Steps:

  • Strange though it might sound to say it, this is another of my supper-standbys. I keep the frozen squid in the deep-freeze, taking it out in the morning at breakfast to let it thaw in time for the evening's meal. I prefer to eat a massive amount of this, and nothing else (I can eat the whole lot myself) rather than have it more meanly as a starter unless, in a life outside of this chapter's parameters, I'm expecting company, in which case it would happily stretch to 4 people, ready to dunk each crisp piece of squid into the garlic mayonnaise over pre-dinner drinks.
  • I feel the ghost of Elizabeth David spitting at my calling this 'crispy' squid, but that's what I habitually call it at home, and I beg forgiveness of the pedants, with whom I have some sympathy.
  • Heat the oil in a smallish saucepan and while it's left to heat up cut the thawed squid into 1/2-inch rings.
  • Put the cornstarch, semolina and seasoning into a plastic freezer bag. Add the squid rings and tentacles and then toss to coat.
  • When the oil is hot enough, which is when it sizzles up fiercely when you drop in a small cube of bread, fry the squid in batches to get the most golden crunchiness. A couple of minutes per batch is all you should need
  • Mince the garlic into the mayonnaise to serve alongside the fried squid.

About 9 ounces frozen squid (tubes and tentacles) to give about 7 ounces unfrozen
1 tablespoon cornstarch
2 tablespoons semolina
1 teaspoon crab boil seasoning (recommended: Old Bay) or use salt and paprika
1 cup groundnut oil or as needed, depending on the size of pan
Garlic Mayonnaise, recipe follows
1/4 clove garlic
4 tablespoons best quality, preferably organic, mayonnaise

Crispy Squid with Garlic, Chile, and Basil image

Steps:

  • The lightly beaten eggs should be in one medium bowl and the bread crumbs in another. Season both the eggs and the bread crumbs with salt and pepper. Take the squid rings and tentacles and coat them with the egg. Remove and allow any excess egg to drip off, and then roll the pieces in the bread crumbs. Place them in a single layer on a baking sheet and refrigerate.
  • In a medium-size saute pan, heat the chile oil lightly. Add the garlic and season with salt and pepper. Take care not to brown the garlic but instead sweat it so that the liquid emerges and it becomes translucent. Add the sliced celery and stir to coat everything evenly. Cook for 1 minute. Stir in the lemon slices and set aside to cool.
  • Pour the oil into a heavy-bottomed pot (or alternatively, a deep fryer). Heat the oil slowly to 375 degrees F. Use a thermometer to monitor the temperature. Line a baking sheet with a kitchen towel to drain the squid once they are cooked.
  • When ready to serve, drop the squid, in small batches, into the oil. Fry until crispy, turning on both sides with a slotted metal spoon, about 3 to 5 minutes. Drain them on the lined baking sheet. Season immediately with salt and toss with the basil leaves. Serve the garlic sauce on the side or drizzle over top. Serve immediately.

4 eggs, lightly beaten
2 cups toasted bread crumbs
Kosher salt and freshly ground black pepper
1 pound small squid, cleaned, bodies cut into thin rounds, tentacles intact
1/2 teaspoon chile oil
2 cloves garlic, peeled and minced
3 yellow inner stalks celery, washed and sliced
1/2 lemon, halved lengthwise and sliced into thin half moons
1 quart frying oil
1/2 cup fresh basil leaves, stemmed, washed, dried and torn

  • Preheat oven to 350°. Toast hazelnuts on a rimmed baking sheet, tossing once, until golden brown, 7–10 minutes. Let cool, then crush nuts using the side of a chef’s knife or coarsely chop. Transfer to a small bowl. Mix in 2 Tbsp. oil and season with salt. Set aside.
  • Prepare a grill for high heat and place a wire rack on one side, orienting it perpendicular to grill grate. Place bell peppers directly on grate (not on wire rack) and grill, turning occasionally, until charred all over and flesh is very soft, 8–10 minutes.
  • Transfer bell peppers to a medium bowl and cover tightly with plastic wrap. Let sit 10–20 minutes (doing this extends the cooking and softens the skins). Remove skins from peppers and scoop out seeds; discard. Tear or slice peppers into large pieces and place in a clean medium bowl. Add vinegar, paprika, and ¼ cup oil and finely grate 1 garlic clove into bowl. Season with salt and toss well to coat peppers.
  • Return grill to high heat. Finely grate remaining 2 garlic cloves into a large bowl; stir in remaining ¼ cup oil. Pat squid dry, then add to oil mixture; toss well to coat. Working in batches, grill squid on wire rack on grill until marks appear on bodies and tentacles begin to crisp around the edges, 45–60 seconds per side. Transfer to a clean large bowl and season with salt.

  • Drain and rinse the haricot beans, then tip into a medium saucepan and add fresh water to cover. Bring to the boil and cook for 10 minutes, then lower the heat, cover and simmer for about an hour or until the beans are just tender. Drain and set aside (see tip).
  • Heat the oven to 120°C/100°C fan/gas ½. Cut the bacon into 4cm cubes (or 4cm strips if using bacon slices). Put a large heavy-based flameproof casserole (one with a lid) over a medium-high heat. Add the oil or lard, then the bacon and cook on all sides for 4-5 minutes until caramelised and golden. Remove the bacon and set aside on a plate.
  • Slice the squid bodies into 1-2cm rounds and the tentacles into several pieces. Drop the squid into the casserole and cook for 3-4 minutes until brown all over. Remove the squid and set aside with the bacon, then lower the heat under the casserole to medium.
  • Add the onion, garlic, thyme, bay leaves and lemon zest to the casserole and cook, stirring often, for 6-8 minutes until the onions start to soften.
