SPINACH AND ROASTED RED PEPPER TOFU CROQUETTES
When it comes to creating family-friendly vegetarian recipes it's not always easy. Most vegetarian families I talk to say that most of the foods they're offered are loaded with pasta, bread or cheese instead of what they really want and need -- vegetables and nutritious proteins. These croquettes are packed with both of those things plus tons and tons of flavor. The silken tofu (you want to always buy organic) gives them a soft fluffy texture on the inside with a golden crust on the outside. We love dipping them into ketchup, but barbecue sauce or mustard makes a fantastic accompaniment too. Don't settle for ho-hum vegetarian cuisine when you can make something that will get everyone super excited!

Steps:
- Heat 2 teaspoons of the oil in a large skillet over medium heat and cook the onions and garlic, stirring occasionally, until softened, about 5 minutes. Transfer to a large bowl. Wipe out the skillet.
- Add the bell peppers, spinach, tofu, parsley, mozzarella, 1/2 cup of the flour and 1 teaspoon of the salt. Stir to combine well. Shape the mixture into patties, each about the size of a small burger patty.
- In a shallow bowl, whisk together the breadcrumbs, the remaining 1/2 cup flour and the remaining 1 teaspoon salt. Dredge each side of the tofu croquettes in the breadcrumb mixture.
- Heat 1 to 2 tablespoons of the oil in the same skillet over medium-high heat. Working in batches if necessary, add the croquettes in a single layer and cook until golden brown, about 3 minutes on each side. Serve with marinara sauce for dipping.
MINI PHYLLO ROASTED RED PEPPER-SPINACH BITES
My take on Spanokopita. I added in the roasted red pepper because I love it and it matches well with the spinach and seasonings. I didn't add in feta. I would have, but mine went bad. It tasted delish anyway.

Steps:
- Roast red pepper whole in a 450*F oven for 20-40 until charred to liking.
- Wrap in foil and set aside Adjust oven to 350*F.
- In dutch oven, sweat onion, garlic, and a little of the spices over medium-low heat.
- Meanwhile, fold each sheet in half long-ways and cut into 3 even pieces.
- Place in muffin cups and place in oven for 10 minutes, then remove and turn around to the other side and leave in until crispy.
- Dump in spinach into onions and garlic and cook down. Season to taste.
- Once pepper has cooled, unwrap and peel (should come right off).
- Cut off top and take out seeds. Discard.
- Finely dice remaining pepper. Once spinach has cooked down, turn off heat.
- Drain liquid and stir in crumbled feta, if desired.
- Divide red pepper among the muffin cups and place in phyllo.
- Divide spinach mixture and place in phyllo.
- Serve hot, warm, or at room temperature.
- Warning: Phyllo will soften and/or get soggy later, so put back in a 350*F for a few minutes to crisp it back up.
- For Vegan omit the Feta cheese.

CREAMY SPINACH-STUFFED CHICKEN WITH ROASTED RED PEPPER FETTUCCINE RECIPE BY TASTY

- In a medium bowl, mix together the spinach, mozzarella, and 1 clove minced garlic. Season with salt and pepper. Set aside.
- Place a chicken thigh between 2 sheets of plastic wrap and pound with a meat mallet, rolling pin, or heavy pan until about ¼ inch (6 mm) thick. Season on both sides with salt and pepper and repeat with remaining thighs.
- On a clean sheet of plastic wrap, lay 2 slices of prosciutto vertically, overlapping slightly. Lay a chicken thigh on top. Spread a quarter of the spinach filling evenly over the chicken. Starting from the bottom, tightly roll up. Wrap the chicken roll tightly in plastic wrap to secure. Repeat with the remaining ingredients. Chill in the refrigerator for 30-60 minutes, until firm.
- Meanwhile, turn the broiler to high.
- Cut the bell pepper in half and remove the seeds and membranes. Place cut-side down on a prepared baking sheet.
- Broil until the pepper starts to char and turn black, 2-3 minutes. Transfer to a bowl, cover with plastic wrap, and let sit for 5 minutes to soften. Use a paper towel to gently rub off the charred bits and skin, then roughly chop. Set aside.
- Turn the oven temperature to 400°F (200°C).
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken rolls and cook for 2-3 minutes per side, until the prosciutto is evenly browned, securing with toothpicks if needed. Transfer the chicken rolls to a baking sheet.
- Bake the chicken rolls for 15-20 minutes, until the internal temperature reaches 165°F (75°C). Remove from the oven and let rest for 5 minutes.
- Bring a large pot of salted water to a boil. Add the fettucine and cook according to the package directions until al dente. Reserve 1 cup (240 ml) of pasta water, then drain and set aside until ready to serve.
- Heat the skillet used to cook the chicken over medium-low heat. Add the roasted red pepper and remaining 2 cloves minced garlic and cook until fragrant, 1-2 minutes.
- Add the lemon juice and stir to scrape up any browned bits from the bottom of the pan. Add the chicken stock and bring to boil.
- Transfer the red pepper mixture to a high-speed blender and blend until smooth.
- Pour the sauce back into the pan and bring to a boil over medium heat. Reduce the heat to medium-low and simmer until reduced by about half, about 5 minutes.
- Whisk in the cold butter, 1 tablespoon at a time, until the sauce is emulsified. Season with salt and pepper to taste.
- Add the cooked fettuccine to the sauce and toss to coat, adding some of the reserved pasta water as needed to loosen the sauce.
- Thinly slice the chicken rolls.
- Divide the fettuccine between serving plates, top with the chicken, and garnish with parsley and pepper.

