QUICK PUFF PASTRY APPLE STRUDEL
This is an easy apple strudel version with puff pastry that is ready in less than an hour. It tastes especially delicious fresh out of the oven with some vanilla ice cream.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Combine apples, 3/4 cup sugar, raisins, walnuts, and cinnamon in a large bowl for the filling.
- Dust a flat work surface lightly with flour. Unroll puff pastry and sprinkle lightly with flour. Roll out slightly and mark into 3 equal sections. Spoon filling into the central section then fold over the section on the left and brush with egg. Fold the right section on top, just like a letter. Make shallow diagonal cuts in the top layer of the apple strudel. Brush with egg and sprinkle with 1 tablespoon sugar.
- Bake in the preheated oven until apple studel is puffed up and golden, 25 to 30 minutes.

- Heat oven to 200C/180C fan/gas 6. Mix the pudding, mascarpone and Baileys. Lay out a sheet of filo on a large flat baking tray, brush with some melted butter and lay another sheet on top. Repeat with more butter and filo until you have 4 layers.
- Place the filling in a log in the centre and brush the border with butter. Roll up to enclose the filling, then brush with the remaining butter. Can be chilled for 1 day until ready to bake. Bake for 20-25 mins until golden brown, dust with icing sugar and serve warm with cream or custard.

Steps:
- Toast pastries according to package directions and let cool for 5 minutes.
- In a large bowl, whisk milk and pudding mix for 2 minutes and let stand for 2 minutes until almost set.
- Fold in 2 cups whipped topping.
- Put pastries in ungreased 8" square dish.
- Spread pudding over the top and cover and refrigerate for at least 20 minutes.
- Cut into square and top with remaining topping.

- Preheat the oven to 180°C/160°C fan/350°F/Gas 4 and line the baking sheet with a piece of baking paper.
- Peel, core and thinly slice the apple and place the slices in a bowl. Sprinkle over the sugar and cinnamon, and stir to coat the slices.
- Melt the butter in a small pan. Take a sheet of filo pastry and lay it on your work surface with the short edge towards you. Use a pastry brush to brush all over the pastry with butter and lay another sheet on top.
- Place the apple slices in an even layer on the front half of the pastry sheets, then sprinkle over the sultanas. Starting at the front edge, roll up the pastry to fully encase the filling.
- Leave to cool for 10 minutes on the baking sheet before carefully transferring to a wire rack and leaving to cool completely. Dust with icing sugar and serve cut into thick slices.
