CREAMY DREAMY SPINACH, ONION, AND BACON DIP

From my favorite gal of all time!! Dip may made up to 2 days ahead of time, covered and refrigerated. Let stand 20 minutes before baking as directed. (These are Paula's directions, but I had to bake for a few minutes more, as well as place under the broiler for a few minutes to get the top browned). Prep time does not include thawing time for spinach and onions.

Steps:

  • Preheat the oven to 350 degrees F.
  • In a stand mixer fitted with the paddle attachment, beat the cream cheese until fluffy, about 5 minutes. Add the mayonnaise, mustard, cayenne, salt and Worcestershire, and continue to beat until smooth, about 5 minutes. Add 1/2 cup of the Parmesan and the Onion Jam, and mix on low speed until just combined. At this point, cook immediately or store the dip in the refrigerator until ready to serve.
  • Scoop the dip into a baking dish and top with the remaining 2 tablespoons Parmesan and the crumbled bacon. Bake until the cheese melts and the dip begins to bubble, 8 to 10 minutes. Garnish with chives and serve the dip with crackers, warm bread and vegetables.
  • In a large frying pan set over medium-low heat, add the oil and then the onions. Add the salt and cook, stirring often, until softened, about 5 minutes. Reduce the heat to low and add the vinegar, sugar and 2 tablespoons water. Continue to cook over low heat, stirring often, until the liquid is absorbed and the onions are rich golden brown, about 20 minutes. Spread the onion jam on a cookie sheet and cool to room temperature. Refrigerate any leftovers.

8 ounces cream cheese, at room temperature
1/4 cup mayonnaise
1/2 teaspoon dry English mustard
1/4 teaspoon cayenne pepper
1/4 teaspoon kosher salt
1/4 teaspoon Worcestershire sauce
1/2 cup plus 2 tablespoons shredded Parmesan
1/3 cup Onion Jam, recipe follows
3 strips bacon, cooked and crumbled
Chopped chives, for garnish
Serving suggestions: crackers, toasted bread and vegetables
1 tablespoon vegetable oil
2 yellow onions, thinly sliced
1 teaspoon kosher salt
2 tablespoons balsamic vinegar
1 teaspoon brown sugar

CREAM CHEESE, BACON AND SPINACH DIP

This is always a hit at parties, and is frequently requested by friends and relations. I got it from my mother many years ago. And if, by some weird chance, you have any leftover, it's great on toast in the morning for breakfast. I serve it with plain crackers and/or carrot and celery crudites.

Steps:

  • Grill bacon until well-cooked, but not crispy. If you do this on a rack above an oven tray, much of the fat will drip away. The time will vary according to the type of bacon. Cool bacon for a few minutes, then chop into very small pieces.
  • Microwave frozen spinach according to directions on the package. Drain any liquid.
  • In a medium sized bowl, mix all the ingredients together until well-blended, then transfer to a nice serving bowl.
  • Cover with glad wrap and cool in the fridge. If you can prepare this a few hours ahead of time, the flavours will intensify, but it is fine straight away.

250 g cream cheese, Spreadable
3 -4 slices bacon, rind removed
80 g frozen spinach

Bacon, Spinach, Swiss, & Caramelized Onion Dip Recipe - (4.2/5) image

Steps:

  • I made this in our food processor but you could also hand mix it if you wanted. It will just take a bit more effort. First, combine all your Dip Trinity - cream/neufchâtel cheeses, mayo, and sour cream. Blend until completely creamed together, then incorporate the onion soup mix. Meanwhile, heat up a tablespoon of oil in a skilled and let your onions brown up and caramelize on low heat for about 20 minutes. When you have about 10 minutes to go, fry up your bacon in another skillet. You want it crispy and crunchable, not soggy, but you also don't want to burn it. Add the red pepper flakes, lemon, and as much black pepper to the creamy mixture and give it a few pulses. You can add more later to your tasting. Once that's all pulsed (or hand mixed) together and there are no lumps, throw in your caramelized onions, bacon (just crumble it by hand while you drop it in), spinach, and cheese. You don't want to totally liquefy this all together, you want some texture and chunks. After you've lightly pulsed it together, dip your favorite cracker or bread in there for a taste test, if you want more pepper, or lemon, onion soup mix, go for it. Serve alongside your favorite chips or crackers, topped with a bit of shredded cheese and a sprinkle of paprika.

1 (8-ounce) package cream cheese
1 (8-ounce) package Neufchâtel cheese
1 cup light mayonnaise
1/2 cup light sour cream
1 packet onion soup mix
8 slices good quality bacon
1 large sweet yellow onion, thinly sliced
3 cups spinach, frozen chopped
1 1/2 cup swiss cheese, shredded (you could also use white cheddar or really any of your favorite shredded cheese)
1 tablespoon red pepper flakes
Generous squeeze of lemon juice
Fresh cracked black pepper