I found this recipe years ago, I don't remember where. It is a lovely dish for entertaining your vegetarian friends, and the leftovers keep well if you're flying solo. The roasted tofu is very versatile and also works well in salads, stir-fries, and many other dishes. Cook time is estimated and reflects the minimum marinating and cooling times for the tofu. This dish is vegan if you omit the parmesan cheese.

- FOR TOFU:.
- Preheat oven to 450°F.
- Combine soy sauce or tamari and sesame oil in a medium bowl.
- Stir cubed tofu into mixture and toss to coat. Marinate at least 20 minutes, up to 2 hours.
- Spread tofu in a single layer in a baking dish. Bake 25 minutes, or until golden brown all over, tossing with spatula halfway through cook time.
- Let tofu cool, up to 24 hours.
- FOR PENNE AND VEGGIES:.
- Bring a large pot of salted water to boil for the pasta.
- Heat olive oil in a large skillet over medium heat. Add red pepper and saute until tender (about 5 minutes).
- Stir in garlic and red pepper flakes and cook for 2 minutes, stirring often.
- Add spinach, vegetable stock and salt and cover pan. Cook about 2 minutes, until spinach is wilted but still bright green.
- Uncover, stir in tofu and continue to cook on low heat, stirring often, while the penne cooks.
- Drain pasta and stir in tofu and veggies.
- Top with grated parmesan if desired.

- Steam the spinach above an inch boiling water until just wilted, about two minutes; or wilt in a large frying pan with the water left on the leaves after washing. Remove from the heat, rinse with cold water and squeeze out excess water. Chop fine, and set aside.
- Heat 1 tablespoon of the olive oil over medium heat in a heavy 10-inch nonstick skillet. Add the bell peppers. Cook, stirring often, until tender, five to eight minutes. Add the garlic and salt to taste, stir for about half a minute, and stir in the chopped spinach and the marjoram. Stir together for a few seconds, then remove from the heat and set aside.
- Beat the eggs in a large bowl. Stir in the salt (about 1/2 teaspoon), pepper, milk, spinach and red peppers. Clean and dry the pan, and return to the burner, set on medium-high. Heat the remaining tablespoon of olive oil in the skillet. Drop a bit of egg into the pan; if it sizzles and cooks at once, the pan is ready. Pour in the egg mixture. Tilt the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the frittata with a spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking.
- Turn the heat to low, cover and cook 10 minutes, shaking the pan gently every once in a while. From time to time, remove the lid, tilt the pan, and loosen the bottom of the frittata with a wooden spatula so that it doesn't burn. The bottom should turn a golden color. The eggs should be just about set; cook a few minutes longer if they're not.
- Meanwhile, heat the broiler. Uncover the pan and place under the broiler, not too close to the heat, for one to three minutes, watching very carefully to make sure the top doesn't burn (at most, it should brown very slightly and puff under the broiler). Remove from the heat, shake the pan to make sure the frittata isn't sticking, and allow it to cool for at least five minutes and for as long as 15 minutes. Loosen the edges with a wooden or plastic spatula. Carefully slide from the pan onto a large round platter. Cut into wedges or into smaller bite-size diamonds. Serve hot, warm, at room temperature or cold.
