BLACKBERRY SUMMER PUDDING

Blackberry Summer Pudding image

Steps:

  • Toss 4 cups blackberries with the granulated sugar, honey and lemon zest and juice in a medium saucepan. Bring to a boil over medium heat, then reduce the heat to medium low and simmer gently, uncovered, until the berries burst, about 8 minutes. Remove from the heat and stir in the remaining 4 cups berries. Let cool.
  • Butter the bottom and sides of a 2-quart souffle dish and line with plastic wrap. Trim off the bread crusts, then line the bottom and sides of the dish with a single layer of bread, trimming the slices as needed to cover the dish completely.
  • Spoon half of the berries and juice into the dish. Cover with a single layer of bread slices. Top with the remaining berries and finish with another layer of bread to completely seal the pudding. Pour any remaining juices over the top layer and cover with plastic wrap. Set a small flat plate on top and weigh it down with a large heavy can. Refrigerate the pudding at least 6 hours or overnight.
  • Before serving, split the vanilla bean lengthwise and scrape the seeds into a chilled bowl. Add the cream and confectioners' sugar and beat with a mixer until it holds soft peaks.
  • Remove the plate and plastic wrap and set the souffle dish in a sink filled with 1 inch of warm water to loosen the pudding. Place a serving plate on top, invert the pudding onto the plate and remove the plastic wrap. Serve with the whipped cream and more blackberries.

Steps:

  • Cream butter and sugar till light. Add eggs and vanilla and mix well. Sift together flour, baking powder, cinnamon and 1/2 tsp salt.Add alternately with milk to the creamed mixture, beating smooth after each addition. Stir in lemon juice. Drain berries, reserving the syrup. Carefully fold in berries. Pour batter into a well greased and floured 5 1/2 cup mold; I used a bundt pan. Cover with foil and tie with a string. Place on a rack in a deep saucepan. Add boiling water, 1" deep. Cover and steam for 2 1/2 hours on low heat, adding water if needed. Cool 20 minutes then unmold. Slice and serve with Blackberry Sauce.

As-you-like-it steamed pudding image

Steps:

  • Generously grease a 1.2-litre pudding basin and put your chosen topping in the base. Boil a kettle of water. To prepare your steamer, put a snugly fitting upturned bowl in the base of a large, deep saucepan, big enough to hold the pudding.
  • Put the ingredients for the sponge in a food processor and blend until smooth (but don't overwork the mix), then tip into the pudding basin. Cover with a lid made of baking parchment and foil, and tie with string to secure (see step-by-step). Stand the pudding on the upturned bowl in your saucepan. Pour in enough hot water to come halfway up the side of the pudding basin. Set over a medium heat and bring to the boil. Cover the pan with a tight-fitting lid, lower the heat to a gentle simmer and leave to steam for 2½ hrs, topping up with boiling water if the level gets too low.
  • Check the pudding is cooked by inserting a skewer through the foil and parchment lid into the centre of the pudding. If the skewer still has some wet mixture on it, return the pudding to the steamer for a further 15-20 mins, then check again. Once cooked, uncover and turn the pudding onto a plate. Serve straight away with custard, if you like.

  • For the custard, put the milk in a heavy-based pan over a medium heat. Scrunch the bay leaves in your hands to release their flavour, then drop them into the milk to infuse. Heat the milk until just steaming.
  • Remove and discard the bay leaves from the milk. In a small mixing bowl, whisk the egg yolks and sugar using a balloon whisk for 1-2 minutes until slightly paler. When the milk starts to steam, pour half of it into the egg and sugar mixture, swiftly mixing it in using a spatula. Pour the mixture back into the milk pan and cook over a low heat, stirring with a spatula until it thickens enough to coat the back of the spatula. Keep warm over the gentlest of heats and cover with cling film touching the surface.
  • Heat the oven to 180°C/160°C fan/ gas 4. Boil a kettle full of water and have the deep roasting tray to hand.
  • For the puddings, whisk the egg, sugar and a pinch of salt in a mixing bowl, then add the yogurt and whisk again to give a loose mixture. Use a spatula to fold in the flour.
