MILLION DOLLAR DIP
Formerly known as 'Neiman Marcus dip,' this million dollar dip tastes just like it sounds. I've had more than a few cheesy dips in my day, but this is by far the richest and most addictive one yet. And it's much cheaper than the name suggests! Served with crackers and garnished with green onions and bacon, this dip is sure to be a huge hit at your next party.

Steps:
- Toast almonds in a saucepan over medium heat until lightly golden.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crispy and evenly browned, 8 to 10 minutes. Drain and cool slightly before chopping into bits.
- Combine mayonnaise and Cheddar cheese in a mixing bowl. Toss in bacon, green onions, almonds, and cayenne. Stir with a spatula until combined. Wrap and chill in the fridge at least 1 hour before transferring to a serving bowl.

SMOKED TROUT DIP

Steps:
- With gloved hands, flake the fish into a bowl, removing the skin as you go. Add the mayonnaise, sour cream, parsley, seafood seasoning and pepper, and mix gently. Add the lemon juice and toss once again to mix. Plate in a terrine and sprinkle with the chopped chives as garnish. Serve with crostini.
ST. JOHN'S DIP
This has all the flavor of a tasty burrito without the tortilla! I do believe that this would easily be a hit at any gathering.

Steps:
- 1. Brown the Hamburger, over medium heat, and drain off fat.
- 2. Add Re-Fried Beans and mix with browned hamburger till smooth.
- 3. Mix in Taco Seasoning mix.
- 4. Spread Hamburger mixture on bottom of 8x8 baking pan.
- 5. Spread Sour Cream over Hamburger mixture.
- 6. Top Sour Cream with diced Green Chile's.
- 7. Cover Green Chile's with shredded Cheddar Cheese.
- 8. Sprinkle the chopped Black Olives and chopped Red Pepper over the shredded Cheddar Cheese, but don't cover entirely.
- 9. Place in Pre-heated 350° oven and bake for 20 to 30 minutes. Cheese should be melted and bubbly.
- 10. Serve with Tortilla Chips.
ST. JOHN'S DIP
A delicious Mexican style dip or side dish. My mother started making this when I was ten, (around 1971), and it was so simple I had the ingrediants memorized even then. I make it for get together's all the time and there is never any left overs.

Steps:
- Preheat Oven 350º.
- Brown Hamburger, over Med. heat, till no longer pink.
- Add Refried Beans to browned hamburger and stir till well mixed.
- Take off heat and add Taco Seasoning to hamburger mixture. Mix in well.
- Grease an 8 x 8 *glass cake pan
- Spread hamburger mixture in bottom of pan.
- Spread Sour Cream over hamburger mixture.
- Spread Green Chile's or Green Chile Sauce over Sour Cream.
- Top with Shredded Extra Sharp Cheddar Cheese
- If using the chopped Black Olives, Sprinkle them over the cheese.
- Bake in 350º oven for about 20 - 25 minutes or until Cheese is melted and bubbly.
- Serve with Tortilla Chips
- *A metal cake pan will do also, a glass one just looks better for serving.
- This can be fixed ahead of time and kept in refrigerator overnight. Though I wouldn't add the cheese and olives till right before baking.
- Freezes nicely too for up to a month. When ready to bake, let it thaw completely, then add Cheese and Olives and bake for 30 - 35 minutes.

CHEF JOHN'S HOT SLOPPY JOE DIP
For me this checks all the boxes for a hot party dip. It's relatively cheap and easy to make, but maybe more importantly, it's great hot, warm, or room temp. And it's also incredibly versatile.

Steps:
- Place ground beef, bell pepper, onion, garlic, flour, brown sugar, salt, pepper, and cayenne pepper in a heavy pot.
- Place pot over medium-high heat. Break up and stir mixture as it heats. Cook and stir until most of the moisture has evaporated and mixture is crumbly and begins to brown, about 15 minutes. Stir in chicken broth, ketchup, mustard, and Worcestershire sauce. Mix well and bring mixture to a simmer. Reduce heat to medium. Cook, stirring occasionally, until mixture is thick, about 45 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Transfer mixture to oven-proof sauce pan. Top with 1/2 of the shredded cheese. Poke cheese down into the dip with a fork, stirring lightly. Top with remaining cheese.
- Place pan under broiler; broil until cheese is browned, and mixture is hot and bubbly, about 5 minutes.
