HUNGARIAN STYLE STUFFED CABBAGE

Steps:
- Preheat oven to 350 degrees F.
- Boil the cabbage head in salted water until the leaves can be removed easily, about 4 minutes. Separate 12 of the largest leaves. Remove the thick stem in the center of each, not cutting through the entire leaf.
- Render the bacon in a medium saute pan over medium heat until crispy, about 6 minutes. Use a slotted spoon to transfer bacon to a large mixing bowl, leaving residual fat in pan.
- Add garlic, onion and paprika to pan and cook until garlic and onion have softened, about 4 minutes. Season with salt and pepper, then transfer to bowl with bacon and let cool to room temperature.
- Fold in the beef, ham, pork, rice and eggs. Season with salt and pepper.
- Place 1/3 cup of the mixture at the tip of a cabbage leaf. Roll up, tucking in the sides to seal the filling within the cabbage leaf. Repeat with the remaining filling mixture and cabbage leaves.
- Combine canned tomatoes with their juice, sauerkraut, caraway seeds and tomato paste in a small bowl.
- Transfer half of the tomato mixture to a medium Dutch oven and spread it across the bottom. Place the stuffed cabbage on top, followed by the remaining tomato mixture. Bring to a simmer, then partially cover and transfer to the oven. Bake 1 hour.
- Meanwhile, whisk together the sour cream, milk, Dijon and dill.
- Drizzle the sour cream sauce over the cabbage. Serve.
STUFFED BELL PEPPERS
Green bell peppers stuffed with a mixture of rice, textured vegetable protein, cheese and tomato sauce. Omit the cheese for a vegan variation. Serve with additional tomato sauce, if desired.

- Combine rice and water in a small saucepan. Bring to a boil, reduce heat to low, and simmer for about 15 minutes.
- Preheat oven to 400 degrees F (205 degrees C).
- Cut tops off peppers, seed insides, and arrange peppers in a large baking dish. Chop usable portion of the tops.
- Heat oil in a large skillet over medium heat. Saute chopped peppers and onions in oil until soft. Stir in textured vegetable protein and parsley. Reduce heat to low, and continue cooking for 5 minutes. Mix in cooked rice and 1 1/5 cups tomato sauce. Season to taste with salt and pepper. Spoon the mixture into the peppers, and top each with remaining tomato sauce.
- Cover, and bake about 45 minutes. Uncover, top each pepper with mozzarella cheese, and bake until cheese is melted.

- Preheat oven to 375 degrees. In a skillet over medium heat, heat 2 tablespoons oil and add chopped onions, mushrooms and garlic. Sauté until lightly browned, about 5 minutes.
- Tear bread into large pieces and place in a bowl. Sprinkle with enough water to thoroughly dampen it on all sides. Allow to sit for 1 minute, then squeeze out as much water as possible. In a mixing bowl, combine bread, egg, parsley and onion-mushroom mixture. Season generously with salt, pepper and paprika to taste.
- Divide stuffing into four equal portions. Gently pull enough skin from each chicken piece to be able to push stuffing mixture under skin. In a small bowl, combine remaining tablespoon oil with 1/2 teaspoon paprika and salt to taste. Mix well and brush over chicken pieces, saving a bit for basting.
- In a 9-by-13-inch roasting pan, scatter quartered onions, green beans and carrots. Place chicken pieces skin-side up on vegetables. Roast uncovered for 60 minutes, basting halfway through. (If chicken begins to look too brown, cover lightly with foil.) Lower oven temperature to 275 degrees and continue to cook until meat is opaque and white all the way through, about 30 minutes more. To serve, place an equal amount of roasted vegetables on each of four plates, topped by a portion of chicken.

This is a favorite of ours, originally printed from Cooks.com, which we've adjusted to our liking. We prefer to use more, smaller peppers, so you get more pepper to filling ratio. Serve with a good crusty bread. The original suggests a dollop of sour cream.

