STRAWBERRY STYLE MATRIMONIAL CAKE
Most summers I enjoy going strawberry picking at a "U Pick". The Blue Diamond Berry Farm is one of these U-Picks and they hand out recipes you can make with strawberries. This is one of these recipes which is a nice variation from the regular matrimonial cake made with dates.

Steps:
- Topping: Blend dry ingredients.
- Cutting in butter until crumbly.
- Use 2/3 of this mixture, press into a 9" or 10" square cake pan.
- Keep the other 1/3 for topping.
- Filling: Mix tog.
- sugar and cornstarch, blending in the strawberry puree and lemon juice.
- Bring to boil and cook until thick.
- Pour over the crumb base and spread the remaining crumbs on top.
- Bake at 350 degF for 30-35 minutes or until golden.
- Chill well before cuttiing.

- Thaw and drain the frozen strawberries.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease on 9x13 inch cake pan.
- Combine the white cake mix, strawberry gelatin, oil, eggs, flour, thawed strawberries, and buttermilk and mix until just combined. Pour batter into prepared pan.
- Bake at 350 degrees F (175 degrees C) for about 25 to 35 minutes or until a toothpick inserted in the center comes out clean.

STRAWBERRY CAKE III
This is a great easy cake that my grand mother made for every family memeber's birthday. It's a pretty pink color and is light and fluffy. Garnish with additional sliced fresh strawberries if desired.

- Prepare the cake according to package instructions for three 8 inch round cake pans. Bake as directed on the package. Cool on wire rack.
- To make the Frosting: In a large bowl, beat the egg white, sugar and strawberries on high speed until very stiff peaks form. This takes about 20 minutes. The frosting really grows so be sure you use a large bowl.
- To assemble the cake: Place one layer on a serving plate, put in a couple toothpicks (this helps to hold the layers together) and frost with 1/4 of the frosting. Repeat with second layer. Place third layer on top, and frost top and sides of cake with the remaining frosting.

- Preheat oven to 350°. In a large bowl, combine dry cake mix, gelatin powder, water and oil. Beat on low speed 1 minute or until moistened; beat on medium 4 minutes. , In a small bowl with clean beaters, beat egg whites on high speed until stiff peaks form. Fold egg whites and mashed strawberries into cake batter. , Pour into three greased and floured 8-in. round baking pans. Bake 25-30 minutes or until a toothpick comes out clean. Cool 10 minutes before removing from pans to wire racks to cool completely., Spread whipped cream or frosting between layers and over top and sides of cake. If frosted with whipped cream, store in the refrigerator.

- Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 9x13-inch baking pan.
- Combine sugar, oil, eggs, and vanilla extract in a large bowl and beat thoroughly.
- Combine flour, baking powder, and salt in a small bowl. Add to the sugar mixture with milk and combine to make a thick batter. Add strawberries and fold gently to combine. Pour batter into the prepared pan.

- Date filling: Place water and dates in saucepan. Cover and cook on low heat for 15 minutes, stirring occasionally, until the filling is thickened and smooth. If the cooking mixture is too thick, add a little water.
- Stir in the lemon juice. Set aside.

- Mix flour, oats, brown sugar and baking soda.
- Cut in butter until mixture is crumbly.
- Press half of the crumbs into a greased 9 x 13 pan.
