and cider vinegar to the bread pan.
  • In a separate mixing bowl, stir together all remaining ingredients except the yeast. Add this well-incorporated mixture to the bread pan.
  • Add the yeast to the bread pan last.
  • Place the bread pan in the Cuisinart Convection Bread Maker.
  • Press Menu and select Gluten Free.
  • Press Crust and select Medium (or another setting of your choice).
  • Press Loaf and select dough size.
  • Press Start to mix, knead, rise and bake.
  • While the dough is kneading, scrape the sides of the bread pan with a rubber spatula for best mixing results.

  • Make the Bread: In the bowl of a stand mixer, whisk together the flour, sugar, yeast, red pepper flakes and salt.
