PICADILLO (CUBAN BEEF HASH)

I got the original recipe from my father-in-law and made a few changes. It has been one of my family's favorites for over 20 years. Serve over white rice, or complete with a side of French fries. It may not sound fancy but it is definitely delicious!

Picadillo (Cuban Beef Hash) image

Steps:

  • Heat a large pot over medium-high heat until hot. Add beef and garlic; cook and stir until the beef is crumbly and no longer pink. Place cooked beef in a mesh strainer to drain off the grease.
  • Return beef to the pan and add the tomato sauce, green olives, and olive brine. Season with garlic salt, garlic powder, adobo seasoning, and pepper. Bring to a simmer, then reduce heat to medium-low, cover, and simmer for 45 minutes, stirring occasionally.

Mexican Hash image

Steps:

  • Heat a skillet over medium-high heat. Add chorizo, breaking it apart until crumbly. Saute until it starts to brown, about 3 minutes. Add chopped onion and cook, stirring frequently, until onion is translucent, about 3 minutes. Transfer chorizo-onion mixture to a plate.
  • Pour oil into pan and heat over medium-high heat. Add frozen hash brown potatoes and seasoning salt. Stir to coat potatoes in the oil.
  • Let the potatoes brown on one side, then flip once after about 5 minutes. Both sides should be browned and crispy, about 5 minutes per side. Add the diced tomatoes and the chorizo and onion mixture; stir gently to mix evenly. Cook for 4 more minutes, stirring once to rotate the ingredients from the bottom of the pan to the top for even cooking.
  • Serve topped with cilantro and cubed avocados.

Ground Beef and Spanish Rice Hash image

Steps:

  • 1. In a large skillet with 1 Tablespoon of vegetable oil, cook and scramble beef until no longer pink. Drain any grease. Stir in the rice mix,chopped onion,tomatoes, beef broth, corn and bell pepper and the seasoning packet from the rice; cook and bring mixture to a boil.
  • 2. Pour mixture into a sprayed or greased casserole dish, cover with foil and bake at 350^ for 25 minutes; until rice is tender. Remove foil and sprinkle top with cheese and crushed corn chips, bake for 10 minutes more ,uncovered or until cheese melts. (American cheese slices may be used instead of shredded cheese ,if desired.

1950'S Spanish Rice Aka Texas Hash image

Steps:

  • 1. In a large skillet, heat 1 tablespoon oil.
  • 2. Cook onion, green bell pepper, garlic and rice for several minutes, then add ground beef; cook until meat is no longer pink.
  • 3. In a bowl, add mustard, crushed tomatoes and tomato sauce. Mix well.
  • 4. Drain grease from meat mixture.
  • 5. Add tomato mixture.
  • 6. Season with salt and pepper to taste.
  • 7. Cook on low heat, covered, for 20 minutes.
  • 8. Notes: 1 10-ounce can of Rotel can be substituted for the crushed tomatoes. Add shredded cheese at end if desired.

Roast Beef Hash image

Steps:

  • Preheat the oven to 300 degrees F. Season meat with salt and pepper and sear on all sides in a hot saute pan. Place meat in a large roasting pan and cover with thyme, garlic, onions, carrots, chicken stock, and potatoes. Braise in the oven for 2 hours or until meat is tender. Strain liquid and place in an ice bath. Cool meat in liquid. Chop roasted onions and potatoes into a small dice. Shred beef and mix with potatoes, onions, chives, and parsley. Raise the oven to 350 degrees F. Heat a 10-inch cast iron skillet and add 1 tablespoon of butter. Place 2 cups of roast beef mix in skillet and place in the oven for approximately 15 minutes or until meat is slightly crisp on outside. Serve with poached eggs and hollandaise sauce, if desired.

Chef John's Hamburger Hash image

Steps:

  • Cut a 1/4-inch slice off the bottom each potato so it sits flat on a cutting board. Cut some more 1/4-inch slices straight down and then cut potatoes into sticks. Turn sticks and cut across to create a uniform dice. Transfer to a bowl of cold water.
  • Combine butter and olive oil in a skillet over high heat until butter melts. Add ground beef and cook, breaking up with a flat-edge utensil, until crumbly, about 5 minutes.
  • Drain potatoes and add to the beef with a nice pinch of salt. Reduce heat to medium-high and cook, stirring occasionally, until potatoes just start to soften, 5 to 7 minutes. Smooth mixture in the skillet and press against the bottom of the pan to help everything get nice and crusty.
  • Stir in onions and mushrooms and add another pinch of salt. Cook, stirring occasionally, until onions and mushrooms have softened up and taken on some beautiful color, 5 to 7 minutes. Season with black pepper, cayenne, and rosemary.
  • Add bell pepper, poblano pepper, and another pinch of salt. Cook until peppers are tender and the rest of the ingredients are dark and crispy, about 5 more minutes.
  • Stir in green onions and cook for a few more minutes. Remove from the heat and serve.

  • 1. In a large stock pot or Dutch oven, over medium-high heat, cook ground beef, peppers, onion, and garlic until beef is cooked through. Stir occasionally to help break up the beef.
