Stilton stuffed mushrooms. image

Steps:

  • Heat the oil in a pan and add shallots. Cook on a low heat until the shallots brown and begin to soften.
  • In a bowl mix together the breadcrumbs, shallots, Blue Shropshire cheese and herbs. Mix until well combined.
  • Peel and remove the stems from the mushrooms and divide the stuffing mix between the mushrooms – lightly pressing the stuffing into the base of the mushrooms.
  • Place the prepared mushrooms onto a baking tray and bake in the oven for 30 minutes or until the breadcrumbs have turned golden and the cheese has melted.

Stilton Mushrooms (Easy Microwave Fix) image

Steps:

  • Carefully remove the stalks from the mushrooms & chop finely. Wipe the caps w/damp kitchen paper.
  • Place half the butter in a bowl & microwave on HIGH for 1 minute. Then add the mushroom stalks + shallots & cook on HIGH for 2 minutes. Cool for 5 minutes.
  • Crumble in the cheese. Then add breadcrumbs & salt + pepper to taste & mix well. Divide mixture among the mushroom caps.
  • Place the remaining butter in a lrg shallow dish & microwave on HIGH for 1 minute. Place the stuffed mushrooms in the dish, cook for 2 minutes & serve immediately.

Steps:

  • Preheat the oven to 190c/gas 5.
  • Fry mushrooms and garlic in the butter, stirring until beginning to soften.
  • Gradually add the cream and boil gently for 2-4 mins until starting to thicken.
  • Season with salt & pepper to taste, and divide the mixture between two individually sized ovenproof dishes.
  • Crumble stilton over the top of each dish, and place in the oven for approx 10-15 mins until the stillton is melted and bubbling.
  • Serve with chunks of crusty bread.

STUFFED MUSHROOMS WITH LEEKS, BLUE CHEESE AND WALNUTS.

A really simple and tasty dish that is so versatile and open to so many interpretations. Great for a starter, side or snack dish, or why not stick it into a bun for a veggie burger! I've used toasted pine nuts, but hazelnuts would be good too. Stilton and Cambezola cheese work really well too and Cheddar is an obvious choice if you don't do blue cheese. I bet fresh mozzarella would be great too. Chopped bacon can also be added to the leek for another variation.

Blue Bacon Stuffed Mushrooms image

Steps:

  • Cook bacon strips in a large skillet over medium heat until crispy; drain on paper towels. While the bacon is cooking, remove stems from mushrooms. Set caps aside, and chop stems.
  • Add butter to skillet with bacon grease. When melted, stir in mushroom stems, onion, and garlic. Cook, stirring frequently until the onions caramelize, 15 to 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Spray a small baking dish with cooking spray.
  • Once the onion mixture has reached a deep, rich brown color, place into a blender along with bacon, cream cheese, blue cheese, and bread crumbs. Blend on low until ingredients are roughly chopped and evenly combined. Stuff cheese mixture into mushroom caps and place into prepared baking dish.
  • Bake in preheated oven until bubbly and lightly browned, 10 to 15 minutes.
