Steps:

  • Preheat your oven 350°F.
  • Combine flour and sugar.
  • Cut in the butter until crumbly.
  • Press into 8-inch square baking tin.
  • Bake until a very light golden colour about 15 to 20 minutes.
  • In a medium saucepot place two cups crushed fresh or thawed strawberries.
  • Add 1/2 cup white sugar, and bring to a boil.
  • Remove from heat; add Jello powder and stir well until dissolved.
  • Chill until slightly thickened.
  • Prepare Dream Whip dessert topping according to the package directions using the 1/2 cup milk and teaspoons vanilla which it calls for.
  • Fold half of the prepared Dream Whip into the slightly thickened strawberry mixture and pour into cooled crust.
  • Chill in fridge until set. (This should be about one hour or so).
  • Beat the icing sugar into the remaining dessert topping and spread over the set layer.
  • Chill until serving time.

  • Bottom Layer: Combine first 3 ingredients in bowl.
  • Mix together well until crumbly.
  • Press in a greased 9x9 inch pan.
  • Filling: Spread jam over bottom layer.
  • Top Layer: Beat eggs until frothy.
  • Add sugar, coconut, vanilla and baking powder.
  • Stir to combine well.
  • Spread over jam layer.
  • Bake in 350 oven for 30 minutes or until set and lightly browned.
  • Cool and cut into 36 squares.

Steps:

  • For the filling: Preheat the oven to 375 degrees F.
  • Add the strawberries, granulated sugar, cornstarch and lime zest and juice to a bowl. Toss to combine and set aside.
  • For the crust and crumble: In a food processor, combine the flour, butter, brown sugar and baking powder. Pulse until a loose crumb forms; continue to pulse as you add the cream.
  • Grease a 9-by-13-inch pan with butter. Dump two-thirds of the flour mixture onto the prepared pan and press flat. Top with the strawberry mixture, spreading it into an even layer. Sprinkle over the remaining flour mixture, followed by the turbinado sugar.
  • Bake the bars until the top is golden and the strawberry layer is thick and bubbling, 28 to 30 minutes. Remove and allow to cool.
  • For the icing: Whisk together the powdered sugar and lime juice until smooth.
  • Cut the cobbler into small squares and drizzle with the icing. Add to a platter and serve.

Steps:

  • Preheat the oven to 350 degrees.
  • Place the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment and mix on medium speed just until combined. With the mixer on low, add the vanilla.
  • Sift the flour and salt together and, with the mixer on low, slowly add to the butter mixture, mixing until it almost comes together in a ball. Turn the dough out on a board. Lightly pat two-thirds of the dough evenly on the bottom of a 9-inch square baking pan and about 1/4-inch up the sides. Spread with the jam, leaving a 1/4-inch border. Mix the granola into the remaining dough with your hands. Break the dough into small bits and distribute it on top of the jam, covering most of the surface. Sprinkle the almonds on top. Bake the bars for 45 minutes, until lightly browned.
  • Cool completely and cut into 9 or 12 bars. Sprinkle lightly with confectioners' sugar.

Steps:

  • Pre-heat oven to 350 degrees, spray a 9x13" pan with nonstick cooking spray, you may also line the pan with foil with extra hanging over for easier removal, spray foil.
  • In mixer bowl, mix flour, oats, sugars, extract, baking soda, salt, and nuts at low speed until combined, about 30 seconds. With mixer running at low speed, add butter pieces; continue to beat until mixture is well-blended and resembles wet sand, about 2 minutes.
  • Transfer 2/3 of mixture to prepared pan and use hands to press crumbs evenly into bottom, bake until starting to brown, about 20 minutes.
  • Using rubber spatula spread preserves evenly over hot bottom crust; sprinkle remaining oat/nut mixture evenly over preserves; bake until preserves bubble around edges and top is golden brown, about 30 minutes, turn pan halfway through baking time.
  • Cool on wire rack then remove from pan using foil handles, cut into squares.
  • NOTE:.
  • After reading the first reviews for this, I realized the jam I used is lower sugar than many jams (9 gms per TBLS) It would be worth it to find a type that isn't overly sweet or try adding a little lemon juice to cut the sweetness.

Steps:

  • Preheat the oven to 350 degrees F. Butter an 8-inch square baking pan.
  • Add the flour, both sugars, oats and salt to a bowl in your stand mixer. Add in the butter and egg and beat at low speed. Stop the machine and scrape the bowl down a couple of times. Keep processing until the mixture resembles coarse crumbs. Keep 2 cups crumb mixture aside.
  • Press the remaining crumb mixture on the bottom the prepared pan. Spread the Raspberry Preserves over top, leaving 1/2-inch border. Crumble the rest of the oat mixture over the preserves.
  • Bake until lightly browned, 40 to 50 minutes. Cool completely before cutting into bars.
  • Put your raspberries and 1/4 cup water in a saucepan over medium heat. Once it's at a simmer, partially cover and cook 8 to 10 minutes. Pass the berry mixture through a food mill and measure the liquid that remains. You need 3 1/2 cups. Add more water if there isn't enough.
  • Put the berry liquid into a new saucepan over medium heat and bring to a simmer again. Once it simmers, start adding your sugar in 1/2 cup increments. Give it a stir to incorporate and bring it back to a simmer before adding of the next 1/2 cup sugar. Once the last 1/2 cup is added, bring the liquid to 216 to 218 degrees F on a candy thermometer. Stir constantly.
  • Let this cool to room temperature prior to using. If not using right away, refrigerate for up to 1 week. Yield: 2 cups.

Steps:

  • Preheat oven to 325 degrees.
  • In a small bowl mix together one pkg muffin mix and 1/4 cup butter until mixture is crumbly.
  • Spray a 9inch square pan with non stick cooking spray and then wipe out with a paper towel.
  • Press mixture into the bottom of the pan.
  • (I do this pan pouring mixture into pan, placing a piece of wax paper over it and using my fingers to press it down, then remove wax paper.).
  • Next spread out preserves over the muffin mixture. ( I also use to waxed paper to spread this out.).
  • In the same bowl as used before, mix together the second pkg of muffin mix and the remaining 1/4 cup butter until crumbly.
  • Pour this on top of the preserves and spread out. Do not pack this down like the bottom layer. You want it totally covering the preserves but not packed tight.
  • Place in the oven and bake 25-30 minutes or until the top begins to brown.
  • Remove from oven and cool completely before cutting.
  • If you like you can sprinkle a small amount of powdered sugar on just before serving.
  • ** If the strawberry preserves are too sweet, replace them with sugar free preserves or an all fruit spread.
  • *** You can make this with any combo of muffin mix and filling. Apple Cinnamon Muffin Mix and Apple Jelly. Blueberry Muffin Mix and Grape Jelly. They all work great! Just use your imagination!

Strawberry Squares - South Beach Style image

Steps:

  • Preheat over to 350°F.
  • Spray a 8" by 8" (or 9" by 9") non-stick square pan lightly with cooking spray.
  • Mix the kashi, 2 teaspoons of splenda and sunflower oil and press evenly over the bottom of the pan.
  • Bake for 10 minutes then remove from oven and cool.
  • Mix the boiling water and the strawberry or raspberry Jello and stir until Jello is dissolved, put mixture in refrigerator until cool but not set.
  • Mix the jello mixture with the skim milk and add the vanilla pudding mix, beat until lump free then stir in the strawberries.
  • Pour the strawberry mixture over the cooled kashi crust, and spread to even out the strawberries.
