- Preheat oven to 375°. Reserve 1 tablespoon crumbled bacon for topping. Beat cream cheese and mayonnaise until smooth. Stir in spinach, water chestnuts, 1 cup cheese, half of the green onions, garlic, seasonings and remaining bacon., Cut a 1-1/2-in. slice off top of bread. Hollow out the bottom, leaving a 1/2-in.-thick shell. Cut all removed bread into cubes for serving. Fill shell with dip. Wrap in heavy-duty foil, tenting foil over dip. Bake on a baking sheet 1-1/4 hours., Open foil carefully, allowing steam to escape. Sprinkle dip with remaining cheese and green onion and the reserved bacon. Bake until cheese is melted, 10-15 minutes. Serve warm with cucumber and cubed bread.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, mix the ground beef, eggs, sour cream, Worcestershire sauce, dry onion soup mix, Parmesan cheese, salad dressing, bread crumbs, and spinach. Transfer to a 5x9 inch pan, and cover with aluminum foil.

- In a large bowl, mix together chopped spinach, dry bread stuffing mix, eggs, Parmesan cheese, onion, butter and Cheddar cheese. Cover and chill in the refrigerator approximately 30 minutes.
- Drop the mixture by rounded spoonfuls onto a lightly greased large baking sheet. Place baking sheet in the freezer approximately 1 hour.

- Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with non-stick cooking spray.
- Heat olive oil in a skillet or frying pan over medium heat. Add garlic and saute until soft, about two minutes. Add spinach and cook until liquid has evaporated. Stir in salt, pepper, Parmesan and garlic powder. Remove from heat and let cool.

Steps:
- Squeeze excess liquid from the spinach; set aside.
- In a mixing bowl, combine the eggs, cheese, bread crumbs, vinegar, salt and pepper.
- Stir in the well-drained spinach; pat mixture into a greased 8x4x2" loaf pan.
- (At this point, loaf may be covered and refrigerated overnight, if desired).
- Bake, uncovered, in a 400 degree oven for 20-25 minutes or until a knife inserted in the center comes out clean.
- Meanwhile, in a medium skillet, cook bacon until crisp.
- Remove from skillet, reserving 2T.
- pan drippings.
- Drain bacon on paper towels.
- Cook the onion and peppers in the bacon drippings in the skillet for about 5 minutes, or until tender.
- Stir in the flour and dash pepper; gradually stir in the water.
- Cook and stir until thickened and bubbly; cook 1 minute more.
- Stir in bacon and tomatoes; heat through.
- To serve, invert spinach loaf onto serving platter and cut into slices.
- Spoon bacon/tomato sauce over.
SPINACH LOAF

- Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Butter a 9-by-5-inch nonstick loaf pan. Line the bottom of the pan with parchment paper. Set aside.
- Place the eggs and milk in a large bowl. Add the bread and stir to combine.
- Heat the butter in a large, high-sided skillet over medium-high heat. Add the onion, 1 teaspoon of the salt and 1/2 teaspoon of the pepper and cook until soft, about 6 minutes. In batches, add the spinach and cook until wilted, about 15 minutes. Drain in a colander. Press gently on top of the spinach to release excess moisture. Set aside to cool slightly. Transfer the spinach mixture to a food processor and blend until smooth. Pour the spinach into the bowl with the bread mixture. Add 3/4 cup of the Parmesan, the remaining salt and pepper and the nutmeg. Stir until smooth.
- Spread half of the mixture on the bottom of the prepared pan. Lay the hard boiled eggs, end-to-end, in a line along the center of the spinach mixture. Add the remaining spinach mixture on top and press gently. Sprinkle the remaining Parmesan on top and bake for 1 hour. Cool 15 minutes, then run a thin metal spatula around the edges of the pan to release the loaf. Invert the loaf onto a cutting board, remove the parchment paper, and cut into slices.
SPINACH BREAD
Steps:
- Preheat oven to 375 degrees. In a bowl combine water, honey, 1 teaspoon of the salt, and sprinkle the yeast over the top. Set aside to foam. Then whisk in 2 tablespoons of olive oil, then sift 1 cup of flour and mix well. Set aside for 1 hour, or until it has a sponge-like texture.
- Meanwhile, in a medium skillet, heat 2 1/2 tablespoons olive oil and saute onions until tender, about 5 minutes. Then add the garlic, cumin, and remaining salt to the onions. Stir in the spinach, in small batches, and cook until the spinach is soft. Pour on the lemon juice. Drain spinach in a colander and reserve the cooking liquid. In a large bowl, place 2 cups of the remaining flour, making a well in the center of the flour. Pour the spongy mixture into the well. Knead for 10 minutes, adding enough of the cooking liquid to make it pliable yet firm. Transfer to a oiled bowl, cover with plastic wrap and let rise for 2 hours. Then add the feta cheese to the dough and knead for 1 minute. Add the spinach mixture, sprinkle with the remaining flour, and mix together quickly. The dough is supposed to be moist and loose, don't knead again. Form into a oblong loaf and place the dough on a well oiled baking sheet. Cover lightly with plastic wrap and let proof for 1 hour. Bake the bread for 20 minutes, then reduce the heat to 350 degrees and cook for another 30 minutes.
SPINACH CARROT LOAF
Very elegant presentation, lovely color combination, subtly flavored. Make it the day before and pop into the oven the day of your dinner. Great chilled as a side dish on a buffet

Steps:
- Melt butter in skillet and sauté the garlic and onion until the onion is translucent; cool.
- Beat the egg and egg whites and divide into 2 equal portions.
- Heat oven to 350°F and spray veggie oil into a 1-quart loaf pan.
- Place parchment paper on the bottom of the pan, oiled (you can also use wax paper).
- Purée the carrots with half of the onions, garlic, egg mixture parmesan and season with salt and pepper. Purée until smooth and pour into the prepared loaf pan.
- Purée the spinach with the remaining ingredients (half of the onions, garlic, egg and parmesan etc).
- Smooth the top of the loaf and place the loaf in a 9x13-inch ovenproof dish. Pour boiling water into the dish bringing the water level to about half way up the side of the loaf pan.
- Bake for 1 hour.
- Remove from oven and let the loaf rest in the water bath for 20 minutes before unmolding.
- You may serve this loaf hot, room temp or chilled.

- Thaw spinach or cook in microwave according to package directions. Squeeze dry over the sink.
- Make a white sauce, sautéing onion and garlic, if using, in butter to start.

- Preheat oven to 375°F.
- Beat cream cheese and mayo together in mixing bowl.
- Stir in next nine remaining ingredients.
- Cut a slice off top of bread; set aside.
- Carefully hollow out bottom, leaving a 1/2 inch shell.
- Cube removed bread and set aside.
- Fill the shell with spinach dip; replace top.
- Wrap in heavy-duty foil; place on baking sheet.
- Bake for 75 - 90 minutes or until dip is heated through.
- Open foil carefully.
