GREEK MEATLOAF WITH FETA
Oregano, garlic and feta cheese brings a ho-hum dish to new heights. Serve with Lemon Potatoes and Greek Salad.

Steps:
- In a large bowl, stir the spices and crushed crackers into the ground beef.
- Stir the eggs into the milk, stir into meat mixture.
- Mix in the feta cheese and press into a 9x13 pan.
- Cover loosely with foil.
- Bake for 30 minutes,at 350, drain.
- Resume baking without foil for 15 minutes or until done.

SPINACH AND FETA MEATLOAF RECIPE

- Preheat oven to 350° F. Mix all ingredients, except spinach and cheese, in a large bowl. Stem and cook the spinach (or thaw, if frozen) and squeeze dry, and chop finely. Cover a rimmed baking sheet with a piece of waxed paper. On the waxed paper, shape the meat mixture into a neat rectangle about 9 inches by 13 inches, keeping the thickness as even as possible. Spread the chopped spinach over the meat. crumble the cheese and distribute over the spinach.. Starting from a short side, use the waxed paper to help roll up the meat, jelly-roll fashion, into a log. With moistened fingers, press and pat the ends shut and seal up any cracks that develop. Slide the waxed paper away from the meat log and bake in preheated oven about 45 minutes, or to 160° at the center. Remove from oven and let stand a few minutes to firm up, then cut into thick slices and serve. Serves 2, makes leftovers!

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, mix the ground beef, eggs, sour cream, Worcestershire sauce, dry onion soup mix, Parmesan cheese, salad dressing, bread crumbs, and spinach. Transfer to a 5x9 inch pan, and cover with aluminum foil.
- Bake 45 minutes in the preheated oven. Remove foil, and continue baking 15 minutes, to a minimum internal temperature of 160 degrees F (70 degrees C). Let stand 5 minutes before slicing.

- In a large bowl, combine the ground beef, eggs, bread crumbs, onion soup mix, garlic, Parmesan cheese and all be 2 tbs of the ketchup. In small bowl mix together the feta cheese and sun dried tomatoes. On a cutting board covered with wax paper, pat the meat mixture into a rectangle approximately 6 inches by 10 inches. Spead the feta cheese mixture over the meat rectangle to within 1 inch of the edges. Place the spinach over the feta. Using the wax paper, roll the meat loaf so that the meat completely covers the cheese and spinach center and seal tightly. Make sure that the ends of the meat loaf are also completely sealed. Place in the Crock-Pot on one end, if necessary. Top with the remaining ketchup. Cover., cook on low 8 to 10 hours or on high for 4 to 6 hours.

- Preheat the oven: Place a rack in the middle of the oven and preheat the oven to 350ºF. Spray a 9-by-5-inch loaf pan with vegetable oil spray.
- Cook the spinach and garlic: In a large pan, combine the oil and garlic. Set the pan over medium heat. When the garlic sizzles, cook and stir it for 30 seconds. Add the spinach to the pan, and cook, stirring, for 1 to 2 minutes, or until it wilts. Let cool.
- Make the meatloaf mixture: In a large bowl, stir together the eggs, panko, cinnamon, coriander, lemon zest, salt, and pepper. Stir in the parsley and the cooked spinach. Add the beef and stir until combined. Add the feta cubes and stir gently to keep the cubes in large pieces.
