My mom always made this in the fall months when the weather turned colder. My family loves it. Very easy Sunday dinner.

- Preheat oven to 350 degrees F (175 degrees C).
- Put pork chops into a roasting pan. Arrange potatoes, onions, and carrots around the chops. Sprinkle onion soup mix over the chops and vegetables; season with salt and black pepper. Pour beef broth over the entire mixture.
- Place a cover on the roasting pan and bake in the preheated oven until the pork chops are no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

PORK CHOP CASSEROLE
I cut this out of a cooking magazine, probably Taste Of Home and changed it to suit or our tastes. It sounds like a very flavorful way to have pork chops and to keep them moist. I haven't made them yet but plan to make them and serve them over mashed potatoes, yummy!!!!! Note: This recipe also works great in a crock pot. My friend and I have decided that it is easier to just mix all the sour cream with the soup and broth in the beginning.

- In a shallow bowl, combine the flour, salt and pepper; dredge pork chops.
- Heat oil in a large skillet; cook pork chops for 4 to 5 minutes per side or until browned.
- Place pork chops in a single layer in an ungreased 13x9x2 inch baking dish.
- Combine cream of mushroom soup, chicken broth and 1/2 cup sour cream; pour over chops.
- Sprinkle with half of the French fried onions.
- Cover and bake at 350 degrees Fahrenheit for 45 to 50 minutes.
- Stir remaining sour cream into the sauce.
- Top chops with remaining onions.
- Return to oven, uncovered, for 10 minutes.

- Preheat oven to 375 degrees.
- Lightly spray nonstick skillet with cooking spray.
- Add corn, cook over medium high heat for 5 minutes or until corn begins to brown.
- Add potatoes, cook and stir for 5 more minutes or until potatoes begin to brown.
- Add tomatoes, chili powder, oregano, cumin and red pepper; stir until well mixed.
- Lightly spray 8x8x2 baking dish with cooking spray. Pour corn mixture into dish.
- Add oil and pork chops to skillet. Cook pork chops over medium-high heat until brown on one side.
- Remove pork chops and place browned side up on top of corn mixture.

SWEET & SPICY PORK CHOP CASSEROLE
Your house will smell delectable while these are baking. A breeze to prepare, the pork is moist, tender and delicious to eat. This recipe is adapted from one in the 'Miss Australia Cook Book', published over 30 years ago. I have lost count of how many times I have cooked this yummy dish!

- Rub pork chops with oil, and sprinkle both sides with tarragon, salt and pepper.
- Heat griddle over high heat, spray with a little vegetable oil, and quickly brown chops on each side to seal in the juices.
- Toss the sliced apples and onions together, then arrange in the bottom of a casserole dish which is large enough to hold the chops in one layer.
- Mix brown sugar and cinnamon together in a bowl, then sprinkle half the mixture over the apples and onions.
- When the chops are nicely browned, add them to the casserole dish, and sprinkle with remaining brown sugar and cinnamon.
- Combine lemon juice and water in a small jug and gently and carefully (so as not to disturb the brown sugar mix) pour this over the chops.
- Dot all over with little knobs of butter.
- Cover casserole dish with a lid or alfoil, and bake in a moderate oven for about and hour, or until tender, uncovering for the last 10 minutes of cooking time.

- Preheat the oven to 450 degrees F.
- Combine the panko, oil, Parmesan, Italian seasoning and 3/4 teaspoon each salt and pepper in a large resealable plastic bag. Put the pork chops in a large bowl and toss to coat with 1 tablespoon water. Place the pork chops in the bag and shake well to coat, pressing the breadcrumb mixture firmly into the meat.

- Put the flour in a shallow dish. Break the eggs into another shallow bowl and whisk with 1 teaspoon salt and a few grinds of pepper. Mix the breadcrumbs with the oregano and thyme in a third shallow bowl.

- Cook the pork: Season the pork all over with the salt, then sift the paprika through a fine mesh sieve over the pork. Heat a cast iron skillet large enough to hold the pork. Add the oil and when it begins to smoke lightly, use a pair of metal tongs to place the pork into the hot oil. Cook over high heat, turning the pork often, browning on all sides, until it reaches an internal temperature of 145 degrees F in the thickest part of the tenderloin, about 15 minutes total (if you like a little more "done", cook a few minutes longer on each side). Remove the pork and allow it to "rest" on a flat surface. If you like a little more "done", cook a few minutes longer on each side.
- Make the sauce: In a medium bowl, combine the vinegar, soy sauce, honey, fish sauce, and ginger. Add the scallions. Taste for seasoning. Set aside.
- Assemble the wraps: On a large serving platter, arrange "cups" of lettuce leaves, 2 to 3 layers of lettuce per cup. Form the cups with one leaf inside another with the lettuce spines stacked on top of the other.
- Slice the pork into 1/4-inch thick rounds. Top each lettuce cup with 3 or 4 slices of pork. Season the pork with a little more salt, then top with the chiles. Drizzle the meat with some of the sauce. Top with the cilantro leaves. Top with more sauce if you like.

For a time, when I found and tried something new, if I liked it, I copied it onto an index card, with the result that the source was permanently lost. I need to do it again, now that I have found it again!

- Trim chops.
- Rub both sides with cut garlic, then sprinkle with pepper and salt to taste.
- Brown on both sides in skillet with melted butter.
- In a greased casserole, place a layer of apples and onions, using about half. Put chops on top, then cover the whole with remaining apples and onions.
- Stir flour into sediment in skillet and add 2 cups of boiling water, stirring constantly till thickened.
- Add the lemon juice, applesauce and spices.
- Make sure it is well mixed, then gently pour into casserole.
- Cover casserole dish with foil or lid, and cook for 1 hour, 10 minutes at 350 degrees. Remove cover and bake for an additional 20 minutes.

- pre heat the oven to 100 degrees / gas mark 2
- peel and halve the onions, cut carrots in halve, make up the vegetable stock in a jug
- place the chops on a chopping board trim the the fat set aside for later, place the chops in a casserole dish laying the onions in the gaps as you do so,
- place the carrots the rest of the onions, chillies, tomato puree, thyme and all the stock in the casserole dish season with salt and pepper
- pop the lid on place in the middle of the oven for 5 hours.
- after 5 hours remove from the oven straine but retain all the fluid, remove all the bones and discard, put the carrots and onions back in the fluid in a large saucepan place the meat back in add 2 - table spoons of gravy granules bring to the boil then simmer for 1 hour stirring occasionaly to prevent sticking.
- place an oven dish with a little oil in to a pre heated oven at 180 degree gas mark 6, mean while peel and halve 4 potatoes and part boil, drain and leave to rest, once the oil is hot pour the potatoes into the hot oil cook for 1 hour shaking 3o mins into cooking, steam the broccoli and carrots until tender. then serve and enjoy.

- Heat oven to 400°F. Spray bottom of 11x8-inch (2-quart) glass baking dish with cooking spray. Make mashed potatoes as directed on pouch; stir in cream cheese, 1 tablespoon of the parsley and 2 teaspoons of the thyme. Spoon mixture into bottom of baking dish; set aside.
