HAM BALLS WITH BROWN SUGAR GLAZE

Steps:
- Preheat oven to 350°. Pulse ham in batches in a food processor until finely ground. Combine with the next 7 ingredients just until mixed. Shape into 1-in. balls; place in a single layer on greased 15x10x1-in. baking pans., For glaze, cook and stir all ingredients in a small saucepan over medium heat until sugar is dissolved. Spoon over ham balls. Bake until ham balls are just beginning to brown, 30-35 minutes, rotating pans and carefully stirring halfway through. Gently toss in glaze. Serve warm.

SUE'S HAM LOAF OR HAM BALLS
My mom's recipe. This recipe can easily be halved, and 4 lb of ham loaf mixture may be substituted for the ground ham and ground beef. When I made this, I used only ground ham and it was also good that way.

- Mix ground meats, eggs, graham crackers, and milk together.
- Form into loaf or balls.
- Spread topping on meat.
- Bake uncovered at 350F for 2 hour (for loaf) or 1 hour (for meatballs). Baste occasionally.

- In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. - Combine the meatball ingredients. In a large bowl lightly combine the 1 lb ground ham, 1 lb ground beef, 1 cup graham cracker crumbs, 3/4 cup milk, and 1 egg. Make large meatballs. Form the mixture into large meatballs, about 1/3 cup in size each. Place into a 9x13 baking dish. You will have about 12-15 meatballs.
- Whisk together the sauce ingredients & pour over meatballs. In another bowl whisk together the can of condensed tomato soup, 1 cup brown sugar, 1/2 cup white vinegar, and 1 tsp dry mustard. Pour the sauce over the meatballs.
- Bake 1 hour. Bake in the oven, uncovered, for 1 hour, basting the tops of the ham balls with the sauce once or twice during cooking.