- Parboil rice and mix with pork, beef, spices, salt and pepper. Choose well formed peppers. Cut off tops of peppers, wash and seed. Tops taken off in rings can be used as "bases" for any peppers that do not sit well in the pot. Stuff peppers tightly with meat mixture. Set peppers aside. Roll any left over meat into meat balls.
- In a large heavy pot, a 4 quart or greater dutch oven works well, make a light roux by melting the butter and stirring in the flour. Stir and cook flour until lightly browned. Sir in tomato juice. Add peppers to pot making certain they are submerged or at least well doused with the sauce. (Add any meat balls to pot.).
- Bring to a bubbling simmer and cook 2-3 hours, stirring occasionally, to be sure peppers don't burn on the bottom. Serve with crusty bread and if you want, a dollop of sour cream. These are very good made a day ahead and they freeze very well. (We often find we have a great deal of sauce left over and if anyone can come up with a use for it, please let me know.).

- In a nonstick pan, melt 1 tbsp butter and add refined flour. Cook on low heat until golden brown. Then, add milk and cook until flour is cooked. Add salt and pepper and cook until mixture reaches the consistency of a thick sauce. Remove from heat.
- In a second saucepan, heat water and blanch all vegetables except onions. Once blanched, transfer to an ice bath.
- Heat butter in a pan and brown. To this, add chopped garlic and onion and cook until translucent. Then, add blanched vegetables, toss well, and add salt, pepper, and herbs.
- Add the white sauce and cook well. Then, add half of your allotted cheese.
- Cut open the caps of the bell peppers and de-seed. Coat with a little butter mixed with seasonings.
- Preheat oven to 350°F.
- Stuff the peppers and top with remaining cheese. Bake for 15 minutes or until peppers are cooked through but not mushy.
- In a bowl on the side, mix together lemon juice, olive oil, salt and pepper to make a dressing and dress the greens with it.
- Serve the roasted peppers directly out of the oven with greens on-side.

- Preheat the oven to 375 degrees F (190 degrees C).
- Rinse rice and place in a saucepan. Add water and bring to a boil. Reduce heat to medium-low, cover, and simmer until rice is partially cooked, about 20 minutes. Remove from the heat.
- Heat a large skillet over medium-high heat. Cook and stir turkey in the hot skillet until partially cooked and crumbly, 3 to 4 minutes. Drain and discard grease.
- Add cooked rice, tomato sauce, egg, Worcestershire sauce, red pepper flakes, onion powder, garlic powder, salt, pepper, basil, oregano, and parsley; mix thoroughly.
- Remove the tops of the peppers and scoop out the insides. Arrange peppers, hollowed-sides up, in a deep baking dish. Slice the bottoms of the peppers if necessary to help them stand upright. Spoon turkey mixture into each pepper and place any extra in the dish around the peppers. Cover with foil.
- Bake in the preheated oven until turkey and rice are cooked through and filling is hot, about 50 minutes.

HUNGARIAN STUFFED RED BELL PEPPERS
Don't overcook the peppers, that's the secret. This version is particularly delicious because of the addition of the Paprika Gravy.

- Cut off the very top part of the peppers. Chop the pepper tops finely, omitting the stems, and save for the filling. Seed and core the peppers; set aside.
- Heat a large covered frying pan and add the lard or oil. Saute the garlic, onion, and reserved chopped pepper tops until tender. Add the parsley and rice and saute for a few minutes.
- Add 1/2 c of the chicken stock and cover. Simmer for 10 minutes. Allow to cool.
- In a large bowl combine the ground meat, paprika, egg, salt, and pepper with the rice mixture. mix very well. Fill the peppers just to the top, but don't pack too firmly because the rice will expand during cooking.
- Place the filled peppers in a Dutch oven and add the remaining 1 cup chicken stock to the bottom of the pot. Cover and simmer very gently for 45 minutes, keeping the temperature very low or the peppers will break. Move the peppers about the pot a few times during cooking to prevent sticking.
- After 45 minutes pour the Paprika Gravy over the peppers, cover, and simmer for 20 minutes more.

HUNGARIAN STUFFED SAUERKRAUT
This is a delicious Hungarian dish, usually made at Christmas time. My family loves it so much, that I have to make it more than once a year. As most Hungarian foods, this is a heavy one too! You can put the leftovers into the freezer, and warm it up even after a month. There is a saying in our country, which we use to describe a relationship, that was broken up, then warmed up again. "Only the sauerkraut is good warmed up", and this saying is true. It's just as good taken out of the freezer that it is served fresh. Enjoy! P.S: You shouldn't be choosey when you make this...you must taste it while preparing the raw meat!!

