SESAME OIL CHICKEN WINGS
From Singapore, I am sending you a Chinese dish made with chicken wings, filled with the aroma of sesame oil which makes it totally irresistible. If possible, cook in a clay pot. Also, sliced potatoes can be added to make a hearty meal. Serve with rice or bread if desired.

Steps:
- Cut the chicken wings into 3 separate portions. In a large skillet, combine the chicken, water, dark soy sauce, light soy sauce, garlic and green onion. Stir together and cook for 15 minutes over medium heat.
- Add the 1/4 cup sesame oil and simmer for another 15 minutes over low heat. Bring mixture to a boil and add dash of sesame oil. Remove from heat, let cool and serve.

- In a large plastic bag or glass dish, combine the first nine ingredients. Add chicken wings; coat well. Cover and refrigerate 2-3 hours or overnight, turning occasionally. Remove chicken to a shallow rack in a baking pan; discard marinade. , Bake, uncovered, at 350° for 30 minutes. Turn and bake about 20 minutes longer or until tender.

- Heat oven to 180C/160C fan/gas 4. Season the chicken wings and toss in a little sesame oil in a baking tray. Cook for 30 mins. Mix the oregano, lemon zest, lemon juice, toasted sesame seeds and honey. Paint the mixture all over the wings and return to the oven for 20 mins, turning and painting halfway through cooking. Serve alongside a bowl of yogurt swirled with harissa paste, and a few lemon wedges.

FAMILY FAVORITE SESAME CHICKEN
A few months ago I made this great sesame chicken that my mother and I loved.... problem was it was one of those dinners where I added a little of this... a little of that.... and could not for the life of me remember what on earth I put in it!! So after months of tinkering in the kitchen I FINALLY came up with the recipe last night, and wrote down all the ingredients!! Enjoy!

Steps:
- Combine chicken ingredients except cornstarch and let marinate for at least 30 minutes in the fridge.
- Remove chicken from marinade and toss in cornstarch then cook chicken in hot oil on the stove top until cooked thru. Remove from pan and keep warm in oven while making the sauce.
- Combine all sauce ingredients EXCEPT cornstarch in a sauce pan and bring to a boil over med. heat.
- Mix cornstarch with a little water (about 1/4 cup) in a cup until disolved then slowly add to the sauce mixture on the stove and heat until thickened to you liking.
- Add chicken to sauce on the stove until heated thru.
- Remove and sprinkle with sesame seeds and green onions and finally enjoy!

- In a sauce pan, add chicken stock, soy sauce and sugar, whisk well and bring it to boil. While sauce is getting to boil, mix cornstarch and water in a small mixing bowl. When sauce is started boiling, pour cornstarch water while whisking sauce to prevent clumps. Keep whisking until sauce is glossy and thicken, about 1 minute. - Heat broiler to high (500 degrees) and place a wire rack(cooling rack), parchment paper or aluminum foil on a baking pan. Pat dry chicken wings with paper towels, and place on a wire rack lined baking pan skin side down. Let them at least 1/4-inch to 1/2-inch a part so they can air through to be crispy.
- Broil chicken wings 10 minutes and then flip them over- now chicken wings skin side up. Broil another 10 minutes or until chicken is fully cooked, golden and crispy.
