Strawberry Sorbet image

Steps:

  • In a saucepan set over moderate heat, combine the sugar and water, bring mixture to a boil, and simmer, stirring, for 3 minutes, or until clear. Transfer to a bowl and let cool. In a food processor or blender puree the strawberries with lemon juice, to taste. Add strawberry puree to sugar syrup and stir to combine. Transfer mixture to an ice cream freezer and freeze according to manufacturer's instructions. Or freeze in cube trays.

1 cup sugar, or to taste
1 cup water
1 1/2 pints strawberries, hulled and sliced
3 to 4 tablespoons fresh lemon juice, or to taste

Steps:

  • Blend all ingredients in a food processor or high-speed blender until thoroughly combined.
  • Pour into a rectangular loaf pan and smooth into an even layer.
  • Freeze for 2 hours, or until frozen but still a little soft for scooping. (If freezing overnight, cover with a lid or plastic wrap, but let it sit out at room temperature for about 5-10 minutes before scooping.)
  • Scoop into a bowl.
  • Enjoy!

STRAWBERRY SORBET

Refreshing! I use a stick blender instead of a regular blender when mixing the syrup and berries. Frozen strawberries can be substituted for the fresh. Cooking time is freezing time in the machine. Recipes for Raspberry Sorbet, Pineapple Sorbet, and Orange Sorbet are at the end of the directions!

Steps:

  • Bring 3 cups water and sugar to a boil over high heat. Stir until sugar dissolves.
  • Remove from heat and cool.
  • Process sugar syrup and strawberries, in batches, in a blender until smooth. Stir in lemon juice. Cover and chill for at least 2 hours.
  • Pour mixture in freezer container of ice-cream maker and freeze according to manufacturer's directions.
  • Raspberry Sorbet ~ substitute raspberries for the strawberries, omit lemon juice, proceed with recipe.
  • Pineapple Sorbet ~ substitute 2 cups shopped pineapple for the strawberries, omit lemon juice, strain after blending if desired, continue with recipe.
  • Orange Sorbet ~ Substitute 3 cups orange juice and 2 tsps grated orange rind for the berries and lemon juice. Proceed with recipe.

  • Press through a fine sieve into a medium bowl.
  • Discard solids remaining in sieve.
  • Cover; refrigerate until cold or overnight.

  • Transfer to an ice-cream maker; freeze according to manufacturer's instructions.
