BOURBON-GLAZED CHICKEN DRUMETTES WITH BLUE CHEESE DIPPING SAUCE

Bourbon-Glazed Chicken Drumettes with Blue Cheese Dipping Sauce image

Steps:

  • Melt butter in heavy large saucepan over medium-high heat. Add onion and garlic; sauté until golden, about 5 minutes. Add 3/4 cup bourbon; boil until most of liquid is absorbed, 6 to 8 minutes. Whisk in 1/4 cup bourbon, ketchup, hot pepper sauce, tomato paste, and brown sugar. Bring to boil. Reduce heat and simmer until sauce thickens slightly, stirring occasionally, about 10 minutes. Season marinade with salt and pepper. Remove marinade from heat; cool to room temperature.
  • Place chicken drumettes in 15 x 10 x 2-inch glass baking dish. Pour marinade over and turn drumettes to coat. Cover and refrigerate overnight.
  • Preheat oven to 375°F. Line baking sheet with foil or parchment paper. Place cooling rack atop prepared baking sheet. Arrange drumettes on rack, spacing slightly apart. Spread any remaining marinade from dish over drumettes. Sprinkle with salt and pepper. Bake drumettes (still on cooling rack) until cooked through and brown in spots, about 45 minutes. Transfer drumettes to serving platter. Serve Blue Cheese Dipping Sauce alongside.

Spiced Chicken Tenders with Dipping Sauces image

Steps:

  • Heat several inches of oil in a deep pot to 375 degrees F.
  • For the chicken: In a large plastic zip top bag, combine flour, marinade mix and pepper. Set aside. In another bag, add corn bran. Using a rolling pin, gently crush cereal to coarse ground crumbs. Mix egg and milk in a shallow bowl. Soak chicken strips in buttermilk mixture. Take a few strips at a time, and toss in seasoned flour mix. Shake off excess flour and dip in buttermilk mix again. Toss in cereal crumbs. Repeat with remaining chicken strips. Fry chicken strips in batches until golden brown and cooked through, about 6 to 7 minutes per batch. Drain on paper towels. Serve with dipping sauces.
  • For the dipping sauces: Make the ketchup sauce. In a small bowl, combine ketchup, 1/2 cup honey and Worcestershire. Make the mustard sauce. In a small bowl, combine remaining honey and mustard.

Steak Bites with Spicy Blue Cheese Cream image

Steps:

  • Heat a heavy-bottomed skillet over medium-high heat.
  • Toss together the steak, melted butter and steak seasoning in a bowl. Add to the skillet and cook until nicely seared on all sides, 4 to 5 minutes total. Remove the steak bites to a plate to rest and return the skillet to the heat.
  • Lower the heat to medium and add the remaining 2 tablespoons butter to the skillet. Stir in the rosemary, garlic and a pinch of salt. Cook for 1 minute, until the garlic is heated through and no longer raw. Add the cream and bring it to the boil. Reduce the heat to low and simmer, then stir in the blue cheese, horseradish, 1 tablespoon of the chives and black pepper to taste. Transfer to a serving bowl.
  • Place the steak bites on a platter with toothpicks, with the sauce on the side. Garnish the plater with the remaining chives before serving.

  • Cut chicken into strips.
  • Put chicken and buttermilk in plastic bag.
  • Shake well, refrigerate for 15 minutes.
  • Heat oven to 400°.
  • Line a lg baking sheet with foil.
  • Put dry ingredients in another plastic bag.
  • Add chicken, shake to coat well.
  • Place chicken on baking sheet.
  • Spray the chicken with cooking spray.

Steps:

  • Place the milk in a small saucepan and bring to a simmer over low heat.
  • Heat the butter in a medium saucepan over medium heat. Add the onion and cook until soft.
  • Stir in the flour and cook for 1 minute.
  • Slowly whisk in the warm milk, and continue whisking until thickened.
  • Season with salt and cayenne pepper.
  • Continue cooking for 5 minutes, whisking occasionally. Remove from the heat and stir in the cheese.
