STRAWBERRY SODA SYRUP
We're going to take fresh strawberries and make our own homemade fruit syrup, which can be put into tea, lemonade, or made into the world's best strawberry soda!

Steps:
- Place strawberries into a heavy saucepan, add water, and bring to a boil. Stir, reduce heat to low, and simmer until strawberries soften, about 15 minutes.
- Strain juice into a separate saucepan, using a fine mesh strainer; discard strawberry pulp. Stir in sugar until dissolves. Bring strawberry juice back to a boil a second time.
- Reduce heat to medium and simmer for 5 minutes. Skim any foam from the top of the syrup. Turn off heat and let cool to room temperature.
- Pour syrup into a lidded container and refrigerate.

STRAWBERRIES IN SYRUP
This is my favorite way to prep strawberries for strawberry shortcake or just to serve with thick creamy Greek yogurt.

- Wash the strawberries and remove the green stems. Cut the strawberries and place them in a bowl. Toss them with the sugar and cover the bowl with plastic wrap and place it in the refrigerator for at least 2 hours and even overnight. The sugar will draw moisture out of the berries and naturally make a sweet strawberry syrup.
STRAWBERRY SODA
Steps:
- Bring sugar and water to a boil. Add strawberries and remove from heat. Steep strawberries until syrup is cool. Puree in a blender and pass through a sieve. Fill half of glass with strawberry puree, then add ice and club soda, seltzer or gingerl ale; garnish glass with mint.
SIMPLE STRAWBERRY SYRUP
My nephew loves strawberry milk. This simple recipe came from an attempt to create a more natural substitute for the strawberry syrup sold in stores. I even use it in my own beverages!

- Combine water and sugar in a saucepan over medium-high heat; stir until sugar is dissolved. Mix strawberries into saucepan and bring to a boil; boil for 10 minutes. Reduce heat to medium-low and simmer until strawberries are mushy and sauce is thick, about 10 minutes. Strain liquid into a bottle and refrigerate.

STRAWBERRY HONEY SODA RECIPE BY TASTY
Here's what you need: frozen strawberry, honey syrup, seltzer water

- Add the strawberries to food processor and purée into a smooth paste.
- Add the strawberry purée to a small saucepan with the simple honey syrup. Simmer over medium heat for 5 minutes, until slightly reduced. Let cool completely, then strain into an airtight glass container and store in the refrigerator for up to 2 months.
- To serve, mix 1-2 tablespoons of strawberry syrup with 8 ounces of seltzer water in a glass over ice.

STRAWBERRY SYRUP
This is a delicious and easy to make syrup. I use this to pour over pancakes and Belgian waffles, over ice cream or pound cake, angel food cake or cheesecake! Your imagination is your only limitation! Please remember to skim the froth off the syrup while it is simmering for your best flavor. I first discovered this recipe in Southern Living.

- Process strawberries in a food processor until smooth.
- Pour strawberry puree through a wire-mesh strainer into a saucepan, discarding seeds.
- Stir in sugar and juice; cook over low heat, stirring until sugar dissolves.
- Bring to a boil over medium-high heat; reduce heat, and simmer 5 minutes, while skimming froth from top.
- Remove from heat; cool.
- Enjoy!
- Makes 2 1/4 cups.

Steps:
- In each glass combine 1/4 cup each of the milk and strawberry syrup.
- Put 2 or 3 scoops of the ice cream into each glass and fill the glasses with the club soda or seltzer.
- Divide the remaining syrup among the sodas and garnish each soda with a strawberry.
- In the food processor or in a blender in batches puree the strawberries, transfer the puree to a stainless steel or enameled saucepan, and stir in the sugar and water.
- Bring the mixture to a boil over moderate heat, stirring, and simmer it for 1 minute.
- Force the mixture through a fine sieve set over a bowl and chill the syrup, covered, for at least 3 hours.

- With a slotted spoon, scoop thawed strawberries into a medium pot and mash with a potato masher or fork. Pour reserved juices from thawed strawberries into a measuring cup. Add enough water on top of strawberry juice to equal 1 1/2 cups of total liquid. Add liquid to pot with strawberries and turn heat to high. Bring to a boil, stirring occasionally. Reduce heat to low and simmer for 15 minutes.
- Measure one part chilled strawberry syrup to two parts chilled seltzer. Taste and increase syrup or seltzer, depending on your preferences. Pour over ice or serve as-is.
