FRESH STRAWBERRY-OATMEAL COOKIES

Nothing is better than fresh, hand-picked strawberries. It seems like you always pick too many though! Make these wonderful cookies with your extra berries.

Fresh Strawberry-Oatmeal Cookies image

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine the strawberries with 1/4 cup sugar in a medium bowl. Toss gently to blend, and set aside.
  • Combine the flour, baking soda, and cinnamon in a large bowl. Stir in the rolled oats and blend evenly; set aside.
  • Beat the butter, brown sugar, and white sugar in the large mixing bowl of an electric mixer at medium speed until fluffy. Add the egg, milk, and vanilla, and continue beating until smooth. Stir in the flour mixture, and mix well to blend. Combine the strawberries with the flour mixture, and stir to blend. Drop by teaspoonfuls onto ungreased baking sheets.
  • Bake in preheated oven until slightly brown, about 8 minutes. Cool on baking sheets. Store in an airtight container.

  • Grease an 8 x 8-inch pan.
  • Cream butter & sugar.
  • Add eggs & blend well.
  • Gradually add flour.
  • Spread evenly one-half of the butter mixture in bottom of pan.

  • Spread the second half of the butter mixture on top of the jam.

  • HEAT oven to 325 degrees F. Coat baking sheet with no-stick cooking spray.
  • BEAT together cake mix and preserves (do not add water) at low speed of electric mixer 1 minute or until evenly moistened. Continue to beat an additional 1 minute. Stir in chocolate chips. Drop by rounded tablespoonfuls onto prepared baking sheet.
  • BAKE 10 to 12 minutes or until tops are just lightly browned. Cool 1 minute on baking sheet. Place on cooling rack to cool completely. Cookies will be soft and chewy.

  • Line a sheet pan with parchment paper and set aside.
  • Place the cookies in a shallow bowl.
  • Melt the chocolate and coconut oil together in a double boiler or in the microwave in a microwavable bowl, microwaving for 30-second increments and stirring after each until smooth. Dip the strawberries into the chocolate as far up to the stems as you can go, then let any excess drip off, and scrape off one of the sides of each.   • Preheat oven to 375°. In a large bowl, cream butter and confectioners' sugar until blended. Beat in egg and vanilla. In another bowl, whisk flour, gelatin, baking soda and cream of tartar; gradually beat into creamed mixture. , Divide dough into four portions. Shape each into a disk; wrap in plastic. Refrigerate 30 minutes or until firm enough to roll., Preheat oven to 375°. For filling, in a small bowl, beat jelly and confectioners' sugar.
