SPICY THAI TOFU CURRY

Adapted from Vegetarian Comfort, this pot of veggies and tofu is perfectly spicy without blowing your head off, and creamy without being too rich or heavy.

Spicy Thai Tofu Curry image

Steps:

  • In a large pot, whisk together the coconut cream, coconut water, curry powder, chili powder, minced chili, lemongrass, ginger, garlic and tamari.
  • Bring to a simmer and cook, stirring occasionally, for 10 minutes.
  • Add leeks, yam, potato, squash and tofu. Cook for 5 minutes.
  • Stir in cashew milk and bamboo shoots.
  • Bring to a low boil and cook for 1 hour, stirring occasionally.
  • Add snow peas and green pepper, cook 5 minutes.
  • Remove from heat and stir in baby spinach.
  • Serve over rice.

1 cup unsweetened coconut cream
1 cup coconut water
1 1/2 tablespoons curry powder
1/2 teaspoon kashmiri chili powder or 1/2 teaspoon cayenne
1 serrano peppers or 1 finger chili, minced
1 tablespoon litehouse freeze dried lemongrass
1 teaspoon fresh grated ginger
4 garlic cloves, grated
3 tablespoons tamari
2 baby leeks or 1 large leek, thinly sliced
1 oriental yam, peeled and diced (AKA Japanese Sweet potato, red skin or white flesh)
1 purple sweet potato, peeled and diced
1 delicata squash, peeled, seeded and diced
1 1/2 lbs firm tofu, cut into 1/2-inch cubes
1 cup unsweetened cashew milk
1 (8 ounce) can shredded bamboo shoots
7 ounces snow peas, halved
1 green bell pepper, sliced
10 ounces baby spinach leaves

SPICY THAI PEANUT CHICKEN CURRY

This is a spicy dish, but the heat can be adjusted by reducing the curry and sambal oelek. It is quick and easy and it is so good. Time to cook rice is not included in prep time or cook time. Also...I often use lite coconut milk, it reduces the fat content and is still wonderful, just a little less rich.

Spicy Thai Peanut Chicken Curry image

Steps:

  • In a medium saute pan saute peanut oil, red curry and sambal over med. heat for a few minutes.
  • Add the chicken and cook through.
  • Add coconut milk, fish sauce, brown sugar and peanut butter.
  • Simmer about 10 minutes.
  • Serve over steamed Jasmine rice.
  • Top with fresh lime juice and crushed peanuts.
  • Tip: If you are worried about the heat, just add half of the curry and sambal in the first step. Try it after everything has been added and if it's not spicy enough you can then add more curry. If then you want it more spicy you can add more sambal, the sambal is more spicy than the curry.

Adapted from Fine Cooking. If you like spicy foods, use 2 tsp. curry paste; otherwise, use 1 tsp. curry paste-the curry will still have a kick to it. we like it hot so we use 2. I have reduced the amount of oil by 1/2 of the original recipe.

Spicy Thai Beef Curry image

Steps:

  • Heat the oil in a 10-inch straight-sided sauté pan over medium-high heat. Season the sirloin tips with salt and pepper and sear the meat in batches until nicely browned on two sides, 1 to 2 minutes per side. Transfer to a plate.
  • Reduce the heat to medium. Add the shallots to the pan and cook until just tender and lightly browned, 2 to 4 minute Add the ginger and cook, stirring, until fragrant, about 1 minute Add the curry paste and cook, stirring, about 30 seconds. Stir in 1/4 cup of the broth, scraping up any bits that are stuck to the pan. Add 1/3 cup of the coconut milk, stirring until the curry paste has blended in completely. Stir in the remaining coconut milk and broth. Add the fish sauce.
  • Increase the heat to medium high. Return the beef to the pan (along with any juices), stir, and simmer until the meat is just cooked through, 8 to 12 minute.
  • Take the pan off the heat. Remove the meat and transfer to a cutting board. Stir the sugar snap peas into the sauce and cover the pan. Add the lime zest. If necessary, return the pan to medium heat until the peas are thawed and heated through.
  • Portion the curry into four warm bowls, sprinkle with the cilantro, and serve with the lime wedges.

Spicy Thai Red Beef Curry image

Steps:

  • For the red curry paste: In a food processor, combine the cilantro, oil, ginger, lemongrass, coriander, cumin, shrimp paste, garlic, red chiles, lime leaf, 1 teaspoon salt and 1 teaspoon pepper. Pulse to a consistent paste.
  • For the curry: Heat 2 tablespoons of the oil in a large Dutch oven over medium heat. Add the curry paste and cook, stirring well, until aromatic, about 2 minutes. Transfer to a bowl and set aside. Add the remaining 2 tablespoons oil to the pot and increase the heat to high. Sprinkle the flank steak with a pinch of salt, then add it to the pot; cook for 3 to 4 minutes. Remove the steak and add the onions and peppers; cook until tender, 2 to 3 minutes. Add the coconut milk, bring to a gentle boil, then add the curry paste back to the pot; stir well. Reduce the heat and simmer for about 15 minutes. (If the coconut milk breaks and separates, don't worry: it will come back together to a smooth consistency.) Add the chicken broth and fish sauce, and continue simmering until the sauce has a nice, gravy-like consistency, 12 to 15 minutes. Return the beef to the pot and finish with the cilantro, basil, mint and lime juice. Taste and adjust the seasoning.

  • heat a wok or large pan over med. heat with the coconut milk. whisk in 2 tbs curry paste. cook for a few minutes until hot and combined.
  • add fish sauce, soy sauce, brown sugar, lime juice and water (you can taste before adding the water, you might not want it!). add more curry if you want now.
  • add veggies and bring to a boil. reduce and simmer about 10 mins, or until the tenderness you like.
  • serve over sticky rice.
