SPICY OVEN-ROASTED PLUMS

Several years ago I was looking for a recipe to take advantage of our bumper crop of plums, and came across a recipe similar to this. After tweaking a bit, I have come up with a very versatile version that my family and friends love. Season with ground white pepper and use it as a side dish for pork or chicken. Sprinkle with toasted almonds and spoon it over vanilla bean ice cream, angel food, or pound cake for dessert! Play around with the spice combination by adding cloves, allspice, or cayenne. Be adventurous!

Spicy Oven-Roasted Plums image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a shallow baking dish with cooking spray.
  • Place the plums, cut-side up, in a single layer in the baking dish.
  • Whisk together the orange juice, brown sugar, cinnamon, nutmeg, cumin, and cardamom in a bowl; drizzle over the plums.
  • Bake in preheated oven for 20 minutes, or until plums are hot and the sauce is bubbly. Top with toasted almonds, if desired (see Cook's Note).

Spicy Roasted Plums (Diabetic) image

Steps:

  • Preheat oven to 450 degrees. Prepare a two-quart baking dish with a good cooking of cooking spray.
  • Prepare plums by slicing in half and removing pits. Place in the baking pan cut side up.
  • Combine juice, 2 tablespoons of brown sugar and the spices in a small bowl. Drizzle spiced juice over the plums.
  • Bake the fruit for 20 minutes or until the plums are tender. Note that actual cooking time will vary according to the ripeness of the fruit.
  • While the fruit is baking, toast the almonds lightly in a dry non-stick skillet. Just a minute or so until the nuts just begin to release their aroma and take on a bit of color.
  • In a small bowl combine the sour cream with the last tablespoon of brown sugar.
  • Place plum halves in a serving bowl. Dot with sour cream and sprinkle of almonds.

Roasted Plums With Spices image

Steps:

  • Halve and stone the Plums. Place them cut side down in an ovenproof dish so that they fit fairly snuggly. Pour over enough Orange Juice to come half way up the plums in the dish. Sprinkle over the cloves, Cinnamon and a generous grating of fresh Nutmeg. Bake at 180 for 20 minutes until the Plums are tender,and serve with some of the syrupy cooking juices spooned over the top. In winter serve hot with fresh cream, in summer serve cold with a scoop of vanilla ice cream.

Crunchy spiced plums image

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Mix the sugar with 2 tbsp water in a baking dish, add the star anise, then pop in the plums, cut-side down. They should fit quite snugly. Dot with the butter. Roast for about 5 mins until the plums are starting to soften on the bottom, then turn them over. Roast for another 5 mins or until tender - this will depend on how ripe your fruit is.
  • Roughly crush the Hobnobs, then spoon a little on top of each plum half. Return to the oven for a few mins more until the biscuit topping takes on a dark gold colour. Serve the plums and their scented, syrupy juices with custard or ice cream.

Steps:

  • Coarsely chop 2 plums; place in a small saucepan. Add water; bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until plums are softened and liquid is almost evaporated. Cool slightly. Transfer to a food processor; add ketchup, chipotle, sugar and oil. Process until pureed.