- Squeeze out all excess liquid from sauerkraut into sink from and place in a bowl.
- Cook the rice (you should end up with about three cups).
- Put ground meat into another large bowl - you will need the space!
- In a large deep saucepan, in which you will be cooking the meal; braise the onion in plenty of oil, so it won't burn - until glassy.
- When done, pour off the oil, using spatula to keep onion in saucepan.
- Divide the cooked onions, leaving one half in saucepan
- Place the other half on the meat.
- Turn off the heat and put in plenty of paprika and the tomato sauce on onion left in pan.
- Pour in some water, just as much so the mixture gets creamy.
- Let cool a little, then pour on sauerkraut and mix together.
- Take the bowl with the meat and onion.
- Make a well in the middle of the meat mixture, add the egg and mix together with your hands.
- Mix in cooked rice.
- Add paprika for nice red color, salt and pepper to taste and marjoram.
- Knead until smooth.
- Make sure to taste while you are working with it. This meal should be quite spicy! But not TOO spicy!
- Place one third of the sauerkraut mixture into your sausepan and place half of the speck/ham/lean bacon on top.
- Make meatballs about the size of a kiwi - don't need to make them hard.
- Place in the pan, next to each other to make a "meatball layer".
- Put a second layer of sauerkraut mixture on top of it, then another layer of meatballs.
- Top it with the remaining sauerkraut.
- Place other half of speck on top.
- You must completely cover the meat layers with sauerkraut leaving no holes.
- Pour in water only until you can see it appear on the side - to about 3/4 of the pan.
- Cover, and cook on low heat. Do not stir!
- Occasionally lift pan up and move back and forth sideways, like you were steering your car.
- It is done when sauerkraut is so soft it melts in your mouth. You don't need to taste the meat, because it cooks sooner than the sauerkraut, so it is 100% done if your sauerkraut is cooked.
- Serve with sour cream.

HUNGARIAN BEEF & PORK STUFFED BELL PEPPERS
Stuffed peppers made the old fashioned way on top of the stove and enhanced with a rich sour cream gravy. Have loads of crusty bread ready to sop up the juice. Ground pork is optional, you can use all ground beef if you prefer. Mama wont mind if you mess around with her recipe.

- Prepare rice by rinsing under cold water for a few seconds.
- Put rice in small pot with water and bring to boil uncovered, at medium heat.
- When rice begins to boil, lower heat to medium low and place lid on pot tilted to allow steam to escape.
- Cover tightly when craters appear in rice, lower heat and simmer approx 15 minutes.
- Let sit for 5 minutes, fluff with fork and let cool.
- Prepare green peppers by slicing off tops approximately 1/4" down and remove seeds and membrane.
- Wash peppers and allow to drain upside down on paper towel.
- Prepare filling by placing ground meat in large bowl.
- Saute diced onions in vegetable oil in small saute pan until onion is transparent.
- Add to meat bowl.
- Add salt and pepper.
- Add 1/2 can tomato sauce (reserving remaining 1/2 can) Add rice to bowl and combine ingredients with hands until blended together.
- Add lightly beaten egg and continue to blend mixture.
- Loosly pack each pepper with meat mixture forming small dome on top.
- If you have extra filling, form into individual meat balls.
- In large stock pot, pour remaining 1/2 can tomato sauce and 1/2 can water, swishing around until blended.
- Place stuffed peppers into stockpot, along with extra meatballs (if you made any).
- Add 1 can tomato soup, 1/2 can water to pot.
- Add catsup to pot.
- Add remaining 3 cans tomato sauce, and add about 1/2 can of water to each can to clean up remaining sauce in can.
- Add this to pot also.
- Bring stockpot to boil, lower heat, cover with lid slightly tilted.
- Cook over low heat for about 1 hour.
- Blend flour into sour cream in bowl.
- Slowly blend in about 1/2 cup (or more) hot gravy from pot.
- Add sour cream mixture SLOWLY into pot, stirring constantly until gravy slightly thickens and becomes a deep orangy color, rather than the bright red color of tomatoes.
- Serve peppers in bowls, split open, and generously covered with gravy.
- Have crusty bread available for soaking up the rich gravy.
