Steps:

  • Preheat oven to 375°. Place mushroom caps in a greased 15x10x1-in. baking pan. Bake 10 minutes. Meanwhile, place mayonnaise, Asiago cheese, basil and pepper in a food processor; process until blended., Drain juices from mushrooms. Fill each with 1 rounded teaspoon mayonnaise mixture; top each with a tomato half., Bake until lightly browned, 8-10 minutes. If desired, top with Parmesan cheese.

Stuffed Asiago Chicken Breasts image

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a baking dish.
  • Combine Asiago cheese, sun-dried tomatoes, bread crumbs, parsley, and Kalamata olives in a bowl for the filling. Place about 1/4 of the filling on the center of each chicken breast. Roll up jelly-roll style, securing the edges with toothpicks to keep the chicken breasts from unrolling. Rub the top of each chicken breast with olive oil, place seam-side down in the prepared baking dish, and sprinkle with salt, pepper, and paprika.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from oven, tent loosely with foil, and allow to cool for about 10 minutes.
  • Meanwhile, melt 1 tablespoon butter in a skillet over medium heat. Add mushrooms and garlic and cook until mushrooms start to brown, about 4 minutes. Add thyme leaves and white wine, stirring and deglazing the skillet, and cook for 2 minutes.
  • Reduce heat to medium-low and stir in the heavy cream, salt, and pepper. Cook until sauce starts to slightly thicken. Add 1/2 cup Asiago cheese and stir until melted and smooth. Remove from heat immediately; overcooking the Asiago cheese will create a lumpy, stringy sauce.
  • Slice each chicken breast into 1/2-inch thick slices, and drizzle with Asiago sauce. Garnish with thyme and serve immediately.

MARMIE'S MEAT AND ASIAGO STUFFED PORTABELLA MUSHROOMS

My local grocery store makes these in the meat department and charge way too much for them!! I have not tasted theirs but I knew I could make similar, more cost efficiently. I searched online for a meat stuffed portabella and could not find one. Thus, time to get somewhat creative.... We really like how the asiago cheese and italian seasonings compliment this unique little meatloaf. Here is hoping you like it as well. Note the photo does not do the dish justice....

Marmie's Meat and Asiago Stuffed Portabella Mushrooms image

Steps:

  • In large bowl, mix first 10 ingredients well. (I use my hands.).
  • Drizzle a bit of olive oil in each mushroom.
  • Divide meat mixture evenly into 4 portions.
  • Pat meat mixture into a little meatloaf to fill the centre of the portabella mushroom.
  • Spray pan with non stick spray and place stuffed mushrooms on pan.
  • Bake 350 degrees for 30 - 40 minute untill cooked through and browned.
  • (1/2 of one of these delicious mushrooms was lots for me for dinner with potatoes and salad.).
  • Enjoy!

Steps:

  • Coat tops of mushrooms with olive oil. Place mushrooms top-down in a grill-safe dish.

Steps:

  • Generously cover potatoes and 1 tablespoon salt with cold water in a medium pot, then simmer until tender, about 12 minutes. Drain potatoes and rinse with cold water. Cool to room temperature in refrigerator, about 40 minutes.
  • Meanwhile, cook garlic in oil at a bare simmer in a small heavy saucepan, stirring occasionally, until tender and golden, about 12 minutes.
  • Drain garlic, reserving oil for another use, then mash to a paste.
  • Preheat oven to 350°F with rack in middle.
  • Mince basil, then stir together with garlic paste, cheese, mayonnaise, and salt and pepper to taste.
  • Using a small melon-ball cutter or a teaspoon, scoop out a hole in each cooled potato, leaving a 1/4-inch shell.
  • Stuff potatoes with cheese mixture and bake in a pan until cheese is melted and bubbling, about 20 minutes.
