- Combine the spinach, red cabbage and green onion.
- Whisk the cider vinegar, olive oil, sugar, poppy seeds, paprika and worcestershire sauce together in a bowl.
- Season to taste with salt and pepper.

This is a wonderful and refreshing salad that I got from Best of Bridge. I played around with it a bit and added a few other fresh fruits to it. This is yummy and great to offset a very rich main dish, such as my Death to Dieter's Lasagna.

- Combine all dressing ingredients, mix well and refrigerate.
- Make well ahead to allow flavors to blend.
- Taste dressing and adjust sugar/vinegar for your sweet/tart taste preferences.
- Tear fresh spinach into bite sized pieces, wash and pat dry.
- Wash strawberries, drain, pat dry and cut in thirds.
- Shake dressing container well and toss with spinach, strawberries, kiwi and mandarin orange sections just before serving, otherwise the spinach will wilt.
- This makes a wonderfully tart, slightly sweet and very colorful salad!
SPINACH AND STRAWBERRY SALAD WITH POPPY SEED DRESSING RECIPE

- 1. Whisk vinegar, sugar, and 3/4 teaspoon salt together in bowl. Transfer 1/4 cup vinegar mixture to small bowl and microwave until hot, about 1 minute. Add onion, stir to combine, and let sit for at least 30 minutes. 2. Meanwhile, toast poppy seeds in 8-inch nonstick skillet over medium heat until fragrant and slightly darkened, 1 to 2 minutes; transfer to bowl and set aside. Add almonds to now-empty skillet, return to medium heat, and toast until fragrant and golden, 3 to 5 minutes. 3. Whisk oil, mustard, poppy seeds, and 1/2 teaspoon pepper into remaining vinegar mixture. Combine strawberries, lettuce, spinach, and 1/4 cup almonds in large bowl. Using fork, remove onions from vinegar mixture and add to salad. Add dressing to salad and toss to combine. Season with salt and pepper to taste. Transfer salad to serving platter and top with remaining 1/4 cup almonds. Serve.
STRAWBERRY SPINACH SALAD WITH CREAMY POPPY SEED DRESSING
I got the base of this recipe from allrecipes.com and added a few things myself. The dressing makes this fantastic. This has disappeared quickly every time I serve it! You could also use toasted pecans, blue or gorgonzola cheese, and mandarin oranges instead of strawberries to change it up.

- Place crumbled feta and candied pecans on top of the salad.

- My Note: After making it a few times I will say that you can do all these variations and it will be terrific but do NOT put the dressing into the fridge, leave it on the counter! It will not be good, it will get creamy and stay on the salad like PASTE. You can get the spinach (baby spinach is the best) and slice the strawberries with an egg slicer and toss ahead, in the fridge -- but let the dressing sit on the counter, trust me. Then toss immediately before eating. Some time I added candied sliced almonds -- just add almond slices to a frying pan and lightly sugar the almonds, add a few drops of water to this slowly and let it cook for a few minutes. caramelizes to a crisp, sweet. Very hot, be careful. I also added the blue cheese, mentioned by other readers. also.instead of using all that sugar, I substituted some honey for the sugar instead, which helped the dressing stick to the salad. I also halved the sugar and substituted Raspberry Balsamic Vinegar for White Vinegar. Also, left out the seeds(I couldn't find them in the store some times) and used sliced almonds. Delicious.
